Abstract
本发明公开了一种百合玉竹挂面,按重量份计,由以下原料制成:百合发酵粉5‑30份,白糖1.5‑10份,玉竹1‑10份,面粉80‑95份,魔芋胶0.5‑1.0份。本发明还公开了上述百合玉竹挂面的制备方法如下:首先将百合磨碎成百合粉,然后将百合粉发酵成百合发酵粉,再采用玉竹和魔芋胶制备玉竹魔芋混合液,最后将上述百合发酵粉、玉竹魔芋混合液和面粉混合进行和面、熟化、扎片、切条、定型、烘干、切断、包装即得。本发明中的百合玉竹挂面可以起到平衡内分泌、提高身体免疫,美容养颜、降低血糖和血脂、排毒通便的功效,并可有效降低癌症发病率,具有广阔的应用前景。

技术领域
本发明涉及食品技术领域,特别涉及到一种百合玉竹挂面及其制备方法。
背景技术
相传古时,军卒和百姓不分酷暑严寒日夜苦干,家人为使亲人能吃上面条,便把擀好切细的面条挂在竹竿上晒干捆把,连同调好的酸汤送到工地,让亲人在劳动之余,下锅煮熟,入酸汤食之。后来有人将晒面条改进为手工挂面,现如今挂面仍旧在我国很受欢迎,特别是北方地区。随着人们生活水平的提高,人们对食品的要求越来越高,尤其是特别关注其保健功能,市面上的各种挂面的功效较为单一,长期食用后并无特殊的保健作用,已经不能满足人们的需要。
发明内容
本发明的目的在于提供一种平衡内分泌,活化细胞,提高身体免疫力的百合玉竹挂面。
本发明另一目的在于提供上述百合玉竹挂面的制备方法。
为了解决上述问题,本发明采用以下技术方案:一种百合玉竹挂面,按重量份计,由以下原料制成:百合发酵粉5-30份,白糖1.5-10份,玉竹1-10份,面粉80-95份,魔芋胶0.5-1.0份。
优选地,上述百合玉竹挂面由以下原料制成:百合发酵粉17份,白糖6份,玉竹5份,面粉87份,魔芋胶0.75份。
制备上述百合玉竹挂面的方法,包括以下步骤:
A.将百合洗净,使用粉碎机将其粉碎成20-60目的百合粉并置于干净无毒密封的容器中,向容器中加入相当于百合粉7-16倍重量的水和所述白糖,混合均匀,接入生物菌发酵,发酵时间不少于30天,发酵完成后过滤得到百合发酵物;
B.将所述百合发酵物在40-80℃下烘烤干燥,然后用粉碎机粉碎成60目以上的百合发酵粉;
C.将玉竹洗净,在40-80℃烘烤干燥后放入粉碎机粉碎成60目以上,加入相当于玉竹1-5倍重量的水熬煮,煮沸后加入魔芋胶,搅拌充分溶解得到玉竹魔芋混合液;
D.将所述百合发酵粉、玉竹魔芋混合液和面粉混合进行和面、熟化、扎片、切条、定型、烘干、切断、包装即得。
其中,所述生物菌选自双岐菌、乳酸菌、枯草芽孢杆菌、酵母菌或干酪乳杆菌中的一种或几种。
和现有技术相比,本发明具有以下有益效果:
本发明中的百合玉竹挂面含有发酵后的百合粉,百合本身具有养心安神,润肺止咳的功效,其发酵后可以产生许多对人体健康有益的活性物质,如多酚,多肽、SOD歧化酶,这些物质均有抗氧化性,可平衡内分泌,提高身体免疫,美容养颜,另外,该百合玉竹挂面中的魔芋胶具有水平降血糖、降血脂、散毒、通便的功效,被人吃入体内后能形成半透明膜衣附着在肠壁上,阻碍各种有害物质,特别是致癌物质的吸收,能有效降低癌症发病率,具有广阔的应用前景。

一种百合玉竹挂面,其原料如下:
百合发酵粉5份,白糖1.5份,玉竹1份,面粉80份,魔芋胶0.5份。
上述百合玉竹挂面的制备方法如下:
A.将百合洗净,使用粉碎机将其粉碎成20-60目的百合粉并置于干净无毒密封的容器中,向容器中加入相当于百合粉7-16倍重量的水和所述白糖,混合均匀,接入生物菌发酵,发酵时间不少于30天,发酵完成后过滤得到百合发酵物;
B.将所述百合发酵物在40-80℃下烘烤干燥,然后用粉碎机粉碎成60目以上的百合发酵粉;
C.将玉竹洗净,在40-80℃烘烤干燥后放入粉碎机粉碎成60目以上,加入相当于玉竹1-5倍重量的水熬煮,煮沸后加入魔芋胶,搅拌充分溶解得到玉竹魔芋混合液;
D.将所述百合发酵粉、玉竹魔芋混合液和面粉混合进行和面、熟化、扎片、切条、定型、烘干、切断、包装即得。
其中,所述生物菌选自双岐菌、乳酸菌、枯草芽孢杆菌、酵母菌或干酪乳杆菌中的一种或几种。
实施例2
一种百合玉竹挂面,其原料如下:
百合发酵粉30份,白糖10份,玉竹10份,面粉95份,魔芋胶1.0份。
上述百合玉竹挂面的制备方法和实施例1中的相同。
实施例3
一种百合玉竹挂面,其原料如下:
百合发酵粉17份,白糖6份,玉竹5份,面粉87份,魔芋胶0.75份。
上述百合玉竹挂面的制备方法和实施例1中的相同。

1.一种百合玉竹挂面,其特征在于,按重量份计,由以下原料制成:
百合发酵粉5-30份,白糖1.5-10份,玉竹1-10份,面粉80-95份,魔芋胶0.5-1.0份。
2.根据权利要求1所述的百合玉竹挂面,其特征在于,由以下原料制成:百合发酵粉17份,白糖6份,玉竹5份,面粉87份,魔芋胶0.75份。
3.制备权利要求1或2所述的百合玉竹挂面的方法,其特征在于,包括以下步骤:
A.将百合洗净,使用粉碎机将其粉碎成20-60目的百合粉并置于干净无毒密封的容器中,向容器中加入相当于百合粉7-16倍重量的水和所述白糖,混合均匀,接入生物菌发酵,发酵时间不少于30天,发酵完成后过滤得到百合发酵物;

4.根据权利要求3所述的百合玉竹挂面的制备方法,其特征在于,所述生物菌选自双岐菌、乳酸菌、枯草芽孢杆菌、酵母菌或干酪乳杆菌中的一种或几种。
