本发明涉及抗氧化剂领域,特别是涉及一种蔬菜生物抗氧化剂。
背景技术
抗氧化剂作为一种重要的食品添加剂,主要用 于阻止或延缓油脂的自动氧化,还可防止食品在贮 藏中因氧化而使营养损坏、褐变、褪色等。抗氧化剂分为天然和人工合成两类,现有人工合成的抗氧化剂格低廉,能有效抑制氧化,应用较广泛,但人们对其安全性存在一定质疑。而天然抗氧化剂价格昂贵,不易保存,不能广泛推广使用,且效果也有待提高。本发明研究了一种蔬菜生物抗氧化剂。
发明内容
本发明主要解决的技术问题是现有人工合成的抗氧化剂格低廉,能有效抑制氧化,应用较广泛,但人们对其安全性存在一定质疑。而天然抗氧化剂价格昂贵,不易保存,不能广泛推广使用,且效果也有待提高。
为解决上述技术问题,本采用的一个技术方案是:提供一种蔬菜生物抗氧化剂,该氧化剂包括以下按重量份计的组分:溶菌酶10~13份,植酸8~11份,壳聚糖12~16份,加乳酸链球菌素6~9份,赖氨酸7~10份,抗坏血酸棕榈酸酯4~8份,对葵花籽11~14份,pH调节剂5~10份。
进一步,所述pH调节剂为磷酸盐。
进一步,所述磷酸盐为磷酸氢二钠。
进一步,所述磷酸氢二钠按重量份计为9份。
进一步,所述氧化剂包括以下按重量份计的组分:溶菌酶11份,植酸9份,壳聚糖15份,加乳酸链球菌素8份,赖氨酸9份,抗坏血酸棕榈酸酯6份,对葵花籽13份。
本发明的有益效果是:本发明组分溶菌酶,植酸,壳聚糖,加乳酸链球菌素,赖氨酸,抗坏血酸棕榈酸酯,对葵花籽油,磷酸氢二钠之间的相互再生作用,且在组分本发明的具体组分条件下协同作用最优。
具体实施方式
实施例1
(1)将溶菌酶11份,植酸9份,壳聚糖15份,加乳酸链球菌素8份,赖氨酸9份,搅拌混合均匀,形成混合物。
(2)称取抗坏血酸棕榈酸酯6份,对葵花籽13份于容器中搅拌1h再加入水22份混合均匀,再加入步骤(1)混合物,再边搅拌边加入磷酸氢二钠9份,继续搅拌至均匀,即得本发明抗氧化剂。
实施例2
(1)将溶菌酶10份,植酸11份,壳聚糖12份,加乳酸链球菌素9份,赖氨酸10份,搅拌混合均匀,形成混合物。
(2)称取抗坏血酸棕榈酸酯4份,对葵花籽14份于容器中搅拌1h再加入水21份混合均匀,再加入步骤(1)混合物,再边搅拌边加入磷酸氢二钠11份,继续搅拌至均匀,即得本发明抗氧化剂。
实施例3
(1)将溶菌酶13份,植酸8份,壳聚糖16份,加乳酸链球菌素6份,赖氨酸7份,搅拌混合均匀,形成混合物。
(2)称取抗坏血酸棕榈酸酯8份,对葵花籽11份于容器中搅拌1h再加入水24份混合均匀,再加入步骤(1)混合物,再边搅拌边加入磷酸氢二钠6份,继续搅拌至均匀,即得本发明抗氧化剂。
实施例4
通过感官指标、微生物指标的测定,结果表明本发明实施例1~3制备的样品,能有效阻抗蔬菜氧化,实施例1制备的样品效果最好,其他样品效果与实施例1制备的样品相比效果略差。

1.一种蔬菜生物抗氧化剂,其特征在于,该氧化剂包括以下按重量份计的组分:溶菌酶10~13份,植酸8~11份,壳聚糖12~16份,加乳酸链球菌素6~9份,赖氨酸7~10份,抗坏血酸棕榈酸酯4~8份,对葵花籽11~14份,pH调节剂5~10份。

3.根据权利要求2所述的一种蔬菜生物抗氧化剂,其特征在于,所述磷酸盐为磷酸氢二钠。
4.根据权利要求3所述的一种蔬菜生物抗氧化剂,其特征在于,所述磷酸氢二钠按重量份计为9份。
5.根据权利要求1所述的一种蔬菜生物抗氧化剂,其特征在于,所述氧化剂包括以下按重量份计的组分:溶菌酶11份,植酸9份,壳聚糖15份,加乳酸链球菌素8份,赖氨酸9份,抗坏血酸棕榈酸酯6份,对葵花籽13份。
