背景技术
蛹虫草是种药食均可的物质,对人体有降血脂、促进睡眠、抗菌的功用。灵芝,属担子菌纲多孔菌科植物,具有丰富的营养价值和医疗保健作用,是我国特色的食药两用类真菌。灵芝中含有诸如多肽,灵芝多糖、甾醇类等化学成分使其可以抗氧化、抗衰老、保肝、强心、镇痛、平喘。常喝绿茶可以起到减肥、抗氧化、清口臭调节血糖、减烟毒、缓解疲劳等作用。目前的茶饮料多数比较单一,对人体营养的提供是有限的,因此研制营养补充型的复合茶饮料从市场的角度来说是有很大的发展空间。
发明内容
本发明主要解决的技术问题是提供一种经超滤技术-脉冲强光杀菌技术处理的抗氧化型复合茶饮料的制备方法,依照该方法制备的复合茶饮料具有一定的抗氧化性。
本发明所要解决的技术问题采用以下的技术方案来实现:
一种经超滤技术-脉冲强光杀菌技术处理的抗氧化型复合茶饮料的制备方法,其特征在于,按以下步骤进行:
(1)绿茶叶的水浸提工艺:
将绿茶叶清洗、粉碎、护色,按茶水比1:48-50加水,加热至60-62℃浸提28-30min,重复2-4次,过滤,得到绿茶提取液;
(2)蛹虫草的水浸提工艺:
将蛹虫草子实体清洗干净后剪碎,按料水比1:14-16加水,升温至88-90℃浸提1-2h,重复2-3次,过滤,得到蛹虫草提取液;
(3)灵芝的超声波提取工艺:
向灵芝子实体粉中按料液比1:47-49加入蒸馏水,在功率650-700W条件下超声波提取43-45min,离心分离14-16min,得到灵芝浸提液;
(4)蛹虫草灵芝复合茶饮料的制备:
将(1)中所得50-52份绿茶提取液、(2)中所得4-5份蛹虫草提取液、(3)中所得6-7份灵芝浸提液混合,加入辅料混匀,均质处理后得到复合茶饮料;
(5)复合茶饮料的超滤技术和脉冲强光杀菌技术:
将(4)中所得复合茶饮料在操作压力为0.2-0.3MPa、物料温度为38-40℃条件下,用超滤膜进行过滤澄清,然后在闪照时间23-25s、闪照距离7-8cm的条件下,用脉冲强光进行杀菌处理,再真空罐装得到成品。
其中,步骤(3)中离心速度为4000-5000r/min。步骤(4)中辅料配方为9-10份木糖醇、3-4份蜂蜜、0.2-0.3份异抗坏血酸钠、0.2-0.3份柠檬酸、0.2-0.3g份羧甲基纤维素钠、0.1-0.2份果胶、0.01-0.02份黄原胶。步骤(5)中超滤膜的截留分子量为50000D。
本发明的反应机理及有益效果如下:
以灵芝子实体粉为原料,加入蒸馏水,升温后在超声波作用下对灵芝的有效成分进行提取,灵芝水浸出物得率和灵芝多糖得率高,超声波技术具有提取效率高、提取时间短的特点,常温提取可避免高温对灵芝功能成分分子结构的破坏;以绿茶叶、蛹虫草子实体为原料,加水浸提,得到绿茶提取液和蛹虫草提取液,与灵芝浸提液复配,再加入多种辅料,制得蛹虫草灵芝复合茶饮料;用超滤膜对复合茶饮料进行澄清试验,提高饮料的透光率,超滤澄清处理能够保留饮料营养成分,提高饮料的外观品质和贮藏稳定性;用脉冲强光对复合茶饮料进行杀菌处理,脉冲强光可有效杀灭复合茶饮料中的微生物,能有效延长灵芝复合茶饮料的保质期,并保证其安全性;该饮料的DPPH抑制率高、ABTS清除率高,具有良好的抗氧化性。

实施例
一种经超滤技术-脉冲强光杀菌技术处理的抗氧化型复合茶饮料的制备方法,其特征在于,按以下步骤进行:
(1)绿茶叶的水浸提工艺:
将绿茶叶清洗、粉碎、护色,按茶水比1:48加水,加热至60-62℃浸提30min,重复2次,过滤,得到绿茶提取液;
(2)蛹虫草的水浸提工艺:
将蛹虫草子实体清洗干净后剪碎,按料水比1:14加水,升温至88-90℃浸提1h,重复3次,过滤,得到蛹虫草提取液;
(3)灵芝的超声波提取工艺:
向灵芝子实体粉中按料液比1:47加入蒸馏水,在功率700W条件下超声波提取45min,离心分离16min,得到灵芝浸提液;
(4)蛹虫草灵芝复合茶饮料的制备:
将(1)中所得50kg绿茶提取液、(2)中所得4kg蛹虫草提取液、(3)中所得6kg灵芝浸提液混合,加入辅料混匀,均质处理后得到复合茶饮料;
(5)复合茶饮料的超滤技术和脉冲强光杀菌技术:
将(4)中所得复合茶饮料在操作压力为0.2MPa、物料温度为38-40℃条件下,用超滤膜进行过滤澄清,然后在闪照时间23s、闪照距离7cm的条件下,用脉冲强光进行杀菌处理,再真空罐装得到成品。
其中,步骤(3)中离心速度为5000r/min。步骤(4)中辅料配方为9kg木糖醇、3kg蜂蜜、0.2kg异抗坏血酸钠、0.2kg柠檬酸、0.2kg羧甲基纤维素钠、0.1kg果胶、0.01kg黄原胶。步骤(5)中超滤膜的截留分子量为50000D。

1.一种经超滤技术-脉冲强光杀菌技术处理的抗氧化型复合茶饮料的制备方法,其特征在于:将绿茶叶清洗、粉碎、护色,按茶水比加水,加热浸提,过滤得到绿茶提取液;将蛹虫草子实体清洗干净后剪碎,按料水比加水,升温浸提,过滤得到蛹虫草提取液;向灵芝子实体粉中按料液比加入蒸馏水,在超声波条件下提取,离心分离得到灵芝浸提液;将所得绿茶提取液、蛹虫草提取液、灵芝浸提液混合,加入辅料混匀,均质处理后得到复合茶饮料;将所得复合茶饮料用超滤膜进行过滤澄清,然后用脉冲强光进行杀菌处理,再真空罐装得到成品。
