本发明涉及一种脑出血病人专用鼻饲食品的三日营养配方及其制备方法,属于特殊用途食品领域。
背景技术
脑出血(cerebral hemorrhage)是指非外伤性脑实质内血管破裂引起的出血,占全部脑卒中的20%~30%,急性期病死率为30%~40%。发生的原因主要与脑血管的病变有关,即与高血脂、糖尿病、高血压、血管的老化、吸烟等密切相关。脑出血的患者往往由于情绪激动、费劲用力时突然发病,早期死亡率很高,幸存者中多数留有不同程度的运动障碍、认知障碍、言语吞咽障碍等后遗症,使患者不能自主进食,需要补充鼻饲流质食品以提供人体所需营养。
鼻饲流质食品是指食品呈流质状态,全无渣滓,易于吞咽和消化。鼻饲流质食品作为医疗康复食品,通常适用于生病的儿童,发高热、口腔炎症咀嚼不便、消化道出血或极度衰弱无力咀嚼食品的重症患者,口腔、面颊部及外科手术前后,重度颅脑损伤等疾病患者。现有普通鼻饲流质食品由面条、食盐、白糖、胡萝卜、精瘦肉或鸡蛋、香油、果汁等加水制成,品种极其单一,营养不够丰富,对不同疾病的患者不具备针对性。
因此,本发明结合了脑出血患者的体质特征,以碳水化合物、蛋白质和有保健功能的油脂微胶囊为主要原料,以多种维生素、矿物质为辅料,并配伍多种功能性药食同源植物原料提取物,制成一种脑出血病人专用的三日营养型鼻饲配方食品。

本发明旨在提供一种脑出血病人专用的鼻饲食品的配方及其制备方法,在保证营养的前提下添加多种功能因子,有效促进脑出血病人的康复,非常试用于脑出血患者的辅助治疗。

一种脑出血病人专用三日营养型鼻饲配方食品,其特征是结合脑出血患者的体质特征,以富含碳水化合物和蛋白质的食物以及有保健功能的油脂微胶囊为主要原料,以富含多种维生素和矿物质的食物为辅料,并配伍多种功能性药食同源保健品原料提取物以及新资源食品原料提取物,制成的供脑出血病人一日三餐专用的三日营养型鼻饲配方食品。

3.本发明所述脑出血病人专用三日营养型鼻饲配方食品,其特征在于第三日配方为:早餐:藕粉10-15g,大枣冻干粉5-7g,香蕉冻干粉3-5g,海带冻干粉3-5g,核桃油微胶囊1-2g,黄芪多糖提取物0.5-1g,总质量25±1g;午餐:大米冻干粉10-15g,猪肉冻干粉8-10g,莴笋冻干粉5-7g,西红柿冻干粉3-5g,全蛋冻干粉2-3g,茶叶籽油微胶囊1-2g,小麦胚芽油微胶囊1-2g,紫山芋多糖提取物0.5-1g,南瓜多糖提取物0.5-1g,蓝莓花青素提取物0.5-1g,食盐0.5-1g,总质量35±1g;晚餐:红豆冻干粉8-10g,虾肉冻干粉8-10g,西蓝花冻干粉5-7g,猕猴桃冻干粉3-5g,大豆胚芽油油微胶囊1-2g,米糠油微胶囊1-2g,麦冬多糖提取物0.5-1g,杜仲多糖提取物0.5-1g,玉米蛋白肽提取物0.5-1g,总质量30±1g;
制作本配方食品时将富含碳水化合物、蛋白质、维生素和矿物质的食品原料冷冻干燥后粉碎过筛备用,具有保健功能的油脂经喷雾干燥法制备成微胶囊后备用,功能性药食同源保健品原料提取物和新资源食品原料提取物由超声辅助提取法和酶解法制备备用。具体操作步骤如下:
1.将各种食品原料清洗后,置于-25℃~-20℃低温冰箱中迅速冷冻0.5~1.5h,取出后置于冻干机干燥仓内,于-20℃~-10℃条件下真空干燥1~3h。对干燥仓内加热板加热直至干燥仓温度为35℃~45℃,并调节干燥仓真空压力为30Pa~40Pa条件下保温1~2h,保持干燥仓真空压力30Pa~40Pa条件下进行降温,待温度降至15℃~25℃后维持1~2h,得到真空冷冻干燥后的食品原料,粉碎后过40目筛备用;
2.将具有保健功能的油脂与单甘脂混合形成油相溶液,其中,具有保健功能的油脂占总原料的质量比为30-45%,单甘酯占总原料的质量比为0.5-1.5%。然后将麦芽糊精与蔗糖酯混合形成壁材相溶液,其中,麦芽糊精占总原料的质量比为50-65%,蔗糖酯占总原料的质量比为3.5-4.5%。将油相溶液与壁材相溶液混合,在60-70℃搅拌15-20分钟,加入高剪切乳化机进行初乳化,剪切转速为10000-12000r/min,剪切时间3-5分钟,得到微胶囊乳化液。将微胶囊乳化液,在压力为20-50MPa条件下,高压均质2次,形成油/水(O/W)型乳状液;将油/水乳状液进行喷雾干燥,条件为:进料温度为60-70℃,进风温度为190-200℃,出风温度为80-90℃,进料泵速10-15mL/min,过筛后即得油脂微胶囊;
3.多糖的提取采用超声辅助水提法,首先称取一定质量的植物原料,按照一定的料液比加入水,充分浸泡2h后进行超声辅助提取,超声温度70-80℃、超声时间60-70min、超声功率80-100w,提取结束后离心分离上清液,提取三次合并上清液于旋转蒸发仪中浓缩,温度50-55℃,转速50-60rpm/min,然后冻干粉碎过筛备用;
4.蛋白肽的提取采用酶解法,首先称取一定量的植物蛋白原料,按照一定的底物比例用相应的酶在最适温度和pH条件下对其进行水解得到活性肽,然后冻干粉碎过筛备用;
5.多酚和花青素的提取采用超声辅助提取法,首先称取一定量的植物原料,按照一定料液比加入60%乙醇,充分浸泡2h后进行超声辅助提取,超声温度35-45℃、超声时间60-70min、超声功率80-100w,提取结束后离心分离上清液,提取三次合并上清液于旋转蒸发仪中回收乙醇,温度45-55℃,转速50-60rpm/min,然后冻干粉碎过筛备用。
6.将由以上工艺制成的配料按配比混合均匀制成粉状冲剂,使用时用150-200mL70-80℃温开水充分溶解,冷却至35-40℃后经鼻饲摄入。
本鼻饲配方食品是根据《特殊医学用途配方食品通则》的要求,结合脑出血患者的体质特征,综合当今先进的生理学、医药、营养学及临床应用等研究成果研制的,因人而异,黄金配伍,每日补充能量不低于1000kcal;将各种配料有机组合,将各种功能进行融合,并通过有效成分之间的协同作用增强功效;.本发明配方中所含的碳水化合物是为人体供能的主要营养素,也是细胞膜的糖蛋白、神经组织的糖脂以及传递遗传信息的脱氧核糖核酸(DNA)的重要组成成分,而且碳水化合物中含有的糖原,当其在肝内储备充足时,肝细胞对某些有毒的化学物质和各种致病微生物产生的毒素有较强的解毒能力;.本发明配方中所含的有保健功能的油脂不仅为人体提供正常生活所需的能量,并对人身体有保健作用;本发明配方食品含多种维生素和矿物质,可迅速补充脑出血患者所需的微量营养素;本发明配方中采用多种药食同源保健品原料提取物和新资源食品原料提取物,含有多种功能活性成分,有助于减轻肝肾负担,具有抗氧化、减肥降脂及增强免疫力的功效。

本实施例提供了一种脑出血病人专用的三日营养型鼻饲配方食品,其加工步骤如下:
一.将鸡蛋、大米、小米、绿豆、红豆、芹菜、香菇、菠菜、小白菜、胡萝卜、白菜、木耳、马铃薯、油菜、海带、西红柿、莴笋、西蓝花、鸡肉、牡蛎、牛肉、鱼肉、猪肉、虾肉清洗后制熟,与清洗后的苹果、菠萝、柚子、大枣、香蕉、葡萄、猕猴桃一起置于-20℃低温冰箱中迅速冷冻0.5h,取出后置于冻干机干燥仓内,于-20℃条件下真空干燥3h。对干燥仓内加热板加热直至干燥仓温度为35℃,并调节干燥仓真空压力为30Pa条件下保温2h,保持干燥仓真空压力30Pa条件下进行降温,待温度降至25℃后维持1h,得到真空冷冻干燥后的食品原料,粉碎后过40目筛备用;
二.将松子油、杏仁油、牡丹籽油、沙棘籽油、南瓜籽油、亚麻籽油、番茄籽油、橄榄油、石榴籽油、紫苏油、核桃油、茶叶籽油、小麦胚芽油、大豆胚芽油、米糠油分别与单甘脂混合形成油相溶液,其中,油占总原料的质量比为45%,单甘酯占总原料的质量比为1.5%。然后将麦芽糊精与蔗糖酯混合形成壁材相溶液,其中,麦芽糊精占总原料的质量比为50%,蔗糖酯占总原料的质量比为3.5%。将油相溶液与壁材相溶液混合,在65℃搅拌20分钟,加入高剪切乳化机进行初乳化,剪切转速为10000r/min,剪切时间5分钟,得到微胶囊乳化液。将微胶囊乳化液,在压力为20MPa条件下,高压均质2次,形成油/水(O/W)型乳状液;将油/水乳状液进行喷雾干燥,条件为:进料温度为65℃,进风温度为190℃,出风温度为90℃,进料泵速15mL/min,过筛后即得微胶囊;
三.称取人参、枸杞、黑木耳、青钱柳、天麻、灵芝、香菇、蛹虫草、芦荟、铁皮石斛、黄芪、南瓜、紫山芋、麦冬、杜仲粉末各10g,分别加入50mL水,充分浸泡2h后进行超声辅助提取,超声温度70℃、超声时间60min、超声功率100w,提取结束后离心分离上清液,提取三次合并上清液于旋转蒸发仪中浓缩,温度50℃,转速50rpm/min,然后冻干粉碎过筛即得多糖提取物;
四.称取山核桃蛋白粉、松仁蛋白粉、玉米蛋白粉各10g分别配成0.6%的底物溶液,调节pH至8.5,温度50℃,加入6000U/g蛋白的碱性蛋白酶,酶解2h,反应结束后在100℃水浴中灭酶15min,溶液冷却至室温,离心分离得到蛋白肽,然后冻干粉碎过筛备用;
五.称取绿茶粉、山楂粉、蓝莓粉各10g,分别加入50mL60%乙醇,充分浸泡2h后进行超声辅助提取,超声温度40℃、超声时间60min、超声功率100w,提取结束后离心分离上清液,提取三次合并上清液于旋转蒸发仪中回收乙醇,温度50℃,转速50rpm/min,然后冻干粉碎过筛即得多酚/花青素提取物;

具体实施方式二
本实施例提供了一种脑出血病人专用的三日营养型鼻饲配方食品,其加工步骤如下:
一.将鸡蛋、大米、小米、绿豆、红豆、芹菜、香菇、菠菜、小白菜、胡萝卜、白菜、木耳、马铃薯、油菜、海带、西红柿、莴笋、西蓝花、鸡肉、牡蛎、牛肉、鱼肉、猪肉、虾肉清洗后制熟,与清洗后的苹果、菠萝、柚子、大枣、香蕉、葡萄、猕猴桃一起置于-25℃低温冰箱中迅速冷冻1h,取出后置于冻干机干燥仓内,于-20℃条件下真空干燥3h。对干燥仓内加热板加热直至干燥仓温度为40℃,并调节干燥仓真空压力为30Pa条件下保温2h,保持干燥仓真空压力30Pa条件下进行降温,待温度降至20℃后维持1.5h,得到真空冷冻干燥后的食品原料,粉碎后过40目筛备用;
二.将松子油、杏仁油、牡丹籽油、沙棘籽油、南瓜籽油、亚麻籽油、番茄籽油、橄榄油、石榴籽油、紫苏油、核桃油、茶叶籽油、小麦胚芽油、大豆胚芽油、米糠油分别与单甘脂混合形成油相溶液,其中,油占总原料的质量比为40%,单甘酯占总原料的质量比为1.5%。然后将麦芽糊精与蔗糖酯混合形成壁材相溶液,其中,麦芽糊精占总原料的质量比为55%,蔗糖酯占总原料的质量比为3.5%。将油相溶液与壁材相溶液混合,在70℃搅拌15分钟,加入高剪切乳化机进行初乳化,剪切转速为12000r/min,剪切时间3分钟,得到微胶囊乳化液。将微胶囊乳化液,在压力为30MPa条件下,高压均质2次,形成油/水(O/W)型乳状液;将油/水乳状液进行喷雾干燥,条件为:进料温度为70℃,进风温度为195℃,出风温度为85℃,进料泵速13mL/min,过筛后即得微胶囊;
三.称取人参、枸杞、黑木耳、青钱柳、天麻、灵芝、香菇、蛹虫草、芦荟、铁皮石斛、黄芪、南瓜、紫山芋、麦冬、杜仲粉末各10g,分别加入50mL水,充分浸泡2h后进行超声辅助提取,超声温度75℃、超声时间70min、超声功率90w,提取结束后离心分离上清液,提取三次合并上清液于旋转蒸发仪中浓缩,温度50℃,转速50rpm/min,然后冻干粉碎过筛即得多糖提取物;
四.称取山核桃蛋白粉、松仁蛋白粉、玉米蛋白粉各10g分别配成0.6%的底物溶液,调节pH至8.5,温度50℃,加入6000U/g蛋白的碱性蛋白酶,酶解2h,反应结束后在100℃水浴中灭酶15min,溶液冷却至室温,离心分离得到蛋白肽,然后冻干粉碎过筛备用;
五.称取绿茶粉、山楂粉、蓝莓粉各10g,分别加入50mL60%乙醇,充分浸泡2h后进行超声辅助提取,超声温度40℃、超声时间65min、超声功率90w,提取结束后离心分离上清液,提取三次合并上清液于旋转蒸发仪中回收乙醇,温度50℃,转速50rpm/min,然后冻干粉碎过筛即得多酚/花青素提取物;
六.将制备好的鸡蛋6g、菠菜4g、苹果3g、松子油微胶囊2g、人参多糖提取物0.5g与全脂奶粉10g充分混合即得第一日早餐配方食品,用150mL75℃温开水充分溶解,冷却至35℃后经鼻饲摄入;将制备好的大米14g、鸡肉9g、香菇5g、芹菜4g、杏仁油微胶囊1g、牡丹籽油微胶囊1g、枸杞多糖提取物0.6g、黑木耳多糖提取物0.6g、茶多酚提取物0.5g与食盐0.5g充分混合即得第一日午餐配方食品,用200mL75℃温开水充分溶解,冷却至35℃后经鼻饲摄入;将制备好的小米8g、牡蛎8g、小白菜5g、菠萝3g、沙棘籽油微胶囊2g、南瓜子油微胶囊2g、青钱柳多糖提取物0.5g、天麻多糖提取物0.5g、山核桃蛋白肽提取物0.6g充分混合即得第一日晚餐配方食品,用200mL75℃温开水充分溶解,冷却至35℃后经鼻饲摄入;将制备好的全麦面包6g、柚子3g、胡萝卜4g、亚麻籽油微胶囊2g、灵芝多糖提取物0.5g与豆粉10g充分混合即得第二日早餐配方食品,用150mL75℃温开水充分溶解,冷却至35℃后经鼻饲摄入;将制备好的大米13g、牛肉8g、马铃薯5g、白菜3g、木耳2g、番茄籽油微胶囊1g、橄榄油微胶囊1g、香菇多糖提取物1g、蛹虫草多糖提取物0.5g、山楂多酚提取物0.5g与食盐0.5g充分混合即得第二日午餐配方食品,用200mL75℃温开水充分溶解,冷却至35℃后经鼻饲摄入;将制备好的绿豆8g、鱼肉9g、油菜5g、葡萄5g、石榴籽油微胶囊1g、紫苏油微胶囊1g、芦荟多糖提取物0.5g、铁皮石斛多糖提取物0.5g、松仁蛋白肽提取物0.8g充分混合即得第二日晚餐配方食品,用200mL75℃温开水充分溶解,冷却至35℃后经鼻饲摄入;将制备好的大枣5g、香蕉4g、海带3g、核桃油微胶囊2g、黄芪多糖提取物0.5g与藕粉10g充分混合即得第三日早餐配方食品,用150mL75℃温开水充分溶解,冷却至35℃后经鼻饲摄入;将制备好的大米12g、猪肉9g、莴笋5g、西红柿3g、鸡蛋2g、茶叶籽油微胶囊1g、小麦胚芽油微胶囊1g、紫山芋多糖提取物0.5g、南瓜多糖提取物0.5g、蓝莓花青素提取物0.8g与食盐0.5g充分混合即得第三日午餐配方食品,用200mL75℃温开水充分溶解,冷却至35℃后经鼻饲摄入;将制备好的红豆8g、虾肉9g、西蓝花5g、猕猴桃3g、大豆胚芽油油微胶囊1g、米糠油微胶囊2g、麦冬多糖提取物0.5g、杜仲多糖提取物0.6g、玉米蛋白肽提取物0.5充分混合即得第三日晚餐配方食品,用200mL75℃温开水充分溶解,冷却至35℃后经鼻饲摄入。

1.一种脑出血病人专用三日营养型鼻饲配方食品,其特征是结合脑出血患者的体质特征,以富含碳水化合物和蛋白质的食物以及有保健功能的油脂微胶囊为主要原料,以富含多种维生素和矿物质的食物为辅料,并配伍多种功能性药食同源保健品原料提取物以及新资源食品原料提取物,制成的供脑出血病人一日三餐专用的三日营养型鼻饲配方食品。
2.根据权利要求1所述的脑出血病人专用三日营养型鼻饲配方食品,其特征是第一日配方为:早餐:全脂奶粉10-15g,全蛋冻干粉5-7g,苹果冻干粉3-5g,菠菜冻干粉3-5g,松子油微胶囊1-2g,人参多糖提取物0.5-1g,总质量25±1g;午餐:大米冻干粉10-15g,鸡肉冻干粉8-10g,香菇冻干粉5-7g,芹菜冻干粉5-7g,杏仁油微胶囊1-2g,牡丹籽油微胶囊1-2g,枸杞多糖提取物0.5-1g,黑木耳多糖提取物0.5-1g,茶多酚提取物0.5-1g,食盐0.5-1g,总质量35±1g;晚餐:小米冻干粉8-10g,牡蛎冻干粉8-10g,小白菜冻干粉5-7g,菠萝冻干粉3-5g,沙棘籽油微胶囊1-2g,南瓜子油微胶囊1-2g,青钱柳多糖提取物0.5-1g,天麻多糖提取物0.5-1g,山核桃蛋白肽提取物0.5-1g,总质量30±1g。
3.根据权利要求1所述的脑出血病人专用三日营养型鼻饲配方食品,其特征是第二日配方为:早餐:豆粉10-15g,全麦面包冻干粉5-7g,柚子冻干粉3-5g,胡萝卜冻干粉3-5g,亚麻籽油微胶囊1-2g,灵芝多糖提取物0.5-1g,总质量25±1g;午餐:大米冻干粉10-15g,牛肉冻干粉8-10g,马铃薯冻干粉5-7g,白菜冻干粉3-5g,木耳冻干粉2-3g,番茄籽油微胶囊1-2g,橄榄油微胶囊1-2g,香菇多糖提取物0.5-1g,蛹虫草多糖提取物0.5-1g,山楂多酚提取物0.5-1g,食盐0.5-1g,总质量35±1g;晚餐:绿豆冻干粉8-10g,鱼肉冻干粉8-10g,油菜冻干粉5-7g,葡萄冻干粉3-5g,石榴籽油微胶囊1-2g,紫苏油微胶囊1-2g,芦荟多糖提取物0.5-1g,铁皮石斛多糖提取物0.5-1g,松仁蛋白肽提取物0.5-1g,总质量30±1g。
4.根据权利要求1所述的脑出血病人专用三日营养型鼻饲配方食品,其特征是第三日配方为:早餐:藕粉10-15g,大枣冻干粉5-7g,香蕉冻干粉3-5g,海带冻干粉3-5g,核桃油微胶囊1-2g,黄芪多糖提取物0.5-1g,总质量25±1g;午餐:大米冻干粉10-15g,猪肉冻干粉8-10g,莴笋冻干粉5-7g,西红柿冻干粉3-5g,全蛋冻干粉2-3g,茶叶籽油微胶囊1-2g,小麦胚芽油微胶囊1-2g,紫山芋多糖提取物0.5-1g,南瓜多糖提取物0.5-1g,蓝莓花青素提取物0.5-1g,0.5-1g,总质量35±1g;晚餐:红豆冻干粉8-10g,虾肉冻干粉8-10g,西蓝花冻干粉5-7g,猕猴桃冻干粉3-5g,大豆胚芽油油微胶囊1-2g,米糠油微胶囊1-2g,麦冬多糖提取物0.5-1g,杜仲多糖提取物0.5-1g,玉米蛋白肽提取物0.5-1g,总质量30±1g。
