Abstract

本发明涉及一种用于制造具有不同颜色和味道并可在其上形成螺旋形图案的挤压的冷冻糖食的方法和装置,以用来灌装多份家庭或散装或罐装的容器,或者用来制造许多带小棍的雪糕。
一种用于灌装多份冷冻糖食的现有装置可以例如从欧州专利EP-A-0293022中获知,该冷冻糖食含有一种使用酱汁或糖汁通过一个沿轴向放在管中并包括多个侧向孔的空心的转动轴制成的双螺旋形或双同心圆的不同图案,该管包括一个在出口导出管附近的中央偏转件。该空心轴制成的一种图案的糖汁的同心圆构成,偏转件把该图案分成两个子图案。
例如根据美国专利US-A-3227103中所述,两个糕点料团被挤压,每个料团通过导出管可在其圆形断面中形成螺旋形图案,从而制出了“瑞士面包圈”型的蛋糕。但这类装置不能使两种组分经过共同挤压以螺旋线形式刻在圆形断面中的螺旋形图案具有合格的清晰度,因为该装置将产生会使图案变形的偏向流动,该流动是由于在导出管中的较大的摩擦力造成的,它采取螺旋形流动的方式并且位于与圆周有关的该图案的中心处。
本发明通过一个没有运动件的装置对上述问题提供了一个简单的解决方案。
本发明涉及一种用于制造冷冻糖食的方法,该方法通过对具有不同味道和颜色的冷冻组分的共同挤压而形成一个在其中心部分具有一个螺旋形图案的圆柱形挤压物,其特征在于,该冷冻组分由互相在其内部套装并且具有递增截面的几个连续的喷管来竖直地和交替地进行挤压;每个喷管由通过该挤压装置的中央平面相连接的两个并圆柱形半壳形成;以及除了最后的出口喷管的截面是圆形的以外,其他喷管的截面均由在所述中央平面内其直径相连的两个弦向半圆所组成。
在本发明的范围内,冷冻组分应理解成是指通常所说的充气到不同程度的冰淇淋,或者是不充气或只充很少量气的可挤压果汁冻或冰水。
该挤压物在离开挤压装置时最好被切割成许多份,然后被导入连续地出现在该装置下面的容器例如盒或罐中,每份挤压物构成用来装满所述容器的精确的体积,容器被支承在分段前进的链条上,因此在灌装期间容器是静止不动的。作为一个变型方案,也可以把挤压装置安排成例如固定在一个可移动的轨道车上,因而当灌装时,该装置伴随着容器一起行进,而当该容器装满时,立即快速返回其初始位置。
作为一个变型方案,挤压物可被切割成许多片,它们被放置在挤压装置下面连续通过的冷板上,并且可以沿其侧向插入一根小棍,从而生产出带小棍的雪糕。
冷冻组分最好具有不同的味道和颜色并且具有类似的流变性能,这可以通过调整流量、组分、溢流、出口温度和挤压压力来实现。就原理而论,这些物理参数对于各种组分是十分相似的。
本发明还涉及一种用于挤压冷冻糖食的装置,该装置通过对具有不同味道和颜色的冷冻组分的共同挤压而形成一个在其中心部分具有一个螺纹旋形图案的圆柱形挤压物,其特征在于,该装置包括互相在其内部套装并且具有递增截面的几个连续的喷管;每个喷管由通过该挤压装置的中央平面相连接的两个圆柱形半壳形成;以及除了最后的喷管的截面是圆形的以外,其他喷管的截面均由在所述中央平面内其直径相连的两个弦向半圆所组成。

根据本发明的另一个实施例,该糖食采取带小棍的雪糕形式,包括一个离开挤压装置时从该挤压物切割下来的冷冻组分的圆柱形片,在该片的截面上刻有螺旋形图案并且在该片中配置了一根小棍。

在图1中,具有第一种味道(例如香果兰味)的冰淇淋通过管1竖直地到达,再以通过阀2调节后的流量通过中央导出管3。具有第二种味道(例如巧克力味)的冰淇淋沿侧向到达,并且以通过阀6和7调节后的流量从各侧通过管4和5进入围绕导出管3四周的空间中,两种复合流的混合物通过导出管8流出。同样,一种香果兰味冰淇淋沿侧向到达,并以通过阀11和12调节后的流量通过管9和10进入围绕导出管8四周的空间中,三种复合流的混合物通过导出管13流出。同样,一种巧克力味冰淇淋沿侧向到达,并以通过阀16和17调节后的流量通过管14和15进入围绕导出管13的四周的空间中,四种复合流的混合物通过导出管18流出。同样,一种香果兰味冰淇淋沿侧向到达,并以通过阀21和22调节后的流量通过管19和20进入导出管18四周的空间中,该五种复合流的混合物通过出口导出管23流出并且构成最后的挤压物。
阀2、6、7、11、12、16、17、21和22可以彼此无关地单独进行控制,或者通过一个控制系统来控制。
最后挤压物可以用切割工具24切割成其体积与一罐的容积相适合的许多份,然后把它存放在罐25中,该罐在整个灌装工序中是静止不动的,但一旦被灌满,它就由沿箭头f1的方向步进地通过的传送带26送走。
在图2中,该挤压物以与图1的相同方式被挤出来,唯一不同之处在于,切割工具24以较高的频率工作并且切下例如27这样的切片,插棍器28在它前进时把一根棍插入该切片中,然后传送带26沿箭头f1的方向的一条连续通路把雪送走。
如图3中所清楚示出的,连续的喷管的导出管3、8、13和18在挤压机的中央平面内相对于挤压轴线因而也相对于挤压物的轴线是偏心的,而最后的出口导出管23是沿着挤压物轴线的。
在图4-7中可以看出,这些也代表着管的截面的导出管3、8、13和18中的每个都可以在所述中央平面内被向上分成其直径相连的两个弦向半圆。另一方面,出口导出管23是圆形的。因此应当注意到,可以说这些喷管具有的截面形成了反螺旋形的图案。喷管的这种构形使得对单独由相连的半圆筒构成的挤压物的连续的共同挤压得以进行,而没有由于压紧在该壁上的该挤压物的摩擦引起的剪切力所产生的偏向流动。
最好,导出管例如管3的截面积基本上等于管3与管8之间的面积差,导出管8的截面积基本上等于管13与管8之间的面积差,导出管13的截面积基本上等于管18与管13之间的面积差以及导出管18的截面积基本上等于管23与管18之间的面积差,这就意味着该连续的共同挤压的挤压物没有变形。
在图8中,装有一根小棍29的共同挤压的挤压物的截面30形成了一个带小棍的雪糕,该雪糕具有一个刻在香果兰冰淇淋块32中的用螺旋形巧克力冰淇淋31装饰的外形。
在上述的详细说明中,已经对基于两种冰淇淋的双组分糖食产品作了说明。只要不脱离本发明的范围,还可以生产出由好几种具有不同颜色味道的冰淇淋组成的糖食产品,例如具有多达九种固定成分而每种成分都能形成其螺旋形部分的糖食产品。
在其流变性相类似的条件下,由不同的果汁冻或者其他冰淇淋和果汁冻构成的基本成分也可以并列在一起。
冷冻组分中还可以含有小的内含物(例如巧克力片)或者可以含有用酱汁或糖汁制成的大理石纹。
此外,基于可挤压的冰水或果汁冻的带小棍的雪糕上可以覆盖上水基的薄冰层以便产生一个光亮的面层。

Claims (8)

1.一种用于制造冰冻糖食的方法,该方法通过对具有不同味道和颜色的冷冻组分的共同挤压而形成一个在其中心部分具有一个螺旋形图案的圆柱形挤压物,其特征在于:该冷冻组分由互相在其内部套装并且具有递增的截面的几个连续的喷管来竖直地和交替地进行挤压;每个喷管由通过该挤压装置的中央平面相连的两个圆柱形半壳形成;除了最后的出口喷管的截面是圆形的以外,其他喷管的截面均由在所述中央平面内其直径相连的两个切向半圆所组成。
2.如权利要求1中所述的方法,其特征在于:该冷冻组分是充气到不同程度的冰淇淋,或者是不充气或只充很少量气的可挤压的果汁冻或冰水。
3.如权利要求1或2中所述的方法,其特征在于:挤压物在离开该挤压装置时被切割成许多份,然后被导入连续地出现在该装置下面的容器中,每份挤压物构成用来装满所述容器的精确的体积。
4.如权利要求1或2中所述的方法,其特征在于:将该挤压物切割成许多片,它们被放置在该挤压装置下面连续通过的冷板上,并且沿其侧向插入一根小棍,以便生产出带小棍的雪糕。

7.如权利要求6中所述的糖食,其特征在于:该糖食采取一种圆柱形罐的形式,该罐具有较小的释放角,其中装有一个在其截面上刻有螺旋形图案的冷冻组分的圆柱形挤压物。
8.如权利要求6中所述的糖食,其特征在于:该糖食采取带小棍的雪糕形式,包括一个从冷冻组分的挤压物上切割下来的圆柱形片,在该片的截面上刻有螺旋形图案并且在该片中插有一根小棍。
