背景技术
目前海参多作为一种高级食材,用于烹饪饮食或者研发海参胶囊类的保健品,很少用于饮料制作。而其本身的营养成分丰富,但在内陆地区并没有被广泛了解,实际使用率不高。而在沿海地区,虽然被大众认可为营养丰富的高级食材,但由于海参的大分子结构,普通的食用方法很难吸收海参中营养成分,将海参以生物酶水解,将大分子肽链转化为小分子氨基酸,使其直接被肠道吸收,同时海参多糖、海参皂苷等活性成分也得以保留。并且将海参加工制作为饮料不仅便于运输携带,也更易推广。
红枣含有丰富的维生素A、B、C等人体必须的多种维生素和18种氨基酸、矿物质,有养血安神、补气美白的功效;红枣会令面色红润,因具有养颜补血的作用。蜂蜜含有与人体血清浓度相近的多种无机盐和维生素、铁、钙、铜、锰、钾、磷等多种有机酸和有益人体健康的微量元素,以及果糖、葡萄糖、淀粉酶、氧化酶、还原酶等,具有滋养、润燥、解毒、美白养颜、润肠通便之功效,是一种温和滋补品。百香果含有17种氨基酸,丰富的蛋白质、脂肪、糖、维生素、钙、磷、铁、钾、SOD酶和超纤维等165种对人体有益物质,更被称为水果中的VC(维生素C)之王,并且它的口感独特。合理搭配后不仅能掩盖海参活性成分独特的腥味,还能使饮料口感更富层次性,给人以味觉的享受。海参与红枣、蜂蜜等都在活血美容方面有很大功效,对女性的身体健康有一定的促进作用。

本发明提供的海参饮料由于以海参为主要原料,改变了传统的海参利用方式,添加了对女性身体健康有利的辅料进行调味,在滋补身体的同时,实现女性需要的美容养颜的要求;
酶解选用中性蛋白酶彻底水解,在50℃环境中添加生姜提取液,生姜中的姜醇、姜烯、姜酚、挥发油、有机酸等等的物质,都能使海参中醛、酮等的异味分子发生氧化、缩醛以及酯化反应,使得异味减弱,之后以红枣、蜂蜜及有独特气味的百香果为辅料,不仅能掩盖海参活性成分独特的腥味,去除腥味物质的同时不影响海参中其他有效成分的含量和性质,同时使饮料口感更佳。

实施例1
本实施例中采用包括如下重量的原料:
1)海参清理
清洗海参,去除泥沙,同时保留海参的肠、卵等,将清洗后的海参在沸水中煮1~2分钟,去除海参表面重金属。之后将冷却后的海参送入粉碎机,得到直径小于5mm的颗粒状固体。
2)酶解
将粉碎后的海参100kg投入生物反应釜中,添加1kg木瓜蛋白酶200万U/g,调节pH为5~7,海参本身pH值大约就在5~7,本步骤中可以不添加其他调节剂进行调节,酶解时间为8~12h,酶解温度为75~80℃。
3)去腥
将10Kg生姜洗净,加入30Kg的纯净水榨汁,得到的汁液与步骤2)得到的酶解液按照10∶1的比例混合均匀,将混合物在90℃下灭酶10min,过滤后取上清液为去腥酶解液。
4)调味
百香果果瓤剖开,取汁液及黑色种子待用,将红枣洗净,加入3倍重量的水经长时间高温蒸煮后,冷却沉淀,经过滤后得到澄清液,随后加入与红枣等重量的蜂蜜混合均匀,同时加入红枣两倍重量的百香果汁液,得到调味液,将调味液按1∶2的比例充分混合到步骤3)得到的去腥酶解液中,同时加入200kg生活饮用水,充分混合后到最终产品。
5)灌装、灭菌
经上一步骤所的产品采用全自动灌装旋盖一体机分装到30mL的棕色钠钙玻璃瓶中,在85℃条件下进行微波灭菌。
6)包装
完成后对产品进行包装处理,贴瓶标后以30ML*20的规格作为最小销售单元。产品包装完整,密封严密,封口牢固。
本发明制备的海参饮料海参含量为140g/L,无腥味,口感佳,在滋补身体的同时,实现女性需要的美容养颜的要求。
虽然已经通过例子对本发明的一些特定实施例进行了详细说明,但是本领域的技术人员应该理解,以上例子仅是为了进行说明,而不是为了限制本发明的范围。本领域的技术人员应该理解,可在不脱离本发明的范围和精神的情况下,对以上实施例进行修改。本发明的范围由所附权利要求来限定。
Claims (10)
1.一种海参饮料,其特征在于,主要原料为海参,海参在所述海参饮料中的含量为140g/L。
2.根据权利要求1所述的海参饮料,其特征在于,包括以下重量份数的原料:
3.根据权利要求1所述的一种海参饮料的制备方法,其特征在于,包括酶解步骤,所述酶解步骤具体为:
将海参搅碎成细小颗粒后,调节pH5~7,添加中性蛋白酶,75~80℃酶解8~12h,得到海参酶解液。
4.根据权利要求3所述的制备方法,其特征在于,所述中性蛋白酶活性超过200万U/g。
5.根据权利要求3所述的制备方法,其特征在于,所述中性蛋白酶包括木瓜蛋白酶。
6.根据权利要求3所述的制备方法,其特征在于,所述酶解步骤之后还包括去腥步骤,所述去腥步骤具体为:
将所述海参酶解液加入姜汁混合均匀,90℃灭酶10min,分离,取上层清液为去腥酶解液。
7.根据权利要求6所述的制备方法,其特征在于,所述姜汁由生姜和三倍生姜重量的水榨汁制得。
8.根据权利要求6所述的制备方法,其特征在于,所述去腥步骤之后还包括调味步骤,所述调味步骤具体为:
将百香果汁、红枣提取液、蜂蜜混合,过滤,得到调味液;
将所述调味液、所述去腥酶解液和水混合均匀,得所述海参饮料。
9.根据权利要求8所述的制备方法,其特征在于,所述去腥步骤中,采用的所述调味液、所述去腥酶解液、水的重量比例为:调味液∶去腥酶解液∶水=1∶2∶5。
10.根据权利要求8所述的制备方法,其特征在于,所述红枣提取液由红枣和三倍红枣重量得水经蒸煮制得。
