Description
本发明涉及一种通过将纤维质潮湿食料粉碎并且干燥而生产粉末食品的方法,还涉及一种生产这种粉末食品的设备的应用。
含有不溶性物质,尤其是含有大量植物纤维的含水产品,经压滤离心分离后,得到的剩余物的处理或干燥方法及设备已有各种各样的报道。
WO9221623(Alb.Klein GmbH&CoKG)公开了用至少两台连续干燥机压滤水处理植物沉积物以及干燥压滤残渣的方法,如用一台锥形干燥机和一台扇形圆板干燥机。
GB1,581,859(Grampex Protein Ltd)分开了在如下的设备中用碎鲜鱼肉连续生产鱼粉的方法,所说的设备包括一个圆柱形筒体和一个装有桨片的轴向转动器,桨片搅动并且运送物料,还包括在圆柱形筒体内,沿间隔开筒体以同轴的形式设置的多个加热单元。
JP01260285(Tokai Seifunki Seis)公开了一种研磨豆饼或米饼的干燥机,该干燥机包括一个卧式圆柱形筒体,一个装有一组用于运送并且搅动物料的圆盘状桨片的转动轴,多个设置于每组桨片之间的筛网,筛的目数从上游至下游越来越小,通过筛网来调整欲干燥的物料在设备中的停留时间。
本发明的目的是提供一种通过粉碎并干燥纤维质潮湿食料生产粉末食品的方法,这种方法特别有效并且能够去除该产品的臭味。
为了实现这个目的,本发明的方法是将纤维质潮湿食料投到坚硬表面上研磨,使其粉碎,并且同时用热空气干燥。
同样,为了实现这个目的,本发明还涉及一种用来把纤维质潮湿食料制成粉末食品的设备的应用,这种设备能将所说的食料投到坚硬表面上研磨,使其粉碎,并且同时用热空气干燥。
令人惊奇地发现,与其它公知的用纤维质潮湿食料生产粉末食品需要有效地除味的现有技术相比,本发明的方法和设备可以有效地制备可口的粉末食品,并且具有高效节能,设备投入少等特点。
为了实现本发明的方法,原料可以选自以下纤维质潮湿食料中的一种:例如,果蔬汁提取后的滤渣,提取糖后的甜菜剩余物,植物水解产物水悬浮液的压滤残渣,以及咖啡渣。
本文中术语“植物水解产物水悬浮液的压滤残渣”是指生产酱油型调味剂时的副产物,这种酱油型调味剂是在为了对其进行榨取而压滤富含蛋白质的植物产物如大豆的含水悬浮液时例如通过酶水解和/或发酵得到的,在该压滤过程中最好向所说的悬浮液中加入富含碳水化合物的产品如谷物,特别是小麦。
原料中可含有20-40%的水分,水分嵌在交错的植物纤维之间,很难提取出来。经过本发明方法的处理后,水分能够与纤维分离,同时明显地释放出大量的嵌入植物纤维间的挥发性物质。因此,例如可在将原料进行粉碎并同时进行干燥至剩余水分为3-12%的同时,以一种令人惊奇的有效的方式除去异味。
例如,将原料投到竖直圆柱形筒体内壁坚硬表面上进行研磨,而使原料粉碎,并且同时在转动器与内壁间引入热空气进行流动而使产品干燥,所说的转动器包括一个联带着凸出元件的轴。
具体而言,所说的食料能不断地从底部加至转动轴和内壁之间,经粉碎并干燥的产品能连续地从顶部回收,热空气流从底部向上在转动器和内壁之间流动。
热空气的温度是50-400℃,优选的例子是在干燥开始时温度是200-400℃,干燥结束时温度选择50至小于200℃之间。
根据本发明,用来生产粉末食品的设备是一种能将所说的食料投到坚硬的平面上研磨,使其粉碎,同时用热空气干燥的装置。
这种设备最好包括一个竖直的圆柱形筒体,该筒体具有竖直圆柱内壁形式的坚硬表面,一个联带着凸出元件的轴的轴向转动器,一个加热空气并推动热空气从底部向上在所说内壁和转动器间流动的装置,一个底部的进料装置以及一个顶部的出料装置。
本发明所使用的设备可根据说明书附图作进一步描述。

实施例1
使用如附图所示的设备,在本例中使用V-5超细型隔膜粉碎机,生产粉末食品的原料选自一种调味剂的压滤残渣,调味剂的制备方法类似于US5,141,757的实施例2,该文献引入本发明以作参考。
此方法制备的水悬浮液包括以干基计20%的脱脂豆粉。这种悬浮液用碱性细菌蛋白酶在68℃下水解3小时,开始时的pH值为10,水解5-10分钟pH值降至7.5。悬浮液用蒸气灭菌后冷却至30-35℃。煮熟的大豆和粉碎的熟麦混合物用曲霉稻属孢子培养液发酵44小时,形成曲,以悬浮液中固形物含量计向悬浮液中加入20%的曲。加入氯化钠使悬浮液中含有14%的氯化钠。pH值用柠檬酸调至5.4。悬浮液再用2%(体积)的Saccharmyces rouxii及Torulopsis etchelsii培养液培养,在33℃下培养熟化4个星期。然后用液压机压滤榨出汁。
压滤后的残渣包括以下成分:
水 32.0%
蛋白质 30.6%
脂肪 4.0%
纤维 17.0%
碳水化合物5.6%
灰分 10.8%
这些残渣以每小时500公斤的速度连续装入所说的设备中,转动器以每分钟4850转的速度转动,将已加热至200℃的空气推入通过设备。热空气在大约120℃温度下夹带着碎裂的残渣排出。
生产出的粉末,其残余水分约为9%,并且具有无刺激感的愉快口味。没有任何不愉快的气味。粉末含有高蛋白和高可食纤维,可以作为添加剂应用于食品生产中。
实施例2
用如实施例1相同的方法过程,只是将加热至400℃的空气推入通过设备,空气在大约190℃下排出。
这种方法生产出的粉末,其残余水分约为7%,并且具有无刺激感、愉快的轻微炙烤口感。没有任何不愉快的气味。粉末含有高蛋白和高可食纤维,可以作为添加剂应用于食品生产中。
实施例3
实施例1和2生产出的粉末用于欲通过烤制/挤压处理而生产面包屑型产品的混合物中。混合物中水分为12%,并且包括以下物质,以固体重量百分数计:
小麦面粉 75.0%
氯化钠 2.0%
糖 6.0%
脱脂奶粉 2.0%
实施例1或实施例2制得的粉末 15.0%
混合物在150-180℃,140-180巴压力下用双螺杆挤压机烤制/挤压,然后磨碎成产品。
这种面包屑型产品可以用来作为如肉食的涂层,制成小牛肉面包或者用面包屑涂制成土耳其面包,也可以用来作为烤层,并且把亚洲人喜欢的香味物质加到这些食品上,而不用再加入其它的增香剂。
实施例4
用如实施例3的生产方法,只是被烤制/挤压的混合物中用实施例1或2的方法制得的粉末其含量以干基计为30%。
这种烤制/挤压并磨碎的混合物可以作汤料,增加了亚洲人喜欢的香味物质,或者作为面包的增香剂。
Claims (7)
1.一种粉末食品的生产方法,其特征在于将纤维质潮湿食料投到坚硬表面上研磨,使其粉碎,并且同时用热空气干燥。
2.根据权利要求1的生产方法,其特征在于用一个轴向转动器将所说的纤维质潮湿食料投到竖直圆柱形筒体内壁坚硬表面上进行研磨而使原料粉碎,并且同时在转动器与内壁间引入热空气进行流动而使产品干燥,所说的转动器包括一个联带着凸出元件的轴。
3.根据权利要求2的生产方法,其特征在于纤维质潮湿食料从底部连续送入到转动器和内壁之间,粉碎并干燥的食品从顶部连续回收,并且从底部引入热空气流,在转动器和内壁之间向上流动。
4.根据权利要求1的生产方法,其特征在于所说的纤维质潮湿食料选自:果蔬汁提取后的滤渣,提取糖后的甜菜剩余物,植物水解产物水悬浮液的压滤残渣,以及咖啡渣。
5.根据权利要求1的生产方法,其特征在于所说的纤维质潮湿食料是一种植物水解产物水悬浮液的压滤残渣,残渣所含的水分为20-40%,残渣干燥至剩余的水分为3-12%。
6.根据权利要求1的生产方法,其特征在于热空气在干燥开始时温度是200-400℃,干燥结束时温度选择50℃至小于200℃之间。
7.一种用于生产粉末食品的设备,它包括一个竖直圆柱形筒体,该筒体具有竖直圆柱内壁形式的坚硬表面,一个包括联带着凸出元件的轴的轴向转动器,一个加热空气并推动热空气从底部向上在所说内壁和转动器间流动的装置,一个底部的原料进料装置以及一个顶部的粉碎食品的出料装置。
