本发明属于食品领域,涉及一种风味骨泥及其制备工艺技术。
背景技术
缺钙不仅影响儿童的生长发育,还会导致成年人骨质疏松,在天然的补钙食物中,动物骨骼中的骨钙含量较高,占骨重量的60-70%,钙磷比例合理,胶原蛋白及微量元素丰富,动物骨骼是一种最好的天然钙源。
目前,市面上已经出现了一些骨泥食品,但是配方设计单一,口感较差,营养不均衡。
发明内容
本发明的目的在于解决上述现有技术存在的不足之处,提供一种配方设计合理,口感细腻,味道鲜美,钙含量丰富,容易被人体消化吸收的补钙营养骨泥及其制备工艺。
为了解决上述技术问题,本发明所采取的技术方案如下:
一种补钙营养骨泥,包括以下重量份的原料:
复合骨泥50份、沙茶酱15份、鱼籽酱5份、海带粉3份、营养复合剂1份、发酵乳15份、芝士5份。
作为本发明的限定:
所述营养复合剂包括以下成分:
每克原料中含有维生素A 40IU、维生素B 1mg、维生素C 0.6mg、 维生素E 0.15mg、硒0.3μg、叶黄素5mg;
所述复合骨泥为10重量份鱼骨、30重量份牦牛骨、10重量份牛骨粉碎至200目的混合粉末。
本发明还提供了一种补钙营养骨泥的制备工艺,包括以下步骤:
1)、清洗:将鱼骨、牦牛骨、牛骨洗净去杂;
2)、高压蒸煮:将上述骨料置于高压容器中蒸煮30min,使骨质酥软;
3)、冷冻:将蒸煮后的骨料冷冻,使骨料中心温度在1-3℃;
4)、粉碎、研磨::将冷冻后骨料置于粉碎机内粉碎后置于研磨机中研磨至200目;
5)、混合 将芝士软化后与复合骨粉和其它物料充分混合,均质后得到产品。
本发明的有益效果如下:
本发明的补钙营养骨泥,配方合理科学,采用复合骨泥,其风味比单一骨泥更鲜美丰满、含钙量高,不仅提味,与其它食材配伍后,还实现了不同动植物之间营养互补,使食疗功效大大提高,添加有营养复合剂,弥补了天然食材中的不足,且与其它物质的配伍后,能促进人体的钙、磷等营养物质的吸收,提高机体抗氧化和免疫功能;本发明的制备工艺,简单,过程易于控制,制备的产品食之口感细腻鲜美,骨泥中所含的各种营养物质更容易消化吸收。

本实施例为一种补钙营养骨泥,包括以下重量份的原料:
200目复合骨泥50g(10 g鱼骨、30 g牦牛骨、10 g牛骨)、沙茶酱15 g、鱼籽酱5 g、海带粉3 g、营养复合剂1 g(维生素A 40IU、维生素B 1mg、维生素C 0.6mg、 维生素E 0.15mg、硒0.3μg、叶黄素5mg)、发酵乳15 g、芝士5 g。
上述补钙营养骨泥的制备工艺,包括以下步骤:
1)、清洗:将鱼骨、牦牛骨、牛骨洗净去杂;

复合骨泥50份、沙茶酱15份、鱼籽酱5份、海带粉3份、营养复合剂1份、发酵乳15份、芝士5份。
2.根据权利要求1所述的一种补钙营养骨泥,其特征在于:所述营养复合剂包括以下成分:

4.如权利要求1-3中任意一项所述的一种补钙营养骨泥的制备工艺,其特征在于包括以下步骤:
