本发明公开一种新的谷物蛋白肽,涉及饮料加工领域,特别涉及特殊膳食用食品领域。该发明是选用既是食品又是药品的新资源食品原材料,经浸泡、磨浆、酶反应、灭酶、均质、喷雾干燥法制备,该发明方法简便,实用性强,具备营养均衡、抗衰老、提高人体免疫功能的协同效果,经食用后吸收效果好,有效成分利用率高,非常适宜免疫力低下的人群食用。

本发明公开一种新的谷物蛋白肽,涉及饮料加工领域,特别涉及特殊膳食用食品领域。
背景技术
免疫功能低下,会对人体健康产生极为不利的影响,使多种传染病和非传染病的发病率、死亡率显著提高。其中,引人注目的有肿瘤病症等。造成免疫力低下的原因有多种,环境污染,内分泌失调,心理健康因素,营养失衡等。特别是在饮食发方面,近20年来,我们食用的小麦、大米、玉米3大主食精华——胚芽,在工业化加工过程中统统都去掉了,经过长时间缺乏这种营养素,人体免疫功能岂有不下降之理?
本发明谷物蛋白肽,选择了3种胚芽为主要原料,芡实、薏米为辅助原料。为了更加确保协同增效效果,配方中添加了新资源食品γ-氨基丁酸和L-硒甲基硒代半胱氨酸。γ-氨基丁酸是中枢神经系统中很重要的抑制性神经递质,它是一种天然存在的非蛋白组成氨基酸,具有极其重要的生理功能,它能促进脑的活化性,健脑益智,促进睡眠,美容润肤,延缓脑衰老机能,促进肾机能改善和保护作用等。大量研究表明,L-硒甲基硒代半胱氨酸能够影响免疫系统,主要包含3种免疫方式,即细胞免疫、体液免疫及非特异性免疫。所以,该发明配方食品不仅具备肽营养的特有功能,而且它的提高免疫功能的有益效果也是显而易见的。
发明内容
本发明公开一种新的谷物蛋白肽,其特征在于,选用以下既是药品又是食品的原料和卫生部公布的新资源食品:
小麦胚芽 25-30
玉米胚芽 25-30
大米胚芽 25-30
芡实 8-10
薏米 10-15
麦芽糖浆 25-30
饮用水 700-800
γ-氨基丁酸 0.3+0.5
L-硒甲基硒代半胱氨酸 0.002-0.003
本发明的提供有益效果是,方法简便,实用性强,具备营养均衡、抗衰老、提高人体免疫功能的协同效果,经食用后吸收效果好,有效成分利用率高,非常适宜免疫力低下的人群食用。
具体实施方式
1、将小麦胚芽、玉米胚芽、大米胚芽、芡实、薏米分别称重,去杂,清洗,然后放入容器内,加入70-80倍的饮用水浸泡6-8小时,
2、把浸泡好的原料使用胶体磨磨浆,再把磨好的浆料放入冷热缸内煮沸,保持8-10分钟,再冷却至50度左右,添加0.2-0.3蛋白酶,0.1-0.2肽酶,0.2-0.3风味酶,进行水解,水解时间保持3-3.5小时,温度保持在48-51度之间,不停地进行搅拌。
3、将水解好的浆料加热至85-95度灭酶,时间保持10分钟左右,使用离心机将浆渣进行分离,分离后,再把麦芽糖浆、γ-氨基丁酸、L-硒甲基硒代半胱氨酸一起放入浆料中搅拌均匀,使用均质机进行均质,均质压力为20-25Mpa。
4、把均质好的浆料使用喷雾干燥机进行喷粉干燥,既得新的谷物蛋白肽粉;或将浆料直接灌装在玻璃瓶内封装,进行超高温灭菌,即得新的谷物蛋白肽饮料。

1.一种新的谷物蛋白肽,其特征在于,选用以下既是食品又是药品和新资源食品原料成分:
小麦胚芽 25-30
玉米胚芽 25-30
大米胚芽 25-30
芡实 8-10
薏米 10-15
麦芽糖浆 25-30
饮用水 700-800。
2.根据权利要求1所述,其特征在于,还含有一种或几种卫生部和国家计生委公告批准的新资源食品营养强化剂成分:
γ-氨基丁酸 0.3-0.5
L-硒甲基硒代半胱氨酸 0.002-0.003。
3.根据权利要求1和2所述,其特征还在于,使用酶制剂水解制备新的谷物蛋白多肽粉或饮料。
