背景技术
食品的罐藏就是将经过一定处理的食品装入镀锡薄板罐、玻璃罐或其它包装容器中,经密封杀菌,使罐内食品与外界隔绝而不再被微生物污染,同时又使罐内绝大部分微生物(即能在罐内环境生长的腐败菌和致病菌)死灭并使酶失活,从而消除了引起食品变败的主要原因,获得在室温下长期贮藏的保藏方法。这种密封在容器中并经杀菌而在室温下能够较长时间保存的食品称为罐藏食品,即罐头食品。
