本发明公开了一种儿童青少年桑叶蛋白粉,由下列重量份的原料制成:桑叶100‑110、大豆蛋白粉20‑21、巧克力10‑11、杏仁22‑23、橄榄油2‑3、黄瓜籽10‑11、葡萄糖酸锌0.01‑0.02、维生素A0.0001‑0.0002、β‑环糊精1‑1.2、活性炭7‑8、乳酸菌适量、蔗糖16‑17、柠檬酸0.2‑0.3。本发明富含多糖、黄酮和γ‑氨基丁酸等多种生物活性物质,且本发明富含钙和维生素,能够促进儿童青少年的生长发育。

技术领域
本发明涉及蛋白粉加工技术领域,尤其涉及一种儿童青少年桑叶蛋白粉及其制备方法。
背景技术
绿色植物的叶子含有丰富的蛋白质,民间很早就广泛将其作为饲料来喂养畜禽,如甘薯叶喂猪、构树叶、苜蓿叶喂牛等。绿色植物叶蛋白被认定是最廉价和最丰富的蛋白质资源,因为其可以不受限制的通过水、二氧化碳和空气中的氮通过光照合成。叶蛋白中粗蛋白质含量高达32%-58%,叶蛋白含有18种氨基酸,除过蛋氨酸含量含量较低外,多种植物叶蛋白的氨基酸含量与大豆、肉类、鱼肉和鸡蛋这些高蛋白食物中氨基酸含量相近,植物叶蛋白包含充足的氨基酸、组成齐全,,必需氨基酸如赖氨酸等尤为突出。基于植物叶蛋白诸多优点,其有望成为人类优质、健康的蛋白质来源。桑叶约占桑树地上部分产量的64%,其营养价值颇高,蛋白含量为21%-27%,属于叶蛋白含量较高的一种植物,氨基酸种类丰富,人体必需氨基酸较为齐全,并且含量较高,谷氨酸尤其突出。且桑叶富含黄酮等多种活性物质,具有降血压、降血脂、抗病毒等多种保健作用。因此,将桑叶应用于蛋白粉的生产具有广阔的前景。《桑叶蛋白粉制备工艺研究及营养价值评价》一文中作者以桑叶为原料,经过浸提、沉淀制出了桑叶蛋白粉,但其还存在着在制备过程中使用化学试剂且未经过脱色外观粗糙等问题。
发明内容
本发明目的就是为了弥补已有技术的缺陷,提供一种儿童青少年桑叶蛋白粉及其制备方法。
本发明是通过以下技术方案实现的:
一种儿童青少年桑叶蛋白粉,由下列重量份的原料制成:
桑叶100-110、大豆蛋白粉20-21、巧克力10-11、杏仁22-23、橄榄油2-3、黄瓜籽10-11、葡萄糖酸锌0.01-0.02、维生素A0.0001-0.0002、β-环糊精1-1.2、活性炭7-8、乳酸菌适量、蔗糖16-17、柠檬酸0.2-0.3。
所述的儿童青少年桑叶蛋白粉的制备方法,包括以下步骤:
(1)将桑叶采用高压脉冲电场处理,其中脉冲强度为1000-1500V/cm,脉冲宽度为60-70µs,脉冲数为10,然后将所得物料粉碎,过40目筛;
(2)将步骤(1)所得物料与β-环糊精混合,加5倍的水,在40℃下水浴加热,浸提1小时,所得物料用4层纱布过滤除渣,在所得物料中加入活性炭,在40℃下水浴加热搅拌30分钟,过滤,收集滤液;
(3)将杏仁与橄榄油混合入锅,小火炒制20-22分钟后出料,粉碎,加4-5倍的水研磨匀质,然后加入巧克力、蔗糖,小火加热煮沸,待冷却后接入乳酸菌在35-37℃下发酵24小时,过滤除渣,灭菌;
(4)将黄瓜籽晒干后磨成粉,得黄瓜籽粉;步骤(2)、(3)所得物料混合,静置24小时后在4000r/min的条件下离心10分钟,弃去上清液,所得沉淀于50-55℃下烘干,粉碎,然后与黄瓜籽粉、剩余物料混合拌匀,即得。
本发明的优点是:本发明采用桑叶作为原料制备出的蛋白粉富含多糖、黄酮和γ-氨基丁酸等多种生物活性物质,且桑叶经过高压脉冲电场处理,可使细胞膜穿孔,增加细胞膜的通透性,促进蛋白质的溶出,桑叶在浸提时加入了β-环糊精可提高黄酮在水中的溶解度,提高黄酮溶出量,且本发明将多种原料加工处理后接入乳酸菌发酵,可产生乳酸,代替化学试剂加入到桑叶的提取液中使pH下降,从而使得蛋白质沉淀,使的本发明更为绿色健康,此外,本发明添加了巧克力、杏仁等调节口味,使得本发明更容易被儿童青少年接受,同时富含钙和维生素,能够促进儿童青少年的生长发育。
具体实施方式
一种儿童青少年桑叶蛋白粉,由下列重量份(千克)的原料制成:
桑叶100、大豆蛋白粉20、巧克力10、杏仁22、橄榄油2、黄瓜籽10、葡萄糖酸锌0.01、维生素A0.0001、β-环糊精1、活性炭7、乳酸菌适量、蔗糖16、柠檬酸0.2。
所述的儿童青少年桑叶蛋白粉的制备方法,包括以下步骤:
(1)将桑叶采用高压脉冲电场处理,其中脉冲强度为1000V/cm,脉冲宽度为60µs,脉冲数为10,然后将所得物料粉碎,过40目筛;
(2)将步骤(1)所得物料与β-环糊精混合,加5倍的水,在40℃下水浴加热,浸提1小时,所得物料用4层纱布过滤除渣,在所得物料中加入活性炭,在40℃下水浴加热搅拌30分钟,过滤,收集滤液;
(3)将杏仁与橄榄油混合入锅,小火炒制20分钟后出料,粉碎,加4倍的水研磨匀质,然后加入巧克力、蔗糖,小火加热煮沸,待冷却后接入乳酸菌在35℃下发酵24小时,过滤除渣,灭菌;
(4)将黄瓜籽晒干后磨成粉,得黄瓜籽粉;步骤(2)、(3)所得物料混合,静置24小时后在4000r/min的条件下离心10分钟,弃去上清液,所得沉淀于50℃下烘干,粉碎,然后与黄瓜籽粉、剩余物料混合拌匀,即得。

1.一种儿童青少年桑叶蛋白粉,其特征在于由下列重量份的原料制成:
桑叶100-110、大豆蛋白粉20-21、巧克力10-11、杏仁22-23、橄榄油2-3、黄瓜籽10-11、葡萄糖酸锌0.01-0.02、维生素A0.0001-0.0002、β-环糊精1-1.2、活性炭7-8、乳酸菌适量、蔗糖16-17、柠檬酸0.2-0.3。
2.根据权利要求1所述的儿童青少年桑叶蛋白粉的制备方法,其特征在于包括以下步骤:
(1)将桑叶采用高压脉冲电场处理,其中脉冲强度为1000-1500V/cm,脉冲宽度为60-70µs,脉冲数为10,然后将所得物料粉碎,过40目筛;
