Abstract
一种梨味香精,属于食品添加剂技术领域。本发明由以下原料制成:乙酸叶醇酯,丁酸乙酯,己酸乙酯,β-石竹烯,十六酸,乙酸乙酯,丙酸乙酯,2-甲基丁酸乙酯,乙酸丁酯,乙酸异戊酯,乙酸己酯,3-甲硫基丙酸甲酯,异戊醇,2-己烯醛,糠醛,庚酸乙酯,α-松油醇,突厥烯酮,香兰素,还包括乙醇、单硬脂酸甘油脂、20%阿拉伯胶水溶液、二氧化硅、玉米淀粉中的一种或几种。本发明通过配方合成梨味香精,可以制成液体梨味香精、粉末梨味香精、乳化型梨味香精,并具有水溶性,可广泛用于梨味的食品、药品中,稳定性好。

技术领域
本发明涉及一种香蕉香精,属于食品添加剂技术领域。
背景技术
梨味香精作为甜味香精的一种传统风味物质至今深受人们的喜爱。传统工艺采用梨的果肉浓缩物,配合稳定剂和防腐剂,混溶得到香精,梨通过压榨、浓缩、酶解、过滤、杀菌等工艺后,基本上已经失去了梨的香气。由于直接从水果中提取的香料有限,工艺复杂,成本高。并且,梨的果肉提取物制得的香精多为液态香精,不易于添加到固体类食品。同时,由于香精的特性多为脂溶性挥发成分,不易添加到水溶性的食物或药品中,且易挥发。因此,开放水溶性的人工合成梨味香精显得尤为重要。

本发明梨味香精由以下重量份的原料制成:乙酸叶醇酯5-20份,丁酸乙酯10-35份,己酸乙酯6-15份,β-石竹烯10-30份,十六酸0.5-5份,乙酸乙酯3-20份,丙酸乙酯0.2-0.7份,2-甲基丁酸乙酯0.1-0.5份,乙酸丁酯0.1-0.5份,乙酸异戊酯6-15份,乙酸己酯4-15份,3-甲硫基丙酸甲酯8-25份,异戊醇0.01-0.03份,2-己烯醛0.01-0.03份,糠醛0.01-0.03份,庚酸乙酯0.01-0.04份,α-松油醇0.005-0.01份,突厥烯酮0.003-0.008份,香兰素0.003-0.008份,乙醇0-99.9份,单硬脂酸甘油脂0-20份,20%阿拉伯胶水溶液0-80份,二氧化硅0-99.9份,玉米淀粉0-99.9份。

本发明通过配方合成梨味香精,可以制成液体梨味香精、粉末梨味香精、乳化型梨味香精,并具有水溶性,可广泛用于梨味的食品、药品中,稳定性好。

乙酸叶醇酯20份,丁酸乙酯25份,己酸乙酯13份,β-石竹烯18份,十六酸3.5份,乙酸乙酯16份,丙酸乙酯0.5份,2-甲基丁酸乙酯0.3份,乙酸丁酯0.4份,乙酸异戊酯8份,乙酸己酯10份,3-甲硫基丙酸甲酯15份,异戊醇0.02份,2-己烯醛0.02份,糠醛0.02份,庚酸乙酯0.03份,α-松油醇0.007份,突厥烯酮0.006份,香兰素0.003份,乙醇99份。
实施例2-粉末梨味香精
乙酸叶醇酯20份,丁酸乙酯17份,己酸乙酯13份,β-石竹烯20份,十六酸4.5份,乙酸乙酯5份,丙酸乙酯0.3份,2-甲基丁酸乙酯0.2份,乙酸丁酯0.5份,乙酸异戊酯8份,乙酸己酯12份,3-甲硫基丙酸甲酯19份,异戊醇0.02份,2-己烯醛0.03份,糠醛0.01份,庚酸乙酯0.04份,α-松油醇0.01份,突厥烯酮0.003份,香兰素0.003份,二氧化硅20份,玉米淀粉80份。
实施例3-乳化型梨味香精
乙酸叶醇酯20份,丁酸乙酯35份,己酸乙酯15份,β-石竹烯30份,十六酸5份,乙酸乙酯20份,丙酸乙酯0.7份,2-甲基丁酸乙酯0.5份,乙酸丁酯0.5份,乙酸异戊酯15份,乙酸己酯15份,3-甲硫基丙酸甲酯25份,异戊醇0.01份,2-己烯醛0.01份,糠醛0.01份,庚酸乙酯0.01份,α-松油醇0.005份,突厥烯酮0.003份,香兰素0.003份,单硬脂酸甘油脂20份,20%阿拉伯胶水溶液80份。
