本发明涉及保健食品领域,具体涉及一种茯苓淮山面条。
背景技术
茯苓,别名云苓、茯灵、松茯苓、松薯等,是寄生在松树根部的多孔菌科植物,是一种珍贵的药食两用菌,自古以来就是药食同源的保健食品,一直受到人们的关注,富含茯苓多糖等多种功效成分,具有健脾胃、利水消肿、降血脂、调节机体免疫、抗衰老、抗肿瘤、抗突变等功能;古人称茯苓为“四时神药”,因为它功效非常广泛,不分四季,将它与各种药物配伍,不管寒、温、风、湿诸疾,都能发挥其独特功效。
淮山,是薯蓣科薯蓣属植物,中医学上称山药,富含有蛋白质、维生素、胆碱、淀粉酶、碘、钙等人体不可缺少的无机盐和微量元素,其使用价值高,可广泛运用于医药、食品、保健等方面。《本草纲目》就认为,淮山能“益肾气、健脾胃、止泄泻、化痰涎、润皮毛”。而近代中医也常用山药治疗脾虚久泻、慢性肠炎、肺虚咳喘、慢性胃炎、糖尿病等。
芡实,别名鸡头米、鸡头苞、鸡头莲、刺莲藕、肇实等,为睡莲科植物芡的干燥成熟种仁。以颗粒饱满,均匀,粉性足,无破碎、干燥无杂质者为佳。有收敛固精等功效,适用于慢性泄泻和小便频数,梦遗滑精,妇女带多腰酸等。
目前,对于上述组分的药物的应用主要是以简单的散剂为主,需要经过人体机体的消化后方能被吸收,使得其这些制剂生物利用率相对较低,使用不方便,起效慢,需要长期服用,因而也有将这些药物成分制成食品,用以在日常生活中对其有效成分进行吸收,但是其配方多存在一定缺陷,要么口感较差,要么成分过于复杂,导致吸收效率也较低下。
发明内容
本发明所解决的技术问题在于提供一种茯苓淮山面条,以解决上述技术背景中的缺陷。
本发明所解决的技术问题采用以下技术方案来实现:
茯苓淮山面条,包括以下质量份的原料:
面粉:100~120份、荞麦粉:20~25份、茯苓:20~30份、淮山:10~20份、芡实:10~15份、山楂:10~15份、莲心:10~15份、桑叶:10~15份、葛根:8~10份、防风:8~10份、三七:1~3份、酵母粉:0.5~2份。
其优选质量份为:面粉:100份、荞麦粉:24份、茯苓:24份、淮山:15份、芡实:12份、山楂:12份、莲心:12份、桑叶:12份、葛根:9份、防风:9份、三七:2份、酵母粉:1份。
其具体制备方法如下:
1)将茯苓与三七炮制、烘干,然后用粉体磨将茯苓与三七磨细,过80~100目筛,同时将淮山制泥,两者分开备用。
2)将按配方比例的芡实、山楂、莲心、桑叶、葛根、防风合并,按每500g药物总质量加入5000~6000ml的比例加水,然后大火煮沸后转小火煎煮2~3h,进行固液分离,然后再加入2000~3000ml水,大火煮沸后转小火煎煮1~2h,进行固液分离后合并两次的煎液,过滤,滤液浓缩至密度为1.05~1.25的清膏。
3)将面粉、荞麦粉、茯苓粉、三七粉、酵母粉混合后加水和面,并在和面过程中分三次等量加入清膏和淮山泥,面和好之后静置发酵。
4)将发酵完成后的面加入面条机中成型即得成品。
作为上述步骤的进一步改进:
所述面粉和荞麦粉是分别将面粉和荞麦干燥至含水量≤5%后粉碎至50~70目制成。
所述淮山为去皮淮山,其在步骤1)中制泥的具体过程是首先将淮山蒸制,在蒸制完成时将其捣烂制成淮山泥,所述蒸制过程中的蒸制温度为100~120℃,蒸制的时间为20~30min。
所述步骤2)中煎液过滤时用50~70目滤布进行过滤。
有益效果:本发明的茯苓淮山面条口感好,有淡甜味,老少咸宜,通过在茯苓中添加芡实进行调和补充,不仅可发挥组分的各自功效,又可体现上述组分的协同功效,强化了增强营养、抗衰老、促生长、预防消化不良、提高免疫力的功效、利于人们接受、且促进了有效成分的吸收。

为了使本发明实现的技术手段、创作特征、达成目的与功效易于明白了解,下面结合具体实施例,进一步阐述本发明。
实施例一:
在该实施例中包括以下组分的原料:
面粉:1100g、荞麦粉:240g、茯苓:260g、淮山:180g、芡实:100g、山楂:100g、莲心:150g、桑叶:150g、葛根:90g、防风:90g、三七:20g、酵母粉:10g。
其中,淮山为去皮淮山,而面粉和荞麦粉为含水量5%,且过70目筛的面粉和荞麦粉。
制备时,先将茯苓与三七炮制、烘干,用粉体磨将两者分别磨细,并过80目筛;同时淮山在120℃的温度条件下蒸制20min,在蒸制完成时将其捣烂制成淮山泥,冷却后与茯苓、三七粉分开备用。
将上述质量比的芡实、山楂、莲心、桑叶、葛根、防风合并后投入瓦罐中,同时往瓦罐中加入7600ml水,大火煮沸后转小火煎煮120min,然后进行固液分离,固液分离后的药渣中再加3400ml,大火煮沸后转小火煎煮90min,固液分离后合并两次的煎液,用70目滤布进行过滤滤液浓缩至密度为1.15的清膏。
将上述比例的面粉、荞麦粉、茯苓粉、三七粉、酵母粉混合后加水和面,并在和面过程中分三次等量加入清膏和淮山泥,面和好之后静置发酵,发酵完成后的面加入面条机中成型即得成品。
实施例二:
在该实施例中包括以下组分的原料:
面粉:1000g、荞麦粉:240g、茯苓:240g、淮山:150g、芡实:120g、山楂:120g、莲心:120g、桑叶:120g、葛根:90g、防风:90g、三七:20g、酵母粉:10g。
其中,淮山为去皮淮山,而面粉和荞麦粉为含水量4%,且过60目筛的面粉和荞麦粉。
制备时,先将茯苓与三七炮制、烘干,用粉体磨将两者分别磨细,并过90目筛;同时淮山在100℃的温度条件下蒸制30min,在蒸制完成时将其捣烂制成淮山泥,冷却后与茯苓、三七粉分开备用。
将上述质量比的芡实、山楂、莲心、桑叶、葛根、防风合并后投入瓦罐中,同时往瓦罐中加入7200ml水,大火煮沸后转小火煎煮150min,然后进行固液分离,固液分离后的药渣中再加3300ml,大火煮沸后转小火煎煮60min,固液分离后合并两次的煎液,用60目滤布进行过滤滤液浓缩至密度为1.20的清膏。
将上述比例的面粉、荞麦粉、茯苓粉、三七粉、酵母粉混合后加水和面,并在和面过程中分三次等量加入清膏和淮山泥,面和好之后静置发酵,发酵完成后的面加入面条机中成型即得成品。

5.一种茯苓淮山面条的制备方法,其特征在于,采用权利要求1或2中所述的各组分的原料制备茯苓淮山面条,其具体制备方法如下:
1)将茯苓与三七炮制、烘干,然后用粉体磨将茯苓与三七磨细,过80~100目筛,同时将淮山制泥,两者分开备用;
2)将按配方比例的芡实、山楂、莲心、桑叶、葛根、防风合并,按每500g药物总质量加入5000~6000ml的比例加水,大火煮沸后转小火煎煮2~3h,进行固液分离,然后再加入2000~3000ml水,大火煮沸后转小火煎煮1~2h,进行固液分离后合并两次的煎液,过滤,滤液浓缩至密度为1.05~1.25的清膏;
3)将面粉、荞麦粉、茯苓粉、三七粉、酵母粉混合后加水和面,并在和面过程中分三次等量加入清膏和淮山泥,面和好之后静置发酵;

6.根据权利要求5所述的制备方法,其特征在于,所述步骤1)中制泥的具体过程是首先将淮山蒸制,在蒸制完成时将其捣烂制成淮山泥,所述蒸制过程中的蒸制温度为100~120℃,蒸制的时间为20~30min。
7.根据权利要求5所述的制备方法,其特征在于,所述步骤2)中煎液过滤时用50~70目滤布进行过滤。
