厚朴花,花蕾长椭圆形,长4-8厘米,直径1.5-3厘米,红棕色至棕褐色,花梗长0.5-2厘米,直径约5毫米,密被灰黄色绒毛。花被片多为12片,外轮长方倒卵形,内轮匙形,肉质,表面有多数灰黄色点状疣;雄蕊多数,花药条形,淡黄棕色,花丝宽而短;雌蕊心皮多数,分离,螺旋状排列于圆锥形的花托上。质脆,易破碎。气香,味淡而微辣。具有行气宽中、开郁化湿的功效。主肝胃气滞、胸脘胀闷、食欲不振、纳谷不香、感冒咳嗽等。
厚朴果,聚合果长椭圆形,长9-12厘米,直径4.5-6厘米.顶端钝圆.基部近圆形,棕色至棕褐色,果多数,纵向紧密排列,木质,先端有外弯尖头,内含种子1-2粒;种子扁卵形或三角状倒卵形,长9-11毫米,直径6-9毫米,腹部具沟槽,外皮棕红色,内皮棕褐色,背部具纵皱纹。气弱,味微涩。具有健脾消食、理气散结的功效。主消化不良、胸脘胀闷、鼠瘘。
橙皮,为芸香科植物香橙的果皮。果皮含橙皮甙、挥发油、果胶、胡萝卜素等。味甘、辛,性温,具有快气利隔、化痰降逆、消食和胃、解酲、杀鱼蟹毒的功效。主胸膈气滞、咳嗽痰多、饮食不消、恶心呕吐、醉酒。
香根芹根,为伞形科植物香根芹的根。多年生草本,高20-70厘米。主根圆柱形,长2-5厘米,有香气。基生叶叶柄长5-26厘米,基部有膜质叶鞘;叶片轮廓呈阔三角形或近圆形,通常二至三回羽状分裂或二回三出式羽状复叶,羽片2-4对,羽片边缘有缺刻,羽状浅裂以至羽状深裂,有短柄,末回裂片卵形,长卵形以至卵状披针形,边缘有粗锯齿,两面被白色粗硬毛,有时仅在脉上有毛;茎生叶的分裂形状同基生叶。具有健脾消食、养肝明目的功效。主消化不良、夜盲症。
黄明胶,为牛科动物黄牛的皮所熬的胶。将干燥的牛皮,铡成小方块,置清水中浸洗2日,经常搅拌换水,至牛皮柔软时洗净取出。入铜锅内,加入约5倍量的清水,加热使徐徐沸腾,并随时添水,每24小时滤取清液,如此反复3次,将全部滤液用明矾沉淀,倾取清汁,再入铜锅内加热浓缩,至滴于滤纸上不化为度,加入黄酒或冰糖等辅料收胶,倒入胶盘内,俟冷,切成小块,晾干。具有补肺清金、滋阴养血、行水、利大肠的功效。
饼干,具有耐贮藏、易携带、口味多样等特点,深受人们喜爱。饼干品种正向休闲化和功能化食品方向发展。按其加工工艺的不同,又可分为:酥性饼干、薄脆饼干、曲奇饼干、夹心饼干、威化饼干、蛋卷等。
本发明涉及的一种厚朴花风味保健糖霜饼干,成品花香浓郁、口感细腻、酥软可口,市场消费量大,保质期长,贮运方便等优点,且目前尚未见有利用这种原料制备糖霜饼干的相关报道。
发明内容
本发明以厚朴花、厚朴果为原料,同时添加橙皮、香根芹根、黄明胶开发出一种厚朴花风味保健糖霜饼干,填补了国内使用这类原料制作糖霜饼干的一项空白。
一种厚朴花风味保健糖霜饼干,其特征在于,采用以下步骤制作:
A. 厚朴花预处理:取新鲜脆嫩的厚朴花花瓣,洗净沥干,放入干燥机进行干燥处理,干燥至花瓣含水量降至6-8%,后放入装有120-160目网筛的粉粹机内进行粉碎,制得厚朴花花粉;
B. 厚朴果预处理:选取成熟饱满的厚朴果,清洗干净,置容器中,加入厚朴果重1-2倍的水、10-12%的白砂糖,大火蒸煮30-60分钟,后放入打浆机内进行打浆,再入浆渣分离机分离出厚朴果汁;
C.中药材预处理:按一定比例取中药材橙皮、香根芹根、黄明胶,置容器内浸泡清洗2-3小时,后取出放入中药煎煮机内,再加入原料中药材重10-15倍的水、6-8倍的厚朴果汁,煎煮60-70分钟,再放入浆渣分离机进行浆渣分离,制得厚朴果中药汁;
D.面团制作:取室温下软化的黄油50-90重量份,用电动打蛋器打至发白、颜色变浅,分三次加入糖粉5-7重量份、蛋液12-15重量份、奶粉3-5重量份、厚朴果中药汁4-6重量份,顺同一方向匀速搅拌均匀,再加入过筛后的低筋面粉100-130重量份,放入自动和面机内进行和面,得厚朴果混合面团;
E. 烘烤、成型:在烘烤盘上铺一层油纸,将厚朴果混合面团擀成薄片,用模具切出形状,放入烘烤盘上,将烤箱预热至190-210℃,放在烤箱中层烘烤至边缘着色即可,后取出放置在烤网上,自然冷却至饼干中心温度降至30-35℃即可;
F.糖霜制作:取糖粉50-70重量份、蛋清粉20-50重量份,置容器内,加入白醋1-2重量份、厚朴花花粉10-15重量份,搅打至顺滑状态,制得厚朴花糖霜;
G. 装盘、成型:将厚朴花糖霜装入裱花袋中,在饼干上均匀涂抹,制得成型的厚朴花风味的霜糖饼干;
H. 包装、检验、贮存:取成型的厚朴花风味的霜糖饼干用食品级包装物进行包装,检验合格后于清洁、干燥、通风的库房中进行贮存。
本发明步骤C中一定比例的中药为以下原料重量比:橙皮35-55%、香根芹根15-25%、黄明胶10-20%。
本发明步骤所需打浆机均为装有80-100目网筛的打浆机。
本发明的作用机理:
厚朴花,行气宽中、开郁化湿;厚朴果,健脾消食、理气散结;橙皮,化痰降逆、消食和胃;香根芹根,健脾消食、养肝明目;黄明胶,补肺清金、滋阴养血。采用以上五味中药相互配伍,协同生效,通过调节肝的升发,肺的肃降,促进脾的健运,以达消食和胃、理气散结等功效。
本发明以厚朴花、厚朴果为原料,同时添加橙皮、香根芹根、黄明胶,制作出一种厚朴花风味保健糖霜饼干。其充分利用厚朴花、厚朴果的营养价值,与中药相互配伍,协同增效,从而达到消食和胃、理气散结等功效。发命中,在饼干中加入厚朴花粉,能在嗅觉上吸引消费者,制得成品花香浓郁、口感细腻、酥软可口,易保存,且保健功能突出,长期食用可明显改善消化不良、胸膈气滞人群的身体不适。其制作工艺简单,易于实现,经济效益、社会效益显著。
以下结合实施例,对本发明作较为详细的说明。
具体实施方式
实施例1,一种厚朴花风味保健糖霜饼干,采用以下步骤制作:
A. 厚朴花预处理:取新鲜脆嫩的厚朴花花瓣,洗净沥干,放入干燥机进行干燥处理,干燥至花瓣含水量降至6%,后放入装有120目网筛的粉粹机内进行粉碎,制得厚朴花花粉;
B. 厚朴果预处理:选取成熟饱满的厚朴果,清洗干净,置容器中,加入厚朴果重1倍的水、10%的白砂糖,大火蒸煮50分钟,后放入打浆机内进行打浆,再入浆渣分离机分离出厚朴果汁;
C.中药材预处理:按重量比例取中药材橙皮55%、香根芹根25%、黄明胶20%,置容器内浸泡清洗2小时,后取出放入中药煎煮机内,再加入原料中药材重10倍的水、6倍的厚朴果汁,煎煮60分钟,再放入浆渣分离机进行浆渣分离,制得厚朴果中药汁;
D.面团制作:取室温下软化的黄油50kg,用电动打蛋器打至发白、颜色变浅,分三次加入糖粉5kg、蛋液12kg、奶粉3kg、厚朴果中药汁4kg,顺同一方向匀速搅拌均匀,再加入过筛后的低筋面粉100kg,放入自动和面机内进行和面,得厚朴果混合面团;
E. 烘烤、成型:在烘烤盘上铺一层油纸,将厚朴果混合面团擀成薄片,用模具切出形状,放入烘烤盘上,将烤箱预热至210℃,放在烤箱中层烘烤至边缘着色即可,后取出放置在烤网上,自然冷却至饼干中心温度降至35℃即可;

H. 包装、检验、贮存:取成型的厚朴花风味的霜糖饼干用食品级包装物进行包装,检验合格后于清洁、干燥、通风的库房中进行贮存。
本发明实施例1经10位消化不良、胸膈气滞的消费者,连续食用10天,每日30克,症状明显缓解人数为6人,有效率为60%;连续食用20天,每日30克以上,症状明显缓解人数为7人,有效率为70%。
实施例2,一种厚朴花风味保健糖霜饼干,采用以下步骤制作:
A. 厚朴花预处理:取新鲜脆嫩的厚朴花花瓣,洗净沥干,放入干燥机进行干燥处理,干燥至花瓣含水量降至6%,后放入装有120目网筛的粉粹机内进行粉碎,制得厚朴花花粉;
B. 厚朴果预处理:选取成熟饱满的厚朴果,清洗干净,置容器中,加入厚朴果重1.5倍的水、11%的白砂糖,大火蒸煮50分钟,后放入打浆机内进行打浆,再入浆渣分离机分离出厚朴果汁;
C.中药材预处理:按重量比例取中药材橙皮45%、香根芹根20%、黄明胶15%、辣姜子20%、石决明15%,置容器内浸泡清洗3小时,后取出放入中药煎煮机内,再加入原料中药材重12倍的水、5倍的厚朴果汁,煎煮60分钟,再放入浆渣分离机进行浆渣分离,制得厚朴果中药汁;
D.面团制作:取室温下软化的黄油70kg,用电动打蛋器打至发白、颜色变浅,分三次加入糖粉6kg、蛋液13kg、奶粉4kg、厚朴果中药汁5kg,顺同一方向匀速搅拌均匀,再加入过筛后的低筋面粉110kg,放入自动和面机内进行和面,得厚朴果混合面团;
E. 烘烤、成型:在烘烤盘上铺一层油纸,将厚朴果风味混合面团擀成薄片,用模具切出形状,放入烘烤盘上,将烤箱预热至210℃,放在烤箱中层烘烤至边缘着色即可,后取出放置在烤网上,自然冷却至饼干中心温度降至35℃即可;
F.糖霜制作:取糖粉60kg、蛋清粉35kg,置容器内,加入白醋1.5kg、厚朴花花粉12kg,搅打至顺滑状态,制得厚朴花糖霜;
G. 装盘、成型:将厚朴花糖霜装入裱花袋中,在饼干上均匀涂抹,制得成型的厚朴花风味的霜糖饼干;
H. 包装、检验、贮存:取成型的厚朴花风味的霜糖饼干用食品级包装物进行包装,检验合格后于清洁、干燥、通风的库房中进行贮存。
辣姜子,为樟科植物红叶木姜子的果实。果实圆球形或椭圆形,长5-10毫米,直径约5毫米,表面黑褐色,基部可见约1厘米长的果柄,果核硬脆,内含种子1枚,富油性。气芳香,味辛凉。具有温中理气、消食化滞的功效。主脘腹疼痛、食滞腹胀、呕吐泄泻。
石决明,呈长卵圆形,内面观略呈耳形,长7-9厘米,宽5-6厘米,高约2厘米。表面暗红色,有多数不规则的螺肋和细密生长线,螺旋部小,体螺部大,从螺旋部顶处开始向右排列有20余个疣状突起,末端6-9个开孔,孔口与壳面平。内面光滑,具珍珠样彩色光泽。壳较厚,质坚硬,不易破碎。无臭,味微咸。具有平肝潜阳、清肝明目的功效。用于头痛眩晕、目赤翳障、视物昏花、青盲雀目。
本发明实施例2的作用机理:
厚朴花,行气宽中、开郁化湿;厚朴果,健脾消食、理气散结;橙皮,化痰降逆、消食和胃;香根芹根,健脾消食、养肝明目;黄明胶,补肺清金、滋阴养血;辣姜子,温中理气、消食化滞;石决明,平肝潜阳、清肝明目。采用以上七味中药相互配伍,协同生效,通过调节肝的升发,肺的肃降,促进脾的健运,以达消食和胃、理气散结等功效。
本发明实施例2经16位消化不良、胸膈气滞的消费者,连续食用10天,每日30克,症状明显缓解人数为11人,有效率为68.75%;连续食用25天,每日40克以上,症状明显缓解人数为13人,有效率为81.25%。
实施例3,一种厚朴花风味保健糖霜饼干,采用以下步骤制作:
A. 厚朴花预处理:取新鲜脆嫩的厚朴花花瓣,洗净沥干,放入干燥机进行干燥处理,干燥至花瓣含水量降至6%,后放入装有120目网筛的粉粹机内进行粉碎,制得厚朴花花粉;
B. 厚朴果预处理:选取成熟饱满的厚朴果,清洗干净,置容器中,加入厚朴果重2倍的水、12%的白砂糖,大火蒸煮60分钟,后放入打浆机内进行打浆,再入浆渣分离机分离出厚朴果汁;
C.中药材预处理:按重量比例取中药材橙皮30%、香根芹根16%、黄明胶11%、辣姜子14%、石决明9%、枳壳12%、鸡肫草8%,置容器内浸泡清洗3小时,后取出放入中药煎煮机内,再加入原料中药材重15倍的水、8倍的厚朴果汁,进行煎煮60分钟,再放入浆渣分离机进行浆渣分离,制得厚朴果中药汁;
D.面团制作:取室温下软化的黄油90kg,用电动打蛋器打至发白、颜色变浅,分三次加入糖粉7kg、蛋液15kg、奶粉5kg、厚朴果中药汁6kg,顺同一方向匀速搅拌均匀,再加入过筛后的低筋面粉130kg,放入自动和面机内进行和面,得厚朴果混合面团;
E. 装盘、成型:在烘烤盘上铺一层油纸,将厚朴果混合面团擀成薄片,用模具切出形状,放入烘烤盘上,将烤箱预热至210℃,放在烤箱中层烘烤至边缘着色即可,后取出放置在烤网上,自然冷却至饼干中心温度降至35℃即可;
F.糖霜制作:取糖粉70kg、蛋清粉50kg,置容器内,加入白醋2重量份、厚朴花花粉15kg,搅打至顺滑状态,制得厚朴花糖霜;
G. 装盘、成型:将厚朴花糖霜装入裱花袋中,在饼干上均匀涂抹,制得成型的厚朴花风味的霜糖饼干;
H. 包装、检验、贮存:取成型的厚朴花风味的霜糖饼干用食品级包装物进行包装,检验合格后于清洁、干燥、通风的库房中进行贮存。
枳壳,呈半球形,直径3-5厘米。外果皮棕褐色或褐色,有颗粒状突起,突起的顶端有凹点状油室;有明显的花柱残迹或果梗痕。切面中果皮黄白色,光滑而稍隆起,厚0.4-1.3厘米,边缘散有1-2列油室,瓤囊7-12瓣,少数至15瓣,汁囊干缩呈棕色至棕褐色,内藏种子。质坚硬,不易折断。气清香,味苦、微酸。具有理气宽中、行滞消胀的功效。用于胸胁气滞、胀满疼痛、食积不化、痰饮内停、胃下垂、脱肛、子官脱垂。
鸡肫草,多年生蓝本,高约20-50厘米。根茎短粗,须根众多。基生叶丛生,肾脏形或圆卵形,肥厚,长3-5厘米,宽3.5-7厘米,先端圆形或微凸尖,基部心形,全缘;具长柄,长约20厘米。花茎中部以上具一无柄叶,抱茎,形与基生叶同。性温,味淡,具有清肺止咳、利水祛湿的功效。用于久咳咯血、疟疾、肾结石、胆石症、白带、跌打损伤、外用治湿热疮毒。
本发明实施例3的作用机理:
厚朴花,行气宽中、开郁化湿;厚朴果,健脾消食、理气散结;橙皮,化痰降逆、消食和胃;香根芹根,健脾消食、养肝明目;黄明胶,补肺清金、滋阴养血;辣姜子,温中理气、消食化滞;石决明,平肝潜阳、清肝明目;枳壳,理气宽中、行滞消胀;鸡肫草,清肺止咳、利水祛湿。采用以上九味中药相互配伍,协同生效,通过调节肝的升发,肺的肃降,促进脾的健运,以达消食和胃、理气散结等功效。
本发明实施例2经25位消化不良、胸膈气滞的消费者,连续食用20天,每日30克,症状明显缓解人数为19人,有效率为76%;连续食用40天,每日50克以上,症状明显缓解人数为22人,有效率为88%。

Claims (3)
1.一种厚朴花风味保健糖霜饼干,其特征在于,采用如下步骤制作:
A. 厚朴花预处理:取新鲜脆嫩的厚朴花花瓣,洗净沥干,放入干燥机进行干燥处理,干燥至花瓣含水量降至6-8%,后放入装有120-160目网筛的粉粹机内进行粉碎,制得厚朴花花粉;
B. 厚朴果预处理:选取成熟饱满的厚朴果,清洗干净,置容器中,加入厚朴果重1-2倍的水、10-12%的白砂糖,大火蒸煮30-60分钟,后放入打浆机内进行打浆,再入浆渣分离机分离出厚朴果汁;
C.中药材预处理:按一定比例取中药材橙皮、香根芹根、黄明胶,置容器内浸泡清洗2-3小时,后取出放入中药煎煮机内,再加入原料中药材重10-15倍的水、6-8倍的厚朴果汁,煎煮60-70分钟,再放入浆渣分离机进行浆渣分离,制得厚朴果中药汁;
D.面团制作:取室温下软化的黄油50-90重量份,用电动打蛋器打至发白、颜色变浅,分三次加入糖粉5-7重量份、蛋液12-15重量份、奶粉3-5重量份、厚朴果中药汁4-6重量份,顺同一方向匀速搅拌均匀,再加入过筛后的低筋面粉100-130重量份,放入自动和面机内进行和面,得厚朴果混合面团;
E. 烘烤、成型:在烘烤盘上铺一层油纸,将厚朴果混合面团擀成薄片,用模具切出形状,放入烘烤盘上,将烤箱预热至190-210℃,放在烤箱中层烘烤至边缘着色即可,后取出放置在烤网上,自然冷却至饼干中心温度降至30-35℃即可;

H. 包装、检验、贮存:取成型的厚朴花风味的霜糖饼干用食品级包装物进行包装,检验合格后于清洁、干燥、通风的库房中进行贮存。
2.根据权利要求1所述的一种厚朴花风味保健糖霜饼干,其特征在于:所述步骤C中一定比例的中药为以下原料重量比:橙皮35-55%、香根芹根15-25%、黄明胶10-20%。
3.根据权利要求1所述的一种厚朴花风味保健糖霜饼干,其特征在于:所述步骤中所需打浆机均为装有80-100目网筛的打浆机。
