[0009] 一种扁豆花风味楮实子马林果双味夹心饼干,其特征在于,采用以下步骤制作: A. 楮实子预处理:取新鲜成熟的楮实子,清洗干净,去核,放入楮实子重10-15倍的水、 0.3-0.7%的纤维素酶、0.2-0.5%的半纤维素酶、0.1-0.3%的果胶酶,搅拌均匀,加热至38-42 °C,保持40-60分钟,再放入装有60-100目网筛的打浆机中打浆,制得酶解楮实子浆; B. 马林果预处理:取新鲜成熟的马林果,使用喷淋设备清洗干净,去皮,后倒入不锈钢 夹层锅中,加入马林果丁重1-3%的甜酒曲,密封静置发酵,待酒精度达到0.8-1.2%体积比, 结束发酵,再放入装有80-100目网筛的打浆机中打浆,制得马林果浆; C. 扁豆花预处理:取新鲜、无虫害的扁豆花花瓣,放入装有40-60目网筛的过滤设备中 清洗干净,放入花瓣重10-15倍的蜂蜜水,浸泡30-40分钟,后沥干体表水,放入焙茶机烘焙 40-50分钟,温度控制在90-1HTC,后用装有80-100目网筛的研磨机中研磨,制成扁豆花粉; D. 中药材预处理:按一定比例取中药材人面子、麻腊干,加入原料中药材重10-14倍的 水,浸泡30-f50分钟,再煎煮40-60分钟,用装有80-100目网筛的打浆机进行打浆,制得中药 浆; E •调粉:取适量面粉,加入面粉重7-9%的中药浆、4-5%的蜂蜜与适量水,放入和面机和 成面团,放入发酵室发酵6-8小时,制得种子面团; F•调合配料:取适量面粉、面粉重30-40%的酶解楮实子浆、7-8%的中药浆、3-5%的白砂 糖、1-2%的食用盐、2-4%的鸡蛋液,搅拌均勾,加入面粉重40-50%的种子面团、1-2%的小苏打 与适量的水,放入和面机和成楮实子味的成品面团,另制一份其它配料、重量完全相同的成 品面团,将酶解楮实子浆换成马林果浆,制得马林果味的成品面团; G •醒发:将两种成品面团各自送入醒发室醒发,醒发温度掌握在35-38 °C,醒发30-40分 钟; H•装模、烘烤:将醒发好的面团各自放入高度为3-5毫米圆柱形模具里压缩成型,后放 入电烤炉中烘烤15-25分钟,温度控制在180-200°C,制成成型的楮实子饼千与马林果饼干; I •制馅:取油脂40-50重量份放入不锈钢锅中加热融化,保持完全融化温度不变,加入 扁豆花粉15-18重量份、白砂糖8-10重量份、牛奶4-6重量份,混合搅拌5-10分钟,制得扁豆 花油脂混合浆; J. 上浆:将楮实子饼干的底面朝上,固定平放,在楮实子饼干底面涂上饼干三分之一的 扁豆花油脂混合浆,另取一块马林果饼干,将其底朝下,复合在涂好浆料的饼干上面,用压 力机使两块饼干和浆料粘在一起,制得扁豆花风味楮实子马林果双味夹心饼干; K. 包装、检验、贮存:将制得的扁豆花风味楮实子马林果双味夹心饼干,在无菌的环境 中用食品级包装物进行包装,检验合格后贮存于阴凉、干燥、避光处。

1. 一种扁豆花风味楮实子马林果双味夹心饼千,其特征在于,采用以下步骤制作: A.楮实子预处理:取新鲜成熟的楮实子,清洗干净,去核,放入楮实子重10-15倍的水、 0• 3-0• 7%的纤维素酶、〇. 2-0.5%的半纤维素酶、0.1-0.3%的果胶酶,搅拌均匀,加热至38-42 °C,保持40-60分钟,再放入装有60-100目网筛的打浆机中打浆,制得酶解楮实子浆; B •马林果预处理:取新鲜成熟的马林果,使用喷淋设备清洗干净,去皮,后倒入不锈钢 夹层锅中,加入马林果丁重1-3%的甜酒曲,密封静置发酵,待酒精度达到0.8-1.2%体积比, 结束发酵,再放入装有80-100目网筛的打浆机中打浆,制得马林果浆; C. 扁豆花预处理:取新鲜、无虫害的扁豆花花瓣,放入装有40-60目网筛的过滤设备中 清洗干净,放入花瓣重10-15倍的蜂蜜水,浸泡30-40分钟,后沥千体表水,放入焙茶机烘焙 40-50分钟,温度控制在90-1HTC,后用装有80-100目网筛的研磨机中研磨,制成扁豆花粉; D. 中药材预处理:按一定比例取中药材人面子、麻腊干,加入原料中药材重10-14倍的 水,浸泡30-50分钟,再煎煮40-60分钟左右,用装有80-100目网筛的打浆机进行打浆,制得 中药浆; E. 调粉:取适量面粉,加入面粉重7-9%的中药浆、4_5%的蜂蜜与适量水,放入和面机和 成面团,放入发酵室发酵6-8小时,制得种子面团; F. 调合配料:取适量面粉、面粉重30-40%的酶解楮实子浆、7-8%的中药浆、3-5%的白砂 糖、1-2%的食用盐、2-4%的鸡蛋液,搅拌均勾,加入面粉重40-50%的种子面团、1-2%的小苏打 与适量的水,放入和面机和成楮实子味的成品面团,另制一份其它配料、重量完全相同的成 品面团,将酶解楮实子浆换成马林果浆,制得马林果味的成品面团; G •醒发:将两种成品面团各自送入醒发室醒发,醒发温度掌握在35-38°C,醒发30-40分 钟左右; H. 装模、烘烤:将醒发好的面团各自放入高度为3-5毫米圆柱形模具里压缩成型,后放 入电烤炉中烘烤15-25分钟,温度控制在180-200°C,制成成型的楮实子饼干与马林果饼千; I. 制馅:取油脂40-50重量份放入不锈钢锅中加热融化,保持完全融化温度不变,加入 扁豆花粉15-18重量份、白砂糖8-10重量份、牛奶4-6重量份,混合搅拌5-10分钟,制得扁豆 花油脂混合浆; J. 上浆:将楮实子饼干的底面朝上,固定平放,在楮实子饼干底面涂上饼干三分之一的 扁豆花油脂混合浆,另取一块马林果饼干,将其底朝下,复合在涂好浆料的饼干上面,用压 力机使两块饼干和浆料粘在一起,制得扁豆花风味楮实子马林果双味夹心饼干; K. 包装、检验、贮存:将制得的扁豆花风味楮实子马林果双味夹心饼干,在无菌的环境 中用食品级包装物进行包装,检验合格后贮存于阴凉、干燥、避光处。
