本发明公开了一种甘蔗果醋饮料,由以下重量百分比的原料制成:甘蔗原醋10%~20%,鲜甘蔗汁40%~50%,蔗糖1%~2%,柠檬酸0.1%~0.2%,DL-苹果酸0.01%~0.05%。本发明的甘蔗果醋饮料,兼具水果和食醋的营养保健功能,是集营养、保健、食疗等功能为一体的新型饮品,以甘蔗汁为酿醋原料生产果醋,不仅可以节约粮食,提高甘蔗附加值,而且可以开发风味独特的醋品,并提高醋品的保健功能。

技术领域
本发明涉及一种甘蔗果醋饮料,属于食品饮料加工技术领域。
背景技术
甘蔗中富含钙、磷、铁、锰、锌等人体必需的营养元素,其中铁的含量特别高,为9 mg/kg,居水果之首,素有“补血果”的美称,主要用于制糖,也是生产饮料的优质原料,现广泛种植于热带及亚热带地区,中医认为甘蔗汁有解热止渴、和中宽胃、生津润燥、利尿、滋养的功效,可用于口干舌燥、津液不足、小便不利、大便秘结、反胃呕吐、消化不良、发热口渴等。但单纯的甘蔗汁含糖量高,比较甜腻,而且香气平淡,不适宜直接饮用。因此,为解决以上问题,亟待研发一种新的能满足市场需要,又便于实用的甘蔗果醋饮料,提高甘蔗产业链,增加甘蔗工业值,利用甘蔗丰富的糖分和多种营养物质,发酵生产具有独特、浓郁甘蔗清香的果酒及果醋产品。
发明内容
(一)要解决的技术问题
为解决上述问题,本发明提出了一种兼具水果和食醋的营养保健功能,集营养、保健、食疗等功能为一体的甘蔗果醋饮料。
(二)技术方案
本发明的甘蔗果醋饮料,由以下重量百分比的原料制成:甘蔗原醋10%~20%,鲜甘蔗汁40%~50%,蔗糖1%~2%,柠檬酸0.1%~0.2%,DL-苹果酸0.01%~0.05%。
作为优选方案,由下列最优配比原料制成:甘蔗原醋15%、鲜甘蔗汁40%、蔗糖2%、柠檬酸0.14%、DL-苹果酸0.05%。
(三)有益效果
与现有技术相比,本发明的甘蔗果醋饮料,兼具水果和食醋的营养保健功能,是集营养、保健、食疗等功能为一体的新型饮品,以甘蔗汁为酿醋原料生产果醋,不仅可以节约粮食,提高甘蔗附加值,而且可以开发风味独特的醋品,并提高醋品的保健功能。

一种甘蔗果醋饮料,由以下重量百分比的原料制成:甘蔗原醋10%~20%,鲜甘蔗汁40%~50%,蔗糖1%~2%,柠檬酸0.1%~0.2%,DL-苹果酸0.01%~0.05%。
