本发明公开了一种蘑菇的预冷工艺,属于蘑菇冷藏技术领域,将蘑菇整齐摆放后,在其表面均匀喷晒3.5‑4.5%的水,同时将含量为0.1%~0.5%的氮气放入真空室,进行真空冷却处理,当蘑菇温度最低处达到2℃,取出,解决现有的大批量蘑菇冷藏保鲜的效率较低的问题。

技术领域
本发明涉及蘑菇冷藏领域,具体而言,涉及一种蘑菇的预冷工艺。
背景技术
目前我国对蘑菇的需求量不断增大,对其鲜度和质量的要求也越来越高,因此采用高新技术使蘑菇的采后处理技术再上一个新台阶已迫在眉睫传统的用化学物质(如保鲜剂杀菌剂)进行采后处理的方法正在被抛弃,因为这种做法已被国际市场所拒绝。真空预冷技术在我国已有应用,但尚需进一步完善与扩大应用范围。
发明内容
本发明的目的在于提供一种蘑菇的预冷工艺以达到提高冷却的速度,减少干耗,延长了货架期的目的,解决现有的大批量蘑菇冷藏保鲜的效率较低的问题。
为实现本发明目的,采用的技术方案为:一种蘑菇的预冷工艺,其特征在于:将蘑菇整齐摆放后,在其表面均匀喷晒3.5-4.5%的水,同时将含量为0.1%~0.5%的氮气放入真空室,进行真空冷却处理,当蘑菇温度最低处达到2℃,取出。
进一步地,在蘑菇的茎和中心处插有温度传感器。
进一步地,真空冷却处理过程中,真空冷却机的真空室压力应设为450Pa~550Pa。
采用本发明具有如下优点:
本发明的主要优点是,提高冷却的速度,减少干耗,延长了蘑菇的货架期,尤其适用于大批量蘑菇冷藏保鲜,氮气的加入有利于真空室内部的温度进行快速下降,而且氮气属于惰性气体与蘑菇之间不会发生化学反应,从而保证了蘑菇冷藏的可靠性。
具体实施方式
下面通过具体的实施例对本发明做进一步的详细描述。
上述的技术方案提供的一种蘑菇的预冷工艺,其特征在于:将蘑菇整齐摆放后,在其表面均匀喷晒3.5-4.5%的水,同时将含量为0.1%~0.5%的氮气放入真空室,进行真空冷却处理,当蘑菇温度最低处达到2℃,取出。
在蘑菇的茎和中心处插有温度传感器;真空冷却处理过程中,真空冷却机的真空室压力应设为450Pa~550Pa。
作为优选的,将蘑菇整齐摆放后,在其表面均匀喷晒4%的水,同时将含量为0.3%的氮气放入真空室,进行真空冷却处理,当蘑菇温度最低处达到2℃,加入氮气后,可实现蘑菇在1分钟内温度急剧下降,从而实现蘑菇的冷却,取出;在蘑菇的茎和中心处插有温度传感器,温度传感器将蘑菇的温度进行反馈传递;真空冷却处理过程中,真空冷却机的真空室压力具体设为500Pa。

2.根据权利要求1所述的,蘑菇的预冷工艺,其特征在于,在蘑菇的茎和中心处插有温度传感器。
3.根据权利要求1所述的,蘑菇的预冷工艺,其特征在于,真空冷却处理过程中,真空冷却机的真空室压力应设为450Pa~550Pa。
