Abstract

本发明公开了一种动物油脂的生产工艺,该生产工艺包括(1)选料、(2)真空熔炼、(3)物理精炼、(4)计量灌装、(5)冷却包装等工艺步骤。本发明熬油效率高,油脂品质好,环境污染低。

一种动物油脂的生产工艺
技术领域
本发明涉及油料加工领域,具体涉及一种动物油脂的生产工艺。
背景技术
传统的动物油脂的生产工艺大多存在以下问题:
1.原料不粉碎或粉碎均匀度不够,熬油生熟不均,出油率低,油渣结焦,出油率低,油品差;
2.敞口容器熬炼,油烟直接排入大气,牛油脂香气损失大,环境污染大。与空气直接接触,部分油脂氧化,产品品质下降;
3.常压熬炼,熬油效率低,出油率低;
4.熬油过程中不搅拌或搅拌不彻底,熬油效率低,油渣易结焦,熬油效率低,油品差。
发明内容
鉴于上述不足之处,本发明的目的在于提供一种熬油效率高,油脂品质好,环境污染低的全自动动物油脂的生产工艺。
为了达到上述目的,本发明采用了以下制备工艺:
(1)选料:选取温度-18℃至-21℃度的冰鲜动物脂,将其粉碎成4-6cm的方块;
(2)真空熔炼:将粉碎后的冰鲜动物脂在180℃至220℃,压力-0.08Mpa的条件下熔炼2至3小时,得火炼油、油渣以及尾气;
(3)物理精炼:将火炼油进行物理精炼;得到酸价≤2.5(KOH)mg/g,过氧化值≤0.2g/100g,水分≤0.5g/100g,色泽浅黄,香味纯正的动物油脂;
(4)计量灌装:在油温60℃时进行灌装;
(5)冷却包装:在温度10℃至20℃,组织凝结彻底,手感有硬度的条件下进行包装,得动物油脂成品。
所述尾气采用喷淋二次吸收工艺处理,具体为:用真空泵将全部尾气抽入喷淋塔内,底部入水初步吸收后,顶部喷淋对尾气进行再次吸收,处理的尾气还要输送到二级吸收罐进行再次入水吸收,尾气中的轻组分、油烟气充分完全吸收入水,然后将此水经污水处理站处理,达标后排放。
所述物理精炼包括对火炼油进行脱杂、脱胶、脱水、脱酸、脱色、脱臭等处理。
所述动物脂为牛脂。
本发明具有以下有益效果:
1.原料均匀粉碎成5cm左右方块,大大提高熬油效率,有效避免熬油生熟不均,熬好的油渣色泽金黄不结焦,油脂品质大大提升。
2.全密封真空熔炼釜熬炼,投料完成后,牛油与空气隔绝,高效提香保香,牛油脂香气无损失,牛油不氧化,产品品质显著提升。熬油过程中的水汽、轻组分,全部通过真空系统抽送至尾气处理系统,经过两次喷淋吸收,进入污水处理站处理,避免油烟污染大气,环境污染大大降低。
3.根据油脂情况,可正压可负压熬炼,大大提高了熬油效率。
4.熬油过程中,以每分钟5转的速度均匀搅拌,使熬油温度均一、生熟均匀,熬油效率高,油渣不结焦,产品品质好。

具体实施方式
下面我们结合图1和具体实施例对本发明作进一步的说明。
动物油脂的生产工艺:
(1)选料:选取温度-18℃至-21℃度的冰鲜牛脂,去除不合格原料后,将其粉碎成5cm左右的方块;
(2)真空熔炼:将粉碎后的冰鲜动物脂在180℃至220℃,压力-0.08Mpa的条件下熔炼2至3小时,得火炼油、油渣以及尾气;尾气采用喷淋二次吸收工艺处理,具体为:用真空泵将全部尾气抽入喷淋塔内,底部入水初步吸收后,顶部喷淋对尾气进行再次吸收,处理的尾气还要输送到二级吸收罐进行再次入水吸收,尾气中的轻组分、油烟气充分完全吸收入水,然后将此水经污水处理站处理,达标后排放;
(3)物理精炼:将火炼油进行物理精炼;具体为:
a.脱杂、脱胶:采用沉降离心机和碟式离心机相结合的方式对火炼油进行脱杂、脱胶,经过沉降离心机分离出油渣,然后经过碟式离心机精滤除去细渣和油品中的水;
b.干燥(进一步脱水):在110℃~115℃,-0.06~-0.08MPa条件下干燥2-3h;
c.脱色:加入火炼油重量1%~2%的食品级活性白土,搅拌吸附30分钟,然后用50微米级过滤板进行板框过滤,过滤压力小于0.4MPa;然后再用50微米级过滤袋进行布袋过滤,过滤压力小于0.2Mpa,得清亮透明,无悬浮、无气泡的牛油;
d.析气:在90~110℃,气压小于150Pa条件下进行析气;
e.脱酸脱臭:在油温250~255℃,气压小于150Pa的条件下进行脱酸脱臭;在高真空环境下,将牛油加热,利用异杂味成分、脂肪酸等沸点低于牛油沸点的特性,将牛油中的脂肪酸、轻组分等蒸发分离;得到酸价≤2.5(KOH)mg/g,过氧化值≤0.2g/100g,水分≤0.5g/100g,色泽浅黄,香味纯正的牛油;
(4)计量灌装:在油温60℃时进行灌装;
(5)冷却包装:在温度10℃至20℃,组织凝结彻底,手感有硬度的条件下进行包装,得牛油成品。

Claims (3)

1.一种动物油脂的生产工艺,其特征在于,该生产工艺包括以下步骤:
(1)选料:选取温度-18℃至-21℃度的冰鲜动物脂,将其粉碎成4-6cm的方块;
(2)真空熔炼:将粉碎后的冰鲜动物脂在180℃至220℃,压力-0.08Mpa的条件下熔炼2至3小时,得火炼油、油渣以及尾气;
(3)物理精炼:将火炼油进行物理精炼;得到酸价≤2.5(KOH)mg/g,过氧化值≤0.2g/100g,水分≤0.5g/100g,色泽浅黄,香味纯正的动物油脂;
(4)计量灌装:在油温60℃时进行灌装;
(5)冷却包装:在温度10℃至20℃,组织凝结彻底,手感有硬度的条件下进行包装,得动物油脂成品。
