本发明属于固体茶饮料及其制备方法技术领域,特别涉及一种含沙棘果粒的即冲式营养茶饮料及其制备方法。
背景技术
沙棘(Hippophae rhamnoides)是胡颓子科沙棘属多年生灌木或小乔木,果实营养丰富,含有多种维生素、脂肪酸、微量元素、亚油素、沙棘黄酮、超氧化物等100多种生物有效成分和人体所需的各种氨基酸。其中维生素C含量极高,每100克果汁中,维生素C含量可达到825-1100毫克,是猕猴桃的5到8倍,山楂的70倍,西红柿的80倍,葡萄的200倍。胡萝卜素含量相当高。沙棘中人体所必需的维生素E(不饱和脂肪酸)达90%以上,用后在人体中能转化为维生素A的含量高于鱼肝油。沙棘中以葡萄糖、果糖为主,砷、钾、钙、钠、镁一应俱全。含有各种对人体有益的微量元素和生物活性物质达190种。
豆浆、花生浆是传统固体饮料的代表,其含有丰富的植物蛋白、磷脂、维生素B1、维生素B2、烟酸、铁、钙等。常喝豆浆、花生浆能防治高血脂、高血压、动脉硬化、贫血,预防老年痴呆症、气喘病,增强抗病能力,具有调节内分泌系统、延缓衰老、美容养颜等功效。
茶叶中含有咖啡碱、单宁、茶多酚、蛋白质、碳水化合物、游离氨基酸、叶绿素、胡萝卜素、芳香油、酶、维生素A原、维生素B、维生素C、维生素E、维生素P以及无机盐、微量元素等,具有止渴、清神、利尿、治咳、祛痰、明目、益思、除烦去腻、驱困轻身、消炎解毒等功效。茶分为六类:红茶、绿茶、乌龙茶、黑茶、白茶、黄茶。与其他五大茶类相比,红茶品性温和,味道醇厚,更适合与天然谷物结合制固体饮料。
通常人们将豆浆、花生浆当早餐食用,红茶则是一种休闲饮品,沙棘果则在保健品行业运用较多,它们具有不同的生理功效。将植物蛋白、红茶粉、沙棘果、果蔬中的营养成分完美结合,研制出一种具备多种复合生理功能的休闲或代餐固体茶饮料,具有良好的市场前景,符合现代人们对健康的需求。
食品饮料加工的技术人员知晓,喷雾干燥过程中,维生素C、维生素A、黄酮等活性成分的损失较大,喷雾干燥后,上述营养成分几乎完全被破坏,而沙棘果中的活性物质含量较高,若采用传统方法制备的固体饮料会大量破坏沙棘中的活性成分,影响其的生理功能。而如果将水分含量较高的果粒放到固体饮料中,会增加固体饮料的水分活度,促进微生物繁殖和其他化学反应,使保质期显著降低,本发明为了解决上述问题,提出了一种全新的含沙棘果粒的即冲式营养茶饮料及其制备方法,为市场提供了一种保质期长,营养丰富的固体饮料品种。
发明内容
本发提供了一种兼备豆类、粗粮、水果、蔬菜的营养与风味为一体的新型固体茶饮料。本发明通过喷雾干燥法制得豆粉和花生粉;利用海藻酸钠、明胶、琼脂包裹沙棘果汁营养成分制得沙棘果粒,成品相比于未经包裹处理的样品,包裹后的沙棘果粒的贮藏时间大大延长了,而且开水冲泡后的营养损失大大减小;同时,本发明以超微山药粉、超微莲子粉取代传统增稠剂;以罗汉果甜甙取代传统甜味剂;添加冻干黑加仑、冻干玉米粒、冻干蓝莓粒,解决了传统鲜果加入到即冲式速溶饮料中引起微生物繁殖、性质不稳定等技术问题,使得饮料口感丰富、色泽鲜艳、增强食欲。产品全配方天然安全,主打营养、健康、美味招牌。
本发明提供了一种全新的含沙棘果粒的即冲式营养茶饮料,所述含沙棘果粒的即冲式营养茶饮料的配方为:豆粉10~50份;花生粉10~25份;沙棘果粒10~15份;速溶红茶粉10~20份;超微山药粉5~6份;超微莲子粉2~4份;冻干黑加仑2~4份;冻干玉米粒1~4份;冻干蓝莓粒2~4份;罗汉果甜甙1~5份。
其中,所述沙棘果粒是将2份沙棘果汁加入3份海藻酸钠、1份明胶、2份琼脂中混合,并通过挤压制粒、熟化、冷冻干燥制备而成。
同时,本发明还提供所述的含沙棘果粒的即冲式营养茶饮料的制备方法,所述含沙棘果粒的即冲式营养茶饮料的制备方法的步骤为:
①按照上述配方称量豆粉、花生粉、速溶红茶粉、超微山药粉、超微莲子粉和罗汉果甜甙,混合均匀,得到混合物Ⅰ。
②按照上述配方称量冻干黑加仑,冻干玉米粒,冻干蓝莓粒和沙棘果粒混合均匀,得到混合物Ⅱ。
③将混合物Ⅰ和混合物Ⅱ充分混合,真空条件下包装,得到含沙棘果粒的即冲式营养茶饮料。
其中,所述沙棘果粒的制备方法为:
①挑选新鲜沙棘果实,用清水清洗,加入蒸馏水榨汁,得到沙棘果汁。
②将新鲜的沙棘果汁置于无菌环境中,静置沉降2h,静置后过滤取滤液。
③取2份过滤后的沙棘果汁,加入到3份海藻酸钠羧、1份明胶、2份琼脂中,充分混合,采用挤压造粒机挤压制粒,并于开水中热煮10min,取出置于冷水中冷却,冷冻干燥制得沙棘果粒。
进一步,所述沙棘果粒的粒径小于10mm。
进一步,所述豆粉的制备方法为:挑选干黄豆,清洗,浸泡8~18h;浸泡结束后,按照料液比1:4-1:5加入蒸馏水,经磨浆机研磨成浆,过滤,通过喷雾干燥将浆液制备成豆粉;所述花生粉的制备方法为:挑选干花生,清洗,浸泡8~18h;浸泡结束后,按照料液比1:4-1:5加入蒸馏水,经磨浆机研磨成浆,过滤,通过喷雾干燥将浆液制备成花生粉。
进一步,所述的冻干黑加仑的制备方法为:取新鲜黑加仑,先清水浸泡5~10min,再用浓度150ppm-200ppm氯水浸泡10-20min,浸泡完成后用纯水清洗,并沥干移入速冻库,在-50~-40℃的条件下速冻,待原料速冻完全后,移入真空干燥室,在-20~0℃的条件下真空干燥2~48h,得到冻干黑加仑。
进一步,所述的冻干玉米粒的制备方法为:取新鲜玉米粒,先清水浸泡5~10min,再用浓度150ppm-200ppm氯水浸泡10-20min,浸泡完成后用纯水清洗,并沥干移入速冻库,在-50~-40℃的条件下速冻,待原料速冻完全后,移入真空干燥室,在-20~0℃的条件下真空干燥2~48h,得到冻干玉米粒。
进一步,所述的冻干蓝莓粒的制备方法为:取新鲜蓝莓,先清水浸泡5~10min,再用浓度150ppm-200ppm氯水浸泡10-20min,浸泡完成后用纯水清洗,并沥干移入速冻库,在-50~-40℃的条件下速冻,待原料速冻完全后,移入真空干燥室,在-20~0℃的条件下真空干燥2~48h,得到冻干蓝莓粒。
进一步,所述速溶红茶粉是以绿茶和乌龙茶为原料,用水提取绿茶,并浓缩得到绿茶/乌龙茶浓缩液,经过黑曲霉通氧发酵后再经过杀菌、增香、喷干制得速溶红茶粉。
有益效果
本发明在制备沙棘果粒时,采用添加海藻酸钠、明胶、琼脂并使用造粒技术,解决了即冲式饮料中添加沙棘果汁的问题,若直接喷雾干燥沙棘果汁,沙棘果汁中的Vc等活性成分会完全被破坏,失去其原有的营养价值。而本发明沙棘果粒制备工艺温度低,采用的原料安全,不仅制成了滑爽润口的沙棘果粒,增加了产品的食用乐趣,而且将沙棘果中的含量极高的维生素C保护起来,进一步,也防止了沙棘果的活性成分在高温水溶液中遇空气而被迅速氧化,同时添加海藻酸钠、明胶、琼脂造粒后的沙棘果汁不仅不会滋生微生物,而且性质稳定,口感润滑,并且能保证传统干粉式饮料的保质期,同时保护沙棘果中的营养活性成分,
本发明添加了天然的罗汉果甜甙取代传统甜味剂,其甜度为蔗糖的300倍,但热量却为零,具有清热润肺镇咳、润肠通便之功效,适合上火、肥胖、便秘、糖尿病等人群食用。
本发明主要是采用植物蛋白与红茶、沙棘果、黑加仑、玉米粒和蓝莓果结合,原料中不仅含有大量的植物蛋白,为人体提供必备的蛋白质,而且本发明区别于传统工艺,不是直接将整颗黄豆或花生粉碎成粉,而是黄豆与花生先水磨制浆再过滤煮熟、喷雾干燥,除去了豆渣和花生渣,降低了豆腥味的同时,使成品口感更细腻、冲泡易溶解,再超微山药粉、超微莲子粉,可以使冲泡出来的茶饮料具有稳定性强,安全性好、健康营养等特点。
本发明创新的结合植物蛋白、粗粮、水果、蔬菜,所开发出的产品色泽美观、口感饱满、滋味丰富、健康便捷。
本发明研制出的含沙棘果粒的即冲式营养茶饮料具有热能低、风味独特、营养均衡、保质期长等特点,所开发的成品直接加开水冲调即可饮用,同时具有果粒的效果,便于携带,方便快捷。
本发明研制出的含沙棘果粒的即冲式营养茶饮料经开水调冲后,饮料奶白伴有茶红色,有着天然谷物的清香和茶的芳香,口感顺滑,味道香甜,开胃健脾;果蔬颗粒色彩斑斓、甜美饱满,沙棘果粒滑爽润口;通过制粒技术,热水冲泡条件下沙棘营养流失大大减小;产品的甜味剂和增稠剂均选自天然植物,健康安全、营养均衡、抗氧化、易吸收;产品开水冲调后用汤勺食用或者装瓶后用吸管饮用,十分方便快捷,可作为日常休闲饮料及代餐饮品。

一种含沙棘果粒的即冲式营养茶饮料,其配方如下:5kg豆粉;1kg花生粉;0.7kg沙棘果粒;1kg速溶红茶粉;0.5kg超微山药粉;0.4kg超微莲子粉;0.2kg冻干黑加仑;0.4kg冻干玉米粒;0.4kg冻干蓝莓粒;0.1kg罗汉果甜甙。
所述含沙棘果粒的即冲式营养茶饮料的制备方法为:
1、准确称量5kg豆粉;1kg花生粉; 1kg速溶红茶粉;0.5kg超微山药粉;0.4kg超微莲子粉,0.1kg罗汉果甜甙,混合均匀,得到混合物Ⅰ。
2、准确称量0.2kg冻干黑加仑;0.4kg冻干玉米粒;0.4kg冻干蓝莓粒;0.5kg沙棘果粒混合均匀,得到混合物Ⅱ。
3、将混合物Ⅰ和混合物Ⅱ充分混合,无菌条件下包装,得到含沙棘果粒的即冲式营养茶饮料。

①挑选新鲜沙棘果实,用清水清洗,加入果实质量1倍质量的蒸馏水,采用榨汁机榨汁,得到沙棘果汁。
②将新鲜的沙棘果汁置于无菌环境中,静置沉降2h,静置后过滤取滤液。
③将过滤后的沙棘果汁0.2kg加入于0.3kg海藻酸钠羧、0.1kg份明胶、0.2kg琼脂中,充分混合,采用挤压造粒机挤压制粒,并于开水中热煮10min,取出置于冷水中冷却,冷冻干燥制得沙棘果粒。
所述豆粉的制备方法为:干黄豆经挑选后,用清水淘洗,并用蒸馏水清洗后浸泡,10~20℃温度下静置12h。浸泡结束后,按照料液比1:4加入蒸馏水,经磨浆机研磨成浆,过滤。通过喷雾干燥将浆液制备成豆粉。

所述的冻干玉米粒的制备方法为:取玉米粒用清水浸泡8min,洗掉原料表面的杂质,再用浓度180ppm氯水,浸泡15min,浸泡完成后用纯水清洗原料,并沥干移入速冻库,在-50℃的条件下速冻,待原料速冻完全后,移入真空干燥室,完全干燥后得到冻干玉米粒。
所述的冻干蓝莓粒的制备方法为:取新鲜蓝莓果用清水浸泡8min,洗掉原料表面的杂质,再用浓度180氯水,浸泡15min,浸泡完成后用纯水清洗原料,并沥干移入速冻库,在-50℃的条件下速冻,待原料速冻完全后,移入真空干燥室,制备出冻干蓝莓粒。
所述速溶红茶粉是以绿茶和乌龙茶为原料,用水提取绿茶,并浓缩得到绿茶/乌龙茶浓缩液,通氧发酵后再经过杀菌、增香、喷干制得速溶红茶粉;
所述的超微山药粉、超微莲子粉均采用传统方法,将原料冷冻干燥、并超微粉碎制得。
本实施例的制备过程中,在沙棘果汁中添加了海藻酸钠、明胶、琼脂,不仅海藻酸钠、明胶、琼脂完全包埋住了沙棘果汁,同时还具有明显的抑菌作用,采用本实施例的方法造粒之后,沙棘果粒的混合体系不仅不会有水分析出,而且能够抑制微生物的生长,具有表面润滑,不会粘连其他粉末的特点,特别适宜添加在粉末状即冲式饮料中。
同时,本实施例还采用冻干的方法解决了黑加仑、玉米粒和蓝莓果在即冲式茶饮料的混合问题,经过加速实验检测,本实施例即冲式营养茶饮料的货架期在1年以上,且能够有效的保存沙棘果中的各种营养成分;其次,本发明采用天然的超微山药粉、超微莲子粉,不仅提高了茶饮料中的营养,而且使得冲开后的茶饮料口味浓郁,有一定的粘稠性,果粒和饮料融合自然;再次,本实施例得到的茶饮料冲调性较好,用60℃以上的热水冲调即开,黑加仑、玉米粒和蓝莓粒的复水效果好;最后,本实施例的即冲式茶饮料具有营养丰富,口味香甜,而且不含高热量的传统糖类,适宜各种人群饮用。
实施例2
一种含沙棘果粒的即冲式营养茶饮料,其配方如下:4kg豆粉;2.5kg花生粉;0.6kg沙棘果粒;1kg速溶红茶粉;0.5超微山药粉;0.2kg超微莲子粉;0.4kg冻干黑加仑;0.1kg冻干玉米粒;0.3kg冻干蓝莓粒;0.2kg罗汉果甜甙。

所述速溶红茶粉是以绿茶和乌龙茶为原料,用水提取绿茶,并浓缩得到绿茶/乌龙茶浓缩液,通氧发酵后再经过杀菌、增香、喷干制得速溶红茶粉;
所述的超微山药粉、超微莲子粉均采用传统方法,将原料冷冻干燥、并超微粉碎制得。
实施例3
一种含沙棘果粒的即冲式营养茶饮料,其配方如下:1kg豆粉;2kg花生粉;0.3kg沙棘果粒;2kg速溶红茶粉;0.6超微山药粉;0.3kg超微莲子粉;0.2kg冻干黑加仑;0.2kg冻干玉米粒;0.2kg冻干蓝莓粒;0.5kg罗汉果甜甙。
所述含沙棘果粒的即冲式营养茶饮料的制备方法为:
1、准确称量1kg豆粉;2kg花生粉;2kg速溶红茶粉;0.6超微山药粉;0.3kg超微莲子粉;0.5kg罗汉果甜甙,混合均匀,得到混合物Ⅰ。
2、准确称量0.2kg冻干黑加仑;0.2kg冻干玉米粒;0.2kg冻干蓝莓粒;0.4kg沙棘果粒混合均匀,得到混合物Ⅱ。
3、将混合物Ⅰ和混合物Ⅱ充分混合,无菌条件下真空包装,得到含沙棘果粒的即冲式营养茶饮料。
其中,所述沙棘果粒的制备方法为:
①挑选新鲜沙棘果实,用清水清洗,加入果实质量1倍质量的蒸馏水,采用榨汁机榨汁,得到沙棘果汁。
②将新鲜的沙棘果汁置于无菌环境中,静置沉降2h,静置后过滤取滤液。
③将过滤后的沙棘果汁0.1kg加入于0.15kg海藻酸钠羧、0.05kg份明胶、0.1kg琼脂中,充分混合,采用挤压造粒机挤压制粒,并于开水中热煮10min,取出置于冷水中冷却,冷冻干燥制得沙棘果粒。
所述豆粉的制备方法为:干黄豆经挑选后,用清水淘洗,并用蒸馏水清洗后浸泡,20℃温度下静置12h。浸泡结束后,按照料液比1:4加入蒸馏水,经磨浆机研磨成浆,过滤。通过喷雾干燥将浆液制备成豆粉。
所述花生粉的制备方法为:干花生经挑选后,,用清水淘洗,并用蒸馏水清洗后浸泡,10~20℃温度下静置8h。浸泡结束后,按照料液比1:4加入蒸馏水,经磨浆机研磨成浆,过滤。通过喷雾干燥将浆液制备成豆粉。
所述的冻干黑加仑的制备方法为:取新鲜黑加仑用清水浸泡5min,洗掉原料表面的杂质,再用浓度150ppm氯水,浸泡10min,浸泡完成后用纯水清洗原料,并沥干移入速冻库,在-40℃的条件下速冻,待原料速冻完全后,移入真空干燥室,制备出冻干黑加仑。

所述速溶红茶粉是以绿茶和乌龙茶为原料,用水提取绿茶,并浓缩得到绿茶/乌龙茶浓缩液,通氧发酵后再经过杀菌、增香、喷干制得速溶红茶粉;
所述的超微山药粉、超微莲子粉均采用传统方法,将原料冷冻干燥、并超微粉碎制得。
Claims (10)
1.一种含沙棘果粒的即冲式营养茶饮料,其特征在于:所述含沙棘果粒的即冲式营养茶饮料的配方为:豆粉10~50份;花生粉10~25份;沙棘果粒10~15份;速溶红茶粉10~20份;超微山药粉5~6份;超微莲子粉2~4份;冻干黑加仑2~4份;冻干玉米粒1~4份;冻干蓝莓粒2~4份;罗汉果甜甙1~5份。
2.根据权利要求1所述的含沙棘果粒的即冲式营养茶饮料,其特征在于:所述沙棘果粒是将沙棘果汁添加于海藻酸钠、明胶、琼脂中,并通过挤压制粒、熟化、冷冻干燥制备而成。
3.根据权利要求2所述的含沙棘果粒的即冲式营养茶饮料,其特征在于:所述沙棘果汁:海藻酸钠:明胶:琼脂(质量比)=2:3:1:2。
4.根据权利要求1所述的含沙棘果粒的即冲式营养茶饮料,其特征在于:所述沙棘果粒的粒径小于10mm。
5.一种权利要求1所述的含沙棘果粒的即冲式营养茶饮料的制备方法,其特征在于:所述含沙棘果粒的即冲式营养茶饮料的制备方法包括如下步骤:
①按照权利要求1所述的配方称量豆粉、花生粉、速溶红茶粉、超微山药粉、超微莲子粉和罗汉果甜甙,混合均匀,得到混合物Ⅰ;
②按照权利要求1所述的配方称量冻干黑加仑,冻干玉米粒,冻干蓝莓粒和沙棘果粒混合均匀,得到混合物Ⅱ;
③将混合物Ⅰ和混合物Ⅱ充分搅拌,混合均匀,无菌条件下真空包装,得到含沙棘果粒的即冲式营养茶饮料;
其中,所述沙棘果粒的制备方法为:
挑选新鲜沙棘果实,用清水清洗,加入蒸馏水榨汁,得到沙棘果汁;
②将新鲜的沙棘果汁置于无菌环境中,静置沉降2h,静置后过滤取滤液;
③取过滤后的沙棘果汁,与海藻酸钠羧、明胶、琼脂充分混合,采用挤压造粒机挤压制粒,并于开水中热煮,取出置于冷水中冷却,冷冻干燥制得沙棘果粒。
6.根据权利要求5所述的含沙棘果粒的即冲式营养茶饮料的制备方法,其特征在于:所述豆粉的制备方法为:挑选干黄豆,清洗,浸泡8~18h;浸泡结束后,按照料液比1:4-1:5加入蒸馏水,经磨浆机研磨成浆,过滤,通过喷雾干燥将浆液制备成豆粉;所述花生粉的制备方法为:挑选干花生,清洗,浸泡8~18h;浸泡结束后,按照料液比1:4-1:5加入蒸馏水,经磨浆机研磨成浆,过滤,通过喷雾干燥将浆液制备成花生粉。
7.根据权利要求5所述的含沙棘果粒的即冲式营养茶饮料的制备方法,其特征在于:所述的冻干黑加仑的制备方法为:取新鲜黑加仑,先清水浸泡5~10min,再用浓度150ppm-200ppm氯水浸泡10-20min,浸泡完成后用纯水清洗,并沥干移入速冻库,在-50~-40℃的条件下速冻,待原料速冻完全后,移入真空干燥室,在-20~0℃的条件下真空干燥2~48h,得到冻干黑加仑。
8.根据权利要求5所述的含沙棘果粒的即冲式营养茶饮料的制备方法,其特征在于:所述的冻干玉米粒的制备方法为:取新鲜玉米粒,先清水浸泡5~10min,再用浓度150ppm-200ppm氯水浸泡10-20min,浸泡完成后用纯水清洗,并沥干移入速冻库,在-50~-40℃的条件下速冻,待原料速冻完全后,移入真空干燥室,在-20~0℃的条件下真空干燥2~48h,得到冻干玉米粒。
9.根据权利要求5所述的含沙棘果粒的即冲式营养茶饮料的制备方法,其特征在于:所述的冻干蓝莓粒的制备方法为:取新鲜蓝莓,先清水浸泡5~10min,再用浓度150ppm-200ppm氯水浸泡10-20min,浸泡完成后用纯水清洗,并沥干移入速冻库,在-50~-40℃的条件下速冻,待原料速冻完全后,移入真空干燥室,在-20~0℃的条件下真空干燥2~48h,得到冻干蓝莓粒。
10.根据权利要求5所述的含沙棘果粒的即冲式营养茶饮料的制备方法,其特征在于:所述速溶红茶粉是以绿茶和乌龙茶为原料,用水提取绿茶,并浓缩得到绿茶/乌龙茶混合浓缩液,经过黑曲霉通氧发酵后再经过杀菌、增香、喷干制得速溶红茶粉。
