Abstract
一种猕猴桃复合营养饼干,该饼干原料质量配比是:猕猴桃果粉20~45、苏麻油2~5、茶多酚0.5~2.0、去壳鸡蛋5~20、食盐或木糖醇3~20、膨化全麦粉或膨化玉米粉60~85。制法是:将猕猴桃果粉、苏麻油、茶多酚、膨化谷物以及饮用水混合揉压成面团,加入食盐或木糖醇然后经常规饼干生产的面团调制、滚轧、造型、低温烘烤、包装工序制得。本发明优点有:①原料营养丰富,具有较好的营养保健功效;②产品中膳食纤维素含量高,能有效改善肠道功能;③产品不含防腐剂但安全性高;④产品含有多种有利于糖尿病辅助治疗的有效成分;⑤食用方便,长期食用产生的保健效果确切。适用于生产猕猴桃复合营养饼干或压缩饼干。

技术领域
本发明涉及食品,进一步而言涉及猕猴桃复合营养饼干。
背景技术
猕猴桃(Actinidia chinensis)为多年生攀缘性落叶藤本果树,又名阳桃、羊桃、奇异果、狐狸桃、藤梨、猴仔梨等,属于被子植物门双子叶植物纲山茶目(Theales)的猕猴桃科(Actinidiaceae)猕猴桃属(Actinidia)。猕猴桃果形一般为椭圆或圆柱状,其果实口感酸甜、营养丰富,除含有猕猴桃碱、蛋白水解酶、单宁、果胶和糖类等有机物,以及钙、钾、硒、锌、锗等微量元素和人体所需17种氨基酸外,还含有丰富的维生素C、维生素E、葡萄酸、果糖、柠檬酸、苹果酸等,有“水果之王”、“ VC之冠”的美称,具有较高的保健价值。
苏麻(Perilla
frutescens),是唇形科紫苏属下一年生草本植物。苏麻既是食品又是药品,在贵州高原特定生态环境条件下长期自然选育与贵州人民长期使用其籽实(俗称引籽)作为香料,进行人工选育而得到适应贵州高原的气候环境栽培的宝贵营养资源。为了确定它与其他唇形科植物,特别是紫苏的亲缘关系,发明人进行了DNA亲缘关系分析并结合形态学鉴定,确定贵州的苏麻是紫苏的原变种,而其他的药用紫苏为野生变种。苏麻籽实中含有30%左右的油脂,其中含有60%左右的ω-3脂肪酸(α-亚麻酸)。根据现代分子营养学与分子食品学的研究成果,开发与利用苏麻资源能够为解决人民膳食结构中微量营养素ω-3脂肪酸的严重缺乏、ω-3脂肪酸与ω-6脂肪酸比例严重失调起到重要作用。因为通过补充ω-3脂肪酸才能有利于脂肪酸的代谢平衡,特别是ω-3脂肪酸的吸收与转化,才能更好地发挥ω-3脂肪酸的营养保健功能。
茶多酚(Tea Polyphenols)是茶叶中多酚类物质的总称,是一种稠环芳香烃,可分为黄烷醇类、羟基-[4]-黄烷醇类、花色苷类、黄酮类、黄酮醇类和酚酸类等。主要为黄烷醇(儿茶素)类,儿茶素占60%~80%。 类物质茶多酚又称茶鞣或茶单宁,是形成茶叶色香味的主要成份之一,也是茶叶中有保健功能的主要成份之一。研究表明,茶多酚等活性物质具解毒和抗辐射作用,能有效地阻止放射性物质侵入骨髓,并可使锶90和钴60迅速排出体外,被健康及医学界誉为“辐射克星”。
近年来,随着经济社会的飞速发展,人们的消费需求已经发生较大的改变,在对食品的选择上更加注重产品的安全性和营养功能。功能性营养食品的大力开发已成为市场的一个发展方向。中国专利数据库中将猕猴桃用于营养饼干的发明专利申请件已有ZL2006100312367号《一种猕猴桃果籽粕饼干的加工方法》、2010105510426号《猕猴桃粗纤维低糖饼干及其制备方法》和2015104932067号《保健猕猴桃饼干及其加工工艺》,这些药物饼干固然有一定保健功能,但保健效果究竟如何尚无从了解,故而人们仍然在探索和研究更新、更有效的营养饼干,为人们健康服务。
发明内容
本发明旨在提供一种猕猴桃复合营养饼干,增加营养饼干品种,达到为人们健康服务的目的。
发明人提供的猕猴桃复合营养饼干的原料质量配比如下:
猕猴桃果粉20~45份、苏麻油2~5份、茶多酚0.5~2.0份、去壳鸡蛋5~20份、食盐或木糖醇3~20份、膨化全麦粉或膨化玉米粉60~85份。
上述原料中,猕猴桃果粉为优质猕猴桃鲜果经精选去皮后通过低温干燥技术制得;苏麻油通过低温压榨法制得;茶多酚为市售产品。
上述原料中,鸡蛋为雉科动物家鸡(Gallus gallus domesticus)的卵,味甘、性温,能滋阴润燥、养血(见江苏新医学院编《中药大辞典》1196页);木糖醇(Xylitol),即1,2,3,4,5-戊五醇,甜度与蔗糖相当,代谢不受胰岛素调节,在人体内代谢完全,可作为糖尿病人的热能源(见百度百科)。
上述原料中的膨化全麦粉或膨化玉米粉为自己加工或市售产品,是饼干常用食材。
本发明的猕猴桃复合营养饼干制备方法是:即把猕猴桃果粉、苏麻油、茶多酚、膨化谷物以及饮用水混合揉压成面团,加入食盐或木糖醇然后经常用饼干生产的面团调制、滚轧、造型、低温烘烤、包装工序制得。
产品经过质量检测符合标准方可投放市场,其中维生素C含量不得低于200mg/100g;ω-3脂肪酸(α-亚麻酸)含量不得低于400mg/100g。
本发明的猕猴桃复合营养饼干是以优质中、低筋小麦面粉、优质猕猴桃果粉、苏麻油、茶多酚等为主要原料生产的,本发明与现有营养饼干相比,具有如下优点: ①原料营养丰富,具有较好的营养保健功效,研究表明:添加与强化的这些微量营养素具有很好的协同互补效应,该复合营养饼干能有效地补充人体容易缺乏的微量营养素;②产品中膳食纤维素含量高,能有效改善肠道功能预防大肠癌,减少胆固醇、脂肪的吸收、控制血糖和清除体内毒素等功效;③产品不含防腐剂但安全性高,茶多酚与猕猴桃中的维生素C能够协同产生抗氧化的作用;④产品的调味剂采用食用盐或木糖醇,不采用蔗糖(甘蔗糖和甜菜糖)、葡萄糖、麦芽糖、果糖等,其中含有多种有利于糖尿病辅助治疗的有效功能成分;⑤本产品含有猕猴桃的有效成分、富含α-亚麻酸、茶多酚等,具有抗癌、抗辐射、防治心血管疾病、降血脂、预防肝脏受损、预防冠状动脉粥样硬化等保健功效,食用方便,长期食用产生的保健效果确切。本发明方法适用于生产猕猴桃复合营养饼干或压缩饼干。
具体实施方式
以下结合具体实施例对本发明作进一步说明。
实施例
1
优质猕猴桃鲜果经精选去皮后通过低温干燥技术制得猕猴桃果粉,低温压榨苏麻制得苏麻油。
按配方,取猕猴桃果粉35kg、苏麻油3kg、茶多酚0.5kg、去壳鸡蛋10kg、食用盐4kg、膨化全麦粉65kg。
取上述物质加水100kg混合,揉压成面团,然后经常规的面团调制、滚轧、造型、≤60℃的温度下烘烤、包装工序制得咸味猕猴桃复合营养饼干100kg。产品经过质量检测符合标准,进入库房。
实施例

优质猕猴桃鲜果经精选去皮后通过低温干燥技术制得猕猴桃果粉,低温压榨苏麻制得苏麻油。
按配方,取猕猴桃果粉35kg、苏麻油3kg、茶多酚0.5kg、去壳鸡蛋10kg、木糖醇10kg、膨化玉米粉65kg。
取上述物质加水100kg混合,揉压成面团,然后经面团调制、滚轧、造型、≤60℃的温度下烘烤、包装等工序制得甜味猕猴桃复合营养饼干。产品经过质量检测符合标准 ,进入库房。

1. 一种猕猴桃复合营养饼干,其特征在于该饼干的原料质量配比如下:
猕猴桃果粉20~45份、苏麻油2~5份、茶多酚0.5~2.0份、去壳鸡蛋5~20份、食盐或木糖醇3~20份、膨化全麦粉或膨化玉米粉60~85份。
2.如权利要求1所述猕猴桃复合营养饼干,其特征在于该饼干的原料中,猕猴桃果粉为优质猕猴桃鲜果经精选去皮后通过低温干燥技术制得;苏麻油通过低温压榨法制得;茶多酚为市售产品;膨化全麦粉或膨化玉米粉也为市售产品。
3.如权利要求1所述猕猴桃复合营养饼干,其特征在于该饼干的制备方法是:即把猕猴桃果粉、苏麻油、茶多酚、膨化谷物以及饮用水混合揉压成面团,加入食盐或木糖醇然后经常规饼干生产的面团调制、滚轧、造型、≤60℃的温度下低温烘烤、包装工序制得。
