Abstract

发明公开了一种可食性包装膜,所述的可食性包装膜按重量百分比计由下列组分制成:变性淀粉65%、半乳聚糖12%、层粘连蛋白13%、甘油4%、紫胶树脂3%、明胶2%、硬质酸钠1%。本发明针对现有技术存在的上述不足,本发明采用的所有材料都是安全无毒的,提高了可食性包装膜的食用安全性;采用变性淀粉、半乳聚糖和层粘连蛋白的组合制作,提高了包装膜的机械性能,并且免去了传统可食用性包装膜生产操作中需要除去有毒副产物的繁琐过程;通过添加紫胶树脂与硬质酸钠来调和膜中粒子的均匀性和稳定性,提高保鲜效果。

一种可食性包装膜
技术领域
本发明涉及包装膜制作领域,特别是涉及一种可食性包装膜。
背景技术
传统的食品包装材料(包括食品袋、食品隔离膜等)大多采用聚丙烯、聚乙烯等化工产品,使用后作为废弃物进入环境,因其不可降解,则不可避免的加剧了“白色污染”,造成了长期的、深层次的生态环境问题。可食性包装,即可以使用的包装,一般由淀粉、蛋白质、多糖、脂肪、复合类物质组成,广泛应用于如保鲜膜、包装薄膜、高点包装、食品包装、糕点包装、调味包装等。然而现有的可食性包装材料机械强度低、安全性能差、制作工艺复杂。
发明内容
本发明的目的是提供一种可食性包装膜,本发明通过以下技术方案实现:
一种可食性包装膜,所述的可食性包装膜按重量百分比计由下列组分制成:变性淀粉65%、半乳聚糖12%、层粘连蛋白13%、甘油4%、紫胶树脂3%、明胶2%、硬质酸钠1%。
进一步地,所述的可食性包装膜的制作方法为:
1)选择玉米将淀粉溶解或分散于去离子水中,在50-70℃下搅拌至其完全糊化,得到浓度为4~8wt%的淀粉溶液;
2)在步骤1)所得淀粉溶液中加入80U/mL纤维酶,将溶液PH值调节到5.0,温度控制到55℃,反应1.5小时后,将淀粉溶液PH值调节到9.5,保持温度不变,添加120U/mL碱性蛋白酶,反应3.5小时,即得变性淀粉溶液;
3)将半乳聚糖与层粘连蛋白加入变性淀粉溶液中,以2000r/min的速度搅拌15-20分钟后,加入甘油、紫胶树脂、明胶、硬质酸钠后,改变搅拌速度为1500r/min,持续搅拌5-7小时,即得成膜溶液;
4)将成膜溶液采用流延法制作出成品膜。
本发明的有益效果是:(1)本发明针对现有技术存在的上述不足,本发明采用的所有材料都是安全无毒的,提高了可食性包装膜的食用安全性;(2)采用变性淀粉、半乳聚糖和层粘连蛋白的组合制作,提高了包装膜的机械性能,并且免去了传统可食用性包装膜生产操作中需要除去有毒副产物的繁琐过程;(3)通过添加紫胶树脂与硬质酸钠来调和膜中粒子的均匀性和稳定性,提高保鲜效果。

实验组1:玉米淀粉制作的可食性包装膜
实验组2:谷物蛋白包装膜;
实验组3:由玉米淀粉、半乳聚糖、层粘连蛋白、甘油、紫胶树脂、明胶、硬质酸钠制作的可食性包装膜;

由表1可知本发明的包装膜断裂伸长率比对照组显著提高,说明本发明的膜机械性能较好,可满足一般食品包装需要,采用一般玉米淀粉比采用变性玉米淀粉制作的膜机械性能明显要差。
在35-40℃的250mL清水中,各个实验组的溶解时间对比:

由表2可知本发明的包装膜在溶解速度上比对照组要快速。

1.一种可食性包装膜,其特征在于,所述的可食性包装膜按重量百分比计由下列组分制成:变性淀粉65%、半乳聚糖12%、层粘连蛋白13%、甘油4%、紫胶树脂3%、明胶2%、硬质酸钠1%。
2.根据权利要求1所述的一种可食性包装膜,其特征在于,所述的可食性包装膜的制作方法为:
1)选择玉米将淀粉溶解或分散于去离子水中,在50-70℃下搅拌至其完全糊化,得到浓度为4~8wt%的淀粉溶液;
2)在步骤1)所得淀粉溶液中加入80U/mL纤维酶,将溶液PH值调节到5.0,温度控制到55℃,反应1.5小时后,将淀粉溶液PH值调节到9.5,保持温度不变,添加120U/mL碱性蛋白酶,反应3.5小时,即得变性淀粉溶液;
