本发明涉及酿酒技术领域,具体涉及一种利用富硒茶叶酿制富硒茶叶酒的方法。
背景技术:
硒是一种人体必需微量元素,具有抗癌、抗衰老和提高人体免疫力、拮抗重金属等生物学特性。食物链中的硒主要来源于土壤。不同地区土壤中硒含量分布不均匀的,依据局部贫硒土壤线索实施和开展针对性的富硒工作,优化食物链中的硒含量水平是农业生产研究的一个重要方向。我国有72%的县(市)低硒或缺硒,黑龙江、内蒙古、甘肃、青海、四川等严重缺硒地区有克山病、大骨节病发生,一些癌症高发区(如江苏启东市)也属低硒区。中国营养学会推荐人均每日硒摄入量为50-200微克。但现在我国成人的日硒摄入量仅有26-32微克,硒营养不良的情况在我国普遍存在。WHO公布的资料表明,全球有40多个国家属于低硒或缺硒地区。因此,开发富硒农产品,通过日常饮食提高硒摄入量,对于提高缺硒地区、缺硒居民群体的健康水平具有重要的意义。
人们日常饮食中的硒总体分为无机硒和有机硒两大类:前者包括硒酸盐、亚硒酸盐等,无机硒对于人和动物来说吸收效果差,毒性风险大,使用不当极易造成硒中毒;后者主要包括硒代氨基酸、硒代蛋白、硒多糖等形态,对人和动物来说吸收效果好,毒性小,更适合补硒的要求。提高人们日常饮食中硒含量,特别是有机硒含量是人体补充硒元素有效途径。因此,富硒技术是科学家们研究开发并付诸实际生产的热点领域。
我国是茶叶和酒类生产大国,目前各地出产的茶酒均以茶叶浸泡在酒精中,再勾兑成茶酒,这样的茶酒虽然也有茶叶的香气,但是营养成分简单,缺少谷物的香气,味道不够香醇浓郁。生产一种以茶叶和谷物为发酵原料,酿造而成的富含营养而且味道醇香的茶酒是非常有必要的的。此项技术不仅能完善和提高目前我国现有的茶酒生产技术。同时,提高茶叶的工业附加值,为茶叶资源的深加工提供有效的解决方案。
发明内容:
本发明所要解决的技术问题在于提供一种方法简单、安全可靠、成本低的利用富硒茶叶酿制富硒茶叶酒的方法。
本发明所要解决的技术问题采用以下的技术方案来实现:
一种利用富硒茶叶酿制富硒茶叶酒的方法,其步骤如下:
1)选择一芽两叶的富硒新鲜的绿茶作为原料,将采摘好的绿茶清洗干净,剔除杂质,烘干至水分含量在30%左右;
2)将风干后的茶叶用蒸馏水浸泡2小时后,入笼蒸40-50分钟,蒸熟,然后冷却至40℃,加入蒸熟后茶叶重量0.8-1%的药酒曲拌匀;
上述药酒曲是由以下重量份数的组分构成:粳米粉50份、雪莲花1份、蝉蛹1份、山豆根2份、西洋参0.8份、黄芪1份、酒药花3份、茶树花2.5份、川芎1份、小米粉5份、蛇床子0.5份、升麻1份、白术1份、赤小豆1份、白芷1份、肉桂1份、丁香1份、月见草1份、海马1份、苦参1份、五味子1份、紫薯粉2份、改性玉米淀粉0.5份、绿茶0.5份、枸杞子1份、绿豆粉1份、香菜籽1份;制备时将上述各组分粉碎,过100筛,混匀,加适量山泉水混合均匀,加入山泉水的量以酒曲用手能够搓成团且不散即可;将酒曲搓成团状放入成型模中,在成型模上覆盖一层稻草,让其在32-34℃下发酵2天;去掉成型模上覆盖的稻草,将成型模放在通风处,让成型模内的团状酒曲自然风干,再取出在太阳下晾晒2-3天即可得;
3)装窖压实,72小时后出酒,即得富硒茶叶酒。
所述酿制的富硒茶叶酒的硒含量为0.1-0.5mg/kg。
本发明的另一个目的是提供一种种植上述富硒茶叶的方法,包括以下方法步骤,
该方法是在茶树施肥过程中施入经发酵的有机硒肥,供茶树吸收硒元素,经施肥后采摘的一芽二叶的茶叶硒含量为0.424μg/g;具体方法如下:
1)有机硒肥的制备过程:按重量份计,桑枝屑100份、富硒酵母20份、麸皮5份、羊粪3份、炭化秸秆5份、亚硒酸钠5份、木糠10份、沼渣3份、香烟灰3份、辣椒叶灰3份、黄沙5份、紫薯秧灰10份、玉米淀粉4份、山药多糖2份、鸡蛋壳2份、松子2份、稻草灰2份;将上述组分搅拌均匀,然后堆放一起用薄膜覆盖上,四周不见肥料为止,温度控制在40℃-60℃,发酵时间为15天即成;
2)施肥时间在9月中旬至10月上旬,按照距离茶树30cm,挖10cm深的浅沟,将发酵后的有机硒肥均匀条施于行间,施后覆土,施肥一次即可,不用浇水;
3)在施肥后的浅沟上面盖一层稻草或杂草,保证肥料在冬季不低于0℃防止冻结;
4)采摘:富硒茶采摘在春季茶叶生长的旺盛期,而不是春茶的初期,采摘时间是春茶发芽后15-20天。
本发明的有益效果是:
1)本发明富硒酒里所含的硒区别于其他富硒酒类直接添加的无机硒或者有机硒,而是通过对茶叶施有机硒肥经过茶树体内转化得到富硒茶叶,其硒的安全性和吸收性更高。
2)本发明所酿制的富硒酒具有一定的保健功能,通过对酒曲的特殊配制,使得本工艺酿制的白酒和米酒能够预防和治疗感冒、缓解头痛、提高人体免疫力的功效。

上述药酒曲是由以下重量份数的组分构成:粳米粉50份、雪莲花1份、蝉蛹1份、山豆根2份、西洋参0.8份、黄芪1份、酒药花3份、茶树花2.5份、川芎1份、小米粉5份、蛇床子0.5份、升麻1份、白术1份、赤小豆1份、白芷1份、肉桂1份、丁香1份、月见草1份、海马1份、苦参1份、五味子1份、紫薯粉2份、改性玉米淀粉0.5份、绿茶0.5份、枸杞子1份、绿豆粉1份、香菜籽1份;制备时将上述各组分粉碎,过100筛,混匀,加适量山泉水混合均匀,加入山泉水的量以酒曲用手能够搓成团且不散即可;将酒曲搓成团状放入成型模中,在成型模上覆盖一层稻草,让其在32-34℃下发酵2天;去掉成型模上覆盖的稻草,将成型模放在通风处,让成型模内的团状酒曲自然风干,再取出在太阳下晾晒2-3天即可得;
3)装窖压实,72小时后出酒,即得富硒茶叶酒。
