背景技术
钙是人体必需的矿物质,99%存在于骨骼和牙齿中,其中1%的钙分布在软组织和细胞外液中,钙不仅构成了人体的骨架,而且对人体的神经-肌肉间的冲动传递、心脏节律的维持细胞膜的完整性体内酸碱平衡、血液凝固等等都起着至关重要的作用。从婴幼儿到青少年、一直到成人,钙在骨骼中输入比输出多,因此形成骨骼生长。成人则输入输出平衡,而中老年人骨骼中输出比输入多,所以骨密度降低,容易导致骨质疏松症。对于准妈妈来说,钙更是一种不可或缺的无机物质。由于胎儿骨组织的生成和发育及母亲生理代谢均需要大量的钙,如果饮食中钙的含量不足或缺乏日照等,都会导致准妈妈血钙下降。因为胎儿所需的钙只有从母体中获得,所以,即使母体缺钙,胎儿仍然要从母体中吸取定量的钙,这就可能导致准妈妈骨骼和牙齿脱钙,引起腰病、腿病、骨头痛、手足抽搐及牙齿脱落等,严重时还会发生骨软化症、骨盆变形,甚至造成难产。对于孕妇来说光靠饮食中的钙是不够的,因而孕妇补钙更是至关重要的。采用单一钙片补钙,其口味较差、营养成分单一且人体对钙的吸收效果也较差;而现今市场上存在各式各样的补钙保健品,其配方虽然不同,但补钙效果都不显著且大都添加各式各样的添加剂成分,具有一定的安全隐患;此外,大多数补钙保健产品中还含有不同剂量的中药成分,俗话说“是药三分毒”,因而不适合孕妇食用。因而市场上急需一种安全温和的适宜孕妇食用的补钙保健品。

针对现有技术中存在的问题,本发明提供了一种适合孕妇食用的保健饮料。该饮料采用纯天然的蓝莓、钙果、红枣味主要原料,配以适量柠檬酸和蜂蜜调配制成一种口感好,补钙效果优异的适合孕妇食用的保健饮料。
本发明还提供了一种适合孕妇食用的保健饮料的制备方法。
本发明采用以下技术方案:
一种适合孕妇食用的保健饮料,其特征在于,它是由以下重量份的原料组成:蓝莓汁30-40%、钙果汁25-30%、红枣汁10-15%、柠檬酸0.3-0.5%、蜂蜜3-5%和余量的水。
优选地,所述的适合孕妇食用的保健饮料是由以下重量份的原料组成:蓝莓汁35%、钙果汁28%、红枣汁13%、柠檬酸0.4%、蜂蜜4%和余量的水。
一种适合孕妇食用的保健饮料的制备方法,它包括以下步骤:
(1)选取无腐烂、无虫害、新鲜的蓝莓,清洗后捞出空干水分;加入3倍于其重量的95℃的水中烫漂10min后,用筛板孔径为0.8mm的打汁机破碎成蓝莓果浆,然后用100目筛过滤得蓝莓汁,备用;
(2)选取新鲜、无霉烂的钙果,清洗后用不锈钢刀除去果核,果肉切碎,用2%~5%氯化钠溶液浸泡果肉30min,捞出后用清水冲洗,清洗后的果肉放入打汁机中并向其中加入4倍量温水打汁,然后用120目筛过滤即得到钙果汁,备用;
(3)选取新鲜,大个的新疆阿克苏红枣,清洗后去核,将果肉浸泡于5倍量的45-60℃温水中2小时后全部倒入打汁机中打汁,然后用120目筛过滤即得红枣汁,备用;
(4)将上述制备的蓝莓汁、钙果汁、红枣汁、柠檬酸按照比例混合后,加入蜂蜜和适量水调配,150目筛进一步精滤;
(5)将精滤后的混合饮料在20-25MPa的高压均质机内均质15-20min,真空脱气2-3min,脱气温度65℃,80℃以上灌装后于100℃灭菌5-10s后冷却,即得成品。
本发明保健饮料配方中:
蓝莓,果实中含有丰富的花青素,而且其所含的花青素、有机锗、有机硒、熊果甙、氨基酸、果酸等特殊营养成分是任何植物都无法比拟的,尤其是由16种生物类黄酮组成的花青素,有比一般植物花青素更优越的生理活性。花青素主要有抗生素作用、抗自由基作用、抗视力退化及抗动脉硬化和血栓形成的作用。据美国、日本、欧洲科学家研究,经常食用蓝莓制品,可明显地增强视力,消除眼睛疲劳;营养皮肤;延缓脑神经衰老;对由糖尿病引起的毛细血管病有治疗作用;增强心脏功能;预防老年痴呆。
钙果为蔷薇科樱桃属果实,学名欧李,是一种高档水果,营养价值很高。每百克鲜果钙铁含量分别达到80毫克和1.5毫克,是苹果的6倍,果实中含有17种氨基酸,总量高达338.3~451.7mg/100g,特别是维生素C、B2和E的含量以及钾、磷、铁、锌、硒和赖氨酸的含量均高于现有常见果树品种,是儿童和老人孕妇的高级保健水果。
红枣,又名大枣。特点是维生素含量非常高,有“天然维生素丸”的美誉。红枣味甘性温、归脾胃经,有补中益气、养血安神、缓和药性的功能;而现代的药理学则发现,红枣含有蛋白质、脂肪、醣类、有机酸、维生素A、维生素C、微量钙多种。
本发明的有益效果是:本发明采用新鲜的蓝莓、钙果及红枣为原材料,直接破碎,得到的滤液再添加适量柠檬酸和蜂蜜调配制成的保健饮料,既能充分保留原果蔬的营养成分,又形成了新的风味、口感,克服单一组分口感较差的问题,满足了现代人的多元化口味。同时产品中不添加任何防腐剂、着色剂等,各种原料中的营养成分可以得到最大限度的保留。虽然本发明配方中单一组分均具有一定的保健作用,但经本发明合理搭配使用后各组分协同作用,其保健效果优于任何单一组分或者所有组分的效果总和,尤其对缺钙的孕妇具有优异的补钙效果,同时还具有增强孕妇自身免疫力,补血益气等功效,是一种适宜孕妇食用的最佳保健饮品。
具体实施方式
下面结合具体实施例对本发明做进一步的详细说明。
实施例1
一种适合孕妇食用的保健饮料,它是由以下重量份的原料组成:蓝莓汁30%、钙果汁25%、红枣汁10%、柠檬酸0.3%、蜂蜜3%和余量的水。
上述保健饮料是通过下述方法制备得到的:
(1)选取无腐烂、无虫害、新鲜的蓝莓,清洗后捞出空干水分;加入3倍于其重量的95℃的水中烫漂10min后,用筛板孔径为0.8mm的打汁机破碎成蓝莓果浆,然后用100目筛过滤得蓝莓汁,备用;
(2)选取新鲜、无霉烂的钙果,清洗后用不锈钢刀除去果核,果肉切碎,用2%氯化钠溶液浸泡果肉30min,捞出后用清水冲洗,清洗后的果肉放入打汁机中并向其中加入4倍量温水打汁,然后用120目筛过滤即得到钙果汁,备用;
(3)选取新鲜,大个的新疆阿克苏红枣,清洗后去核,将果肉浸泡于5倍量的45℃温水中2小时后全部倒入打汁机中打汁,然后用120目筛过滤即得红枣汁,备用;
(4)将上述制备的蓝莓汁、钙果汁、红枣汁、柠檬酸按照比例混合后,加入蜂蜜和适量水调配,150目筛进一步精滤;
(5)将精滤后的混合饮料在20MPa的高压均质机内均质15min,真空脱气2-3min,脱气温度65℃,80℃以上灌装后于100℃灭菌5-10s后冷却,即得成品。
实施例2
一种适合孕妇食用的保健饮料,它是由以下重量份的原料组成:蓝莓汁35%、钙果汁28%、红枣汁13%、柠檬酸0.4%、蜂蜜4%和余量的水。
上述保健饮料是通过下述方法制备得到的:

(3)选取新鲜,大个的新疆阿克苏红枣,清洗后去核,将果肉浸泡于5倍量的50℃温水中2小时后全部倒入打汁机中打汁,然后用120目筛过滤即得红枣汁,备用;
(4)将上述制备的蓝莓汁、钙果汁、红枣汁、柠檬酸按照比例混合后,加入蜂蜜和适量水调配,150目筛进一步精滤;
(5)将精滤后的混合饮料在25MPa的高压均质机内均质20min,真空脱气2-3min,脱气温度65℃,80℃以上灌装后于100℃灭菌5-10s后冷却,即得成品。
实施例3
一种适合孕妇食用的保健饮料,它是由以下重量份的原料组成:蓝莓汁40%、钙果汁30%、红枣汁15%、柠檬酸0.5%、蜂蜜5%和余量的水。
上述保健饮料是通过下述方法制备得到的:
(1)选取无腐烂、无虫害、新鲜的蓝莓,清洗后捞出空干水分;加入3倍于其重量的95℃的水中烫漂10min后,用筛板孔径为0.8mm的打汁机破碎成蓝莓果浆,然后用100目筛过滤得蓝莓汁,备用;
(2)选取新鲜、无霉烂的钙果,清洗后用不锈钢刀除去果核,果肉切碎,用5%氯化钠溶液浸泡果肉30min,捞出后用清水冲洗,清洗后的果肉放入打汁机中并向其中加入4倍量温水打汁,然后用120目筛过滤即得到钙果汁,备用;
(3)选取新鲜,大个的新疆阿克苏红枣,清洗后去核,将果肉浸泡于5倍量的60℃温水中2小时后全部倒入打汁机中打汁,然后用120目筛过滤即得红枣汁,备用;
(4)将上述制备的蓝莓汁、钙果汁、红枣汁、柠檬酸按照比例混合后,加入蜂蜜和适量水调配,150目筛进一步精滤;
(5)将精滤后的混合饮料在24MPa的高压均质机内均质18min,真空脱气2-3min,脱气温度65℃,80℃以上灌装后于100℃灭菌5-10s后冷却,即得成品。
实施例4
将上述实施例1-3所制备的保健饮料进行感官质量评价。评价打分标准如表1:
由经过筛选和训练的30人专业感官评价员组成评价小组对其整体的风味、酸度、甜度进行评价打分,该结果中配方1-3分别为上述实施例1-3,评价得分结果见表2。

从表2中可以看出,配方1-3的整体风味得分均在4.6分以上,其风味口感较好,是孕妇非常容易接受的饮品。
实施例5
采用雌性大鼠80只,体重为220-240g,随机均分为8组,分别为切除卵巢导致的骨质疏松模型组、碳酸钙组、实施例1组、实施例2组、实施例3组、蓝莓汁组、钙果汁组以及红枣汁组。每只大鼠分别用1%戊巴比妥钠(0.4ml/100g)腹腔注射麻醉后,沿下腹部正中线打开腹腔,完整摘除双侧卵巢,彻底止血后分2层缝合腹腔,术后5天拆线。拆线后所有动物在同样的饲养环境下按照不同方法喂养3个月:
实施例1组:基础饲料+实施例1保健饮料50ml/kg/d;
实施例2组:基础饲料+实施例2保健饮料50ml/kg/d;
实施例3组:基础饲料+实施例3保健饮料50ml/kg/d;
蓝莓汁组:基础饲料+本发明方法制备的蓝莓汁50ml/kg/d;
钙果汁组:基础饲料+本发明方法制备的钙果汁50ml/kg/d;
红枣汁组:基础饲料+本发明方法制备的红枣汁50ml/kg/d;
碳酸钙组:基础饲料+碳酸钙2g/kg/d;
骨质疏松模型对照组:基础饲料+蒸馏水50ml/kg/d。
以上8组动物实验结束时断头处死动物,取股骨测定骨密度。实验结果见下表3。
注:*与模型组比较,P<0.05;**与模型组比较,P<0.01;△与碳酸钙组比较,P<0.05。
从上述实验结果可以看出,实施例1-3组的骨钙、骨矿物质和骨密度与模型对照组相比有极显著性差异(P<0.01),与碳酸钙组比较有差异(P<0.05),这说明本发明实施例1-3制备的保健饮料具有比一般钙片更好的补钙效果;而蓝莓汁组、红枣汁组与模型对照组相比无显著性差异;钙果汁组、碳酸钙组与模型对照组相比有差异,这说明实施例1-3制备的保健饮料与单一钙果和碳酸钙相比其补钙效果更优,这可能是由于蓝莓和红枣组分中含有的多种营养成分与钙果搭配后促进了机体对钙的吸收,各组分协同增效,因而对骨质疏松具有更明显的改善作用,所以本发明制备的产品是一种安全有效的保健饮料。
实施例6
本发明保健品人体试食实验
实验对象:选取150名具有明显缺钙症状的孕中期妇女,年龄在28-35岁,其主要症状表现为抽筋乏力、关节疼、头晕、水肿、产前高血压综合征等;随机均分为3组,各组年龄比较无显著性差异(p>0.05)。
实验方法:对1-3组受试者分别每日饮用实施例1-3制备的保健饮料,每日于早晚饭后1小时饮用100ml,实验连续30天后观察结果。
实验结果:见表4。
痊愈:抽筋乏力、关节疼、头晕、水肿、产前高血压综合征等临床常见症状基本消失不见;
有效:抽筋乏力、关节疼、头晕、水肿、产前高血压综合征等临床常见症状消失大半或部分缓解;
无效:抽筋乏力、关节疼、头晕、水肿、产前高血压综合征等临床常见症状无任何明显变化。

从上述实验结果可以看出,本发明实施例制备的保健饮料对孕妇具有非常好的补钙效果,其总有效率达98%以上,且由于本发明是采用纯天然的蓝莓、钙果、红枣味主要原料,配以适量柠檬酸和蜂蜜调配制成的,不添加任何人工添加剂,安全且口感甚好,是孕妇补钙的首选产品。此外,本发明产品还具有增强孕妇自身免疫力,补血益气等功效,是一种适宜孕妇食用的最佳保健饮品。

1.一种适合孕妇食用的保健饮料,其特征在于,它是由以下重量份的原料组成:蓝莓汁30-40%、钙果汁25-30%、红枣汁10-15%、柠檬酸0.3-0.5%、蜂蜜3-5%和余量的水。
