Abstract

此发明为食品制造加工工具，此产品虽然提供给食品加工点心铺与水煎包子铺，但此发明的应用应属于锅厂与小型食品用具加工厂。
此发明在我国可以普遍使用，特别是我国北方地区，因其面食比较普遍，小吃铺、包子店与家用均可以，用铁板焊接(或用铝板焊接)甚为方便，造价也不高。

Description

本发明适用于水煎包子加工。
其构造见附图，图1是水煎包子免焦锅的主视图，图2是此锅的俯视图。水煎包子免焦锅是平底铁锅，底部用厚度为8mm的铁板，锅帮用3mm的两层铁板焊制而成，中间可以存放水，内侧上部同等高度钻定数量的小孔，外侧连通一小管子，上接水阀门和漏斗（也可不接水阀门），其漏斗高度不得超过内侧小孔高度，如果有能在内侧小孔处加水的工具（如细嘴鼠形壶），则在外部可不接水管与漏斗。
操作时，将锅帮空腔中注上水，直到小孔不溢水为止，然后加火煎油，油冒烟后，放上生包子，洒上适当的水，盖上锅盖，由于锅内侧上部的小孔在煎包子过程中水蒸汽不断逸出，而锅盖温度低，水蒸汽遇到锅盖就凝结成水滴，逐步补充锅内的水，底部温度越高，水汽则越多，补充的水滴也随之增加，因而所煎出的包子，底部无焦糊状，色香味俱佳。
锅盖用一般的铁皮锅盖、铝锅盖等金属锅盖均可，为了达到更好的效果，我们也可采用特殊的双层锅盖。图3是锅盖的主视图，图4是锅盖的俯视图。加水口在锅盖提手上实现，内中加上冷水。实际上，采用金属锅盖，需要在锅内得到较多的水滴时，则可在锅上放一块凉水浸透的湿毛巾就可以达到此目的。

Claims (3)

  1. 本发明专利适用于水煎包子店的大锅，也适用于家用的加工水煎包子或馅饼的小锅，其它用途尚有待于开发。
    1、此水煎包子免焦锅，其特征在于它是一个单层底、双层空腔帮之平底锅。
  2. 2、根据权利要求1.的免焦锅，其特征在于它的底部受热，其双帮空腔中的液体同时受热。
  3. 3、根据权利要求1.的免焦锅，其特征在于它有一双层帮的空腔，其内帮上部等处有一排小孔，双层帮的空腔中装有液体，在应用时，小孔中蒸汽不断逸出，遇到低温的锅盖，凝结成液体，以达到免焦的目的。
