Abstract

此发明为食品制造加工工具,此产品虽然提供给食品加工点心铺与水煎包子铺,但此发明的应用应属于锅厂与小型食品用具加工厂。
此发明在我国可以普遍使用,特别是我国北方地区,因其面食比较普遍,小吃铺、包子店与家用均可以,用铁板焊接(或用铝板焊接)甚为方便,造价也不高。

Description

本发明适用于水煎包子加工。
其构造见附图,图1是水煎包子免焦锅的主视图,图2是此锅的俯视图。水煎包子免焦锅是平底铁锅,底部用厚度为8mm的铁板,锅帮用3mm的两层铁板焊制而成,中间可以存放水,内侧上部同等高度钻定数量的小孔,外侧连通一小管子,上接水阀门和漏斗(也可不接水阀门),其漏斗高度不得超过内侧小孔高度,如果有能在内侧小孔处加水的工具(如细嘴鼠形壶),则在外部可不接水管与漏斗。
操作时,将锅帮空腔中注上水,直到小孔不溢水为止,然后加火煎油,油冒烟后,放上生包子,洒上适当的水,盖上锅盖,由于锅内侧上部的小孔在煎包子过程中水蒸汽不断逸出,而锅盖温度低,水蒸汽遇到锅盖就凝结成水滴,逐步补充锅内的水,底部温度越高,水汽则越多,补充的水滴也随之增加,因而所煎出的包子,底部无焦糊状,色香味俱佳。
锅盖用一般的铁皮锅盖、铝锅盖等金属锅盖均可,为了达到更好的效果,我们也可采用特殊的双层锅盖。图3是锅盖的主视图,图4是锅盖的俯视图。加水口在锅盖提手上实现,内中加上冷水。实际上,采用金属锅盖,需要在锅内得到较多的水滴时,则可在锅上放一块凉水浸透的湿毛巾就可以达到此目的。

  1. 本发明专利适用于水煎包子店的大锅,也适用于家用的加工水煎包子或馅饼的小锅,其它用途尚有待于开发。
    1、此水煎包子免焦锅,其特征在于它是一个单层底、双层空腔帮之平底锅。
  2. 2、根据权利要求1.的免焦锅,其特征在于它的底部受热,其双帮空腔中的液体同时受热。
  3. 3、根据权利要求1.的免焦锅,其特征在于它有一双层帮的空腔,其内帮上部等处有一排小孔,双层帮的空腔中装有液体,在应用时,小孔中蒸汽不断逸出,遇到低温的锅盖,凝结成液体,以达到免焦的目的。
