背景技术
维生素C又称抗坏血酸,是一种水溶性维生素,具有抗坏血酸病的功能,是维持人体正常生理代谢不可缺少的物质,有重要的生理功能,在人体内参与氨基酸和神经传递、胶原蛋白的合成,它参与体内羟化反应,为形成骨骼、牙齿、结缔组织及非上皮组织细胞间粘物所必需,可维持牙齿、骨骼、血管的正常功能,增加对疾病的抵抗能力,它还具有降低毛细血管的通透性、刺激凝血的功能和增加对感染的抵抗作用等。据有关资料报道维生素C在各类人群中有不同程度的缺乏,当身体出现一些小毛病时,就应该及时补充适量的维生素和矿物质来改善营养缺乏症,尤其是中老年应较为重视。维生素C对许多疾病都有预防作用,体内维生素C高的人,在污染环境工作的人几乎不会再吸收铅、镉、铬等有害元素;抽烟的人多吃含维生素C的食物有助提高细胞的抵抗力,保持血管的弹性,消除体内的尼古丁;从事剧烈运动和高强度劳动的人,这些人因流汗过多会损失大量维生素C,应及时予以补充;维生素C有抗氧化作用,补充维生素C可抑制色素斑的生成,促进其消退;服用阿司匹林、安眠药、抗癌变药、四环素、钙制品、避孕药、降压药等,都会使人体维生素C减少,并可引起其它不良反应,应及时补充维生素C。
维生素C是临床基本常用药物,广泛应用于多种疾病预防和治疗上,由于维生素C水溶液PH值接近2左右,因此,酸性较大,口服使用对口腔、咽喉食道以及胃粘膜刺激较大,不宜长期服用,也不适合与酸性药物同时服用,在使用上受到一定限制。而维生素C钠是维生素C的钠盐,水溶液PH值接近中性,它的作用与抗坏血酸相同,但由于是钠盐,所以性能更稳定,同时不再有维生素C的强酸性,可以长期与多种药物同时服用,更优于维生素C。维生素C钠属于国内外广泛使用的维生素C强化剂,已逐步替代维生素C使用。
核桃仁含粗蛋白22.18%,其中可溶性蛋白的组成以谷氨酸为主,其次为精氨酸和核桃仁天冬氨酸;粗脂类64.23%,其中中性脂类占93.05%,中性脂类中三酰甘油82.05%、甾醇脂3.86%、游离脂肪酸4.80%;总脂和中性脂类中脂肪酸组成主要为亚酸64.48%-69.95%和油酸13.89%-15.36%;三酰甘油所含脂肪酸主要为亚麻酸69.98%;甾醇酯非皂化部分主要为β-谷甾醇,并有少量的菜油甾醇,豆甾醇,燕麦甾-5-烯醇,豆甾-7-稀醇;糖类13%;多种游离的必需氨基酸;异亮氨酸,亮氨酸,色氨酸,苯丙氨酸,缬氨酸,苏氨酸及赖氨酸等,其含量为总氨基酸的47.50%。核桃味甘、性温,入肾、肺、大肠经,可补肾、固精强腰、温肺定喘、润肠通便,主治:肾虚喘嗽、腰痛。常食核桃可增强体质,润肌,补脑,黑须发。核桃使人开胃,通润血脉,骨肉细腻,补气养血,润燥化痰,益命门,利三焦,温肺润肠,治虚寒喘嗽、腰腿重痛、心腹疝痛、血痢肠风,散肿痛,发痘疮,制铜毒。核桃中含有一种减少动脉硬化、让动脉保持柔软的成分,还含有抗氧化剂和α-亚麻酸,能保护动脉,有助于身体健康。
蜂蜜,主要成分是果糖(分子式为C6H12O6)、水,还有少量铜铁钙等微量元素和无机盐,是蜜蜂在蜂窝中酿成的糖类物质的精制品,性味甘、平,入肺、脾、大肠经。有降血压、护肝、缓解疼痛等作用蜂蜜不仅是美味的营养品,而且也是治疗多种疾病,强健身体和延年益寿的药品。蜂蜜对于身体需要高热量和易于消化的食物的儿童特别有益,它能促进食欲,提高新陈代谢,使人精神健爽和体力充沛,提高机体对疾病的抵抗力。
异麦芽糖醇,是近年来国际上新兴的一种功能性糖醇,是蔗糖、淀粉糖及其它糖醇的优良替代品。甜度是蔗糖的50~60%,具有低吸湿性、高稳定性、高耐受性、低热量、甜味纯正等特点。产品安全性极高,美国FDA给予公认安全地位,对其每日摄入量不作限制。从营养学的角度来讲异麦芽酮糖醇是一种碳水化合物,而从生理上的角度来讲,它在人体内不易被分解吸收,也不为绝大多数微生物分解利用。异麦芽酮糖醇具有如蔗糖一般的纯正味道,无不良后味及异味,可与强力甜味剂发生协同增效作用并掩盖后者的不良后味及异味,低吸湿性、高稳定性,低能量、非龋齿性等。
目前,国内外市场也有维生素C钠制剂上市,主要是胶囊剂、咀嚼剂、含片等剂型,品种较少,且基本都是加入香精、色素等添加剂,不适合长期服用,并且它的成分较单一,保健功能较差。现急需开发一种食用方便,营养价值高,易贮存和服用,且可以长期服用产品。通过检索国内外现有技术发现,目前还没有以核桃仁和维生素C钠、蜂蜜、异麦芽糖醇为主料制备含片的报道。基于以上理论和存在不足,本专利在解决诸多技术问题的基础上开发出含核桃的含片,复合了维生素C钠及核桃中多种营养成分,营养价值高,口感纯正,安全无毒副作用,加工工艺相对简单,容易实现产业化生产。
发明内容
本发明内容是提供一种效果好、服用方便、口味纯正的含核桃的含片,以及制备该含片的制备方法。本产品具有抗坏血酸病、抗氧化、抗肿瘤、降低脂质过氧化、提高机体免疫力、健脑、延年益寿等功效,可用于预防和辅助治疗坏血病以及各种急慢性传染疾病或其他疾病以增强机体抵抗力,病后恢复期创伤愈合期及过敏性疾病的保健治疗。
本发明通过筛选科学处方组成和独特的制备工艺克服了相关技术难点,按本方法制备的产品,保留了原核桃的有效成分、风味,且提高产品药用和保健价值,并且维生素C钠PH值接近中性,其可减轻酸性刺激,易于产品口含。本发明处方中主要原料维生素C钠具有较强临床功能,它可用于各种原因造成维生素C缺乏症预防,也可用于维生素C缺乏临床病症的治疗,同时由于其PH接近中性,选用其制成含片口感更好,刺激性更小。核桃气味醇香,在处方中无需加色素和香精,增强产品安全性。同时本发明制备工艺简便,适用于工业化生产,并且产品服用方便安全、效果又好,原汁原味,适合各类人群长期服用。
本发明技术方案为:
一种含核桃的含片,原料由以下重量份的组份组成:核桃仁100-300份、维生素C钠50-150份、异麦芽糖醇100-250份、阿拉伯胶150-350份、蜂蜜100-250份、微粉硅胶1-5份。
以上所述含核桃的含片,原料优选由以下重量份的组份组成:核桃仁150份、维生素C钠100份、异麦芽糖醇150份、阿拉伯胶250份、蜂蜜200份、微粉硅胶3份。
以上所述含核桃的含片的制备方法,包括以下步骤:
1.按以下重量份称取原料:核桃仁100-300份、维生素C钠50-150份、异麦芽糖醇100-250份、阿拉伯胶150-350份、蜂蜜100-250份、微粉硅胶1-5份;
2.取核桃仁,加入异麦芽糖醇,混匀,粉碎,过200-300目筛,得复合核桃粉;
3.取上述复合核桃粉,加入阿拉伯胶,混合均匀,加入蜂蜜制软材,制粒,干燥,整粒,颗粒加入维生素C钠、微粉硅胶,混合均匀,压片,即得。
以上所述含核桃的含片的制备方法,所述步骤2中的粉碎方法优选为:采用低温超微粉碎法,粉碎物料中加入异麦芽糖醇混合均匀后,在温度-40~-10℃放置冷冻24-48小时。
以上所述含核桃的含片的制备方法,所述步骤3干燥步骤优选采用真空干燥方法,干燥温度为40℃-60℃。
本发明配方中根据维生素C钠的特性科学合理筛选辅料和配比,为了解决制剂成型和产品口感等难题,在制剂成型中选用阿拉伯胶和蜂蜜作为组合粘合剂,它们不仅具有较强的粘着力和柔软的弹性,制成产品色泽好,外观美,还具有增强产品营养功能。阿拉伯胶是一种天然植物水溶胶,它基本不产生热量,是良好的水溶性膳食纤维,在医学上阿拉伯胶还具有降低血液中胆固醇的功能;而为了改善产品的口感及外观,保持产品润滑性和核桃香气,采用具有良好的保湿性能的蜂蜜,它可使产品保持一定的水分,防止干燥,且由于它是不挥发的多元醇,所以还有保持产品特有香气的功能,增强产品的口感和香气效果。同时,为了改善口味,本处方中采用添加适量的异麦芽糖醇甜味剂增强口感且促进生津的效果,有利于糖尿病人服用,提高产品功能。
为了达到上述效果,发明人做了大量的实验,部分研究情况如下:
一、粘合剂筛选
为了解决制剂成型问题,试用了糊精、羧甲基纤维素钠、明胶、浆液状葡萄糖、聚乙烯吡咯烷酮等粘合剂,但因为口感或制粒及成型效果不好而弃用,最后确定在制剂成型中选用阿拉伯胶和蜂蜜作为组合粘合剂,见表1。

上述结果表明,配方1、7效果差,不能用于生产,配方2-6成型效果较好,可用于大生产,其中配方4效果最好,口感佳。
二、甜味剂筛选
试验中试用了异麦芽酮糖、甜菊苷、糖精钠、木糖醇、麦芽糖醇等,见表2。

上述试验结果表明,选用异麦芽糖醇做甜味剂口感最好,温和细腻。且有一定的粘合剂作用,吸湿性非常低,利于贮存。
总之,本发明通过大量试验,优选适合维生素C钠的特性原辅料组成,处方组成科学,工艺独特,无需加色素、香精等化工原料,产品安全性能高。按本处方制作的含片,口感好,服用方便,保留核桃原汁原味且增强了维生素C钠功能,是一种良好的维生素补充剂和保健品。同时,本发明的处方组成简便、科学,产品生物利用度高,效果好,适合各类人群长期服用。

下面结合具体实施例对本发明作进一步描述,但不限制本发明的保护范围和应用范围:
一、含核桃的含片的制备方法
实施例1
一种含核桃的含片的制备方法,包括以下步骤:
1.按以下重量份称取原料:核桃仁100kg、维生素C钠50kg、异麦芽糖醇100kg、阿拉伯胶150kg、蜂蜜100kg、微粉硅胶1kg;
2.取核桃仁,加入异麦芽糖醇,混匀,在温度-40℃放置冷冻24小时,用高能纳米冲击磨进行粉碎,过200目筛,得复合核桃粉;
3.取上述复合核桃粉,加入阿拉伯胶,混合均匀,加入蜂蜜制软材,制粒,40℃真空干燥,整粒,颗粒加入维生素C钠、微粉硅胶,混合均匀,压片,即得。
实施例2
一种含核桃的含片的制备方法,包括以下步骤:
1.按以下重量份称取原料:核桃仁300kg、维生素C钠150kg、异麦芽糖醇250kg、阿拉伯胶350kg、蜂蜜250kg、微粉硅胶5kg;
2.取核桃仁,加入异麦芽糖醇,混匀,在温度-10℃放置冷冻48小时,用高能纳米冲击磨进行粉碎,过300目筛,得复合核桃粉;
3.取上述复合核桃粉,加入阿拉伯胶,混合均匀,加入蜂蜜制软材,制粒,60℃真空干燥,整粒,颗粒加入维生素C钠、微粉硅胶,混合均匀,压片,即得。
实施例3
一种含核桃的含片的制备方法,包括以下步骤:
1.按以下重量份称取原料:核桃仁150kg、维生素C钠100kg、异麦芽糖醇150kg、阿拉伯胶250kg、蜂蜜200kg、微粉硅胶3kg;
2.取核桃仁,加入异麦芽糖醇,混匀,在温度-20℃放置冷冻36小时,用高能纳米冲击磨进行粉碎,过300目筛,得复合核桃粉;
3.取上述复合核桃粉,加入阿拉伯胶,混合均匀,加入蜂蜜制软材,制粒,50℃真空干燥,整粒,颗粒加入维生素C钠、微粉硅胶,混合均匀,压片,即得。
二、感官评定
将上述制备得到的3个实施例样品,分别让50个人试吃,进行感官调查评定。评定项目有:含片组织状态、色泽、风味、口感,再利用加权法计算总分,组织状态加权系数为0.2,色泽加权系数为0.2,风味加权系数为0.3,口感加权系数,0.3,结果见表3。

上述试验结果表明,本发明制备得到的3个实施例样品,感官评定效果好,加权得分为8分以上。说明本发明能保留核桃的营养成分、香味,制备的产品口感细腻、清甜,保留核桃的原汁原味且增强了维生素C钠功能,是一种良好的维生素补充剂和健脑保健品。本发明生产工艺独特,产品成型好,且工艺简单,易操作,适用于工业化生产。
Claims (5)
1.一种含核桃的含片,其特征在于,原料由以下重量份的组份组成:核桃仁100-300份、维生素C钠50-150份、异麦芽糖醇100-250份、阿拉伯胶150-350份、蜂蜜100-250份、微粉硅胶1-5份。
2.根据权利要求1所述含核桃的含片,其特征在于,原料由以下重量份的组份组成:核桃仁150份、维生素C钠100份、异麦芽糖醇150份、阿拉伯胶250份、蜂蜜200份、微粉硅胶3份。
3.一种如权利要求1所述含核桃的含片的制备方法,其特征在于,包括以下步骤:
(1)按以下重量份称取原料:核桃仁100-300份、维生素C钠50-150份、异麦芽糖醇100-250份、阿拉伯胶150-350份、蜂蜜100-250份、微粉硅胶1-5份;
(2)取核桃仁,加入异麦芽糖醇,混匀,粉碎,过200-300目筛,得复合核桃粉;
(3)取上述复合核桃粉,加入阿拉伯胶,混合均匀,加入蜂蜜制软材,制粒,干燥,整粒,颗粒加入维生素C钠、微粉硅胶,混合均匀,压片,即得。
4.根据权利要求3所述含核桃的含片的制备方法,其特征在于,所述步骤(2)中的粉碎方法为:采用低温超微粉碎法,粉碎物料中加入异麦芽糖醇混合均匀后,在温度-40~-10℃放置冷冻24-48小时。
5.根据权利要求3所述含核桃的含片的制备方法,其特征在于,所述步骤(3)干燥步骤采用真空干燥方法,干燥温度为40℃-60℃。
