本发明公开了葫芦在辣椒酱保存中的应用,其方法是将葫芦容器壳体和口盖一起浸入稻草灰水溶液中,经24小时取出,冲洗干净后,灌入辣椒酱,合盖保存。该方法能在三年内使辣椒酱不变酸、不发霉、不变味,比目前的保存方法要长二年以上,适合辣椒酱生产厂家采用。

技术领域
本发明涉及一种食品保存方法,更具体地说,本发明涉及一种辣椒酱的保存方法。
背景技术
辣椒酱是生产和食用过程中不断且持续发酵的食品,保存方法不当,会使辣椒酱发霉变酸。为使辣椒酱保持正常纯正的风味,不发霉变酸,目前采用的方法是,油制的辣椒面要保持有一层油,以隔绝空气,防止氧气参与发酵过程;水制的辣椒酱要掺入一定量的高度白酒(如三花酒),且不得搅动,否则会越来越酸。这两种方法虽然有一些作用,但对辣椒酱的保存来说,时间都不会太长,其保存期一般就在半年左右,其原因是辣椒酱的保存不但受空气、湿度、温度、光照等存放环境因素的影响,还要受灌装容器的影响。
市面上的食品灌装容器五光十色,林林总总,归纳起来大致有陶瓷、玻璃、塑料、木制品等几大类,作为食品之一的辣椒酱,其灌装容器自然地离不开这几大类,但由于辣椒酱是持续发酵的过程,而这些灌装容器并不能防止该过程的进行,因而这些灌装容器也不能延长辣椒酱的保存时间。
历史上,葫芦也曾用于酒、水、药的容器,但以其作为容器,是自然地利用了它的中空且坚硬的状态,而不是激活它的天然抑制发酵本性达到食物长久保存的目的。
发明内容
本发明的目的是克服现有技术的不足,提供一种葫芦在辣椒酱保存技术中的应用方法。
本发明的目的通过下述技术方案予以实现。
将葫芦容器壳体和盖一起浸入稻草灰制成的水溶液中,经24小时取出,冲洗干净后,灌入辣椒酱,合盖保存。
本发明的有益效果是:
1、木质化的葫芦有很强的密封性能,它能阻止潮气的进入。通过稻草灰水溶液的激活,它同时具有某种抑制元素,能起到阻止和延缓辣椒酱发酵的目的。
2、本发明对辣椒酱的保存可达到三年不变酸,不发霉,不变味,比一般的保存方法要长二年以上。
具体实施方式
下面对本发明的具体实施方式作进一步的说明。
实施例1:将木质化葫芦开好口盖,去瓢,并事先准备好稻草灰水溶液。稻草灰水溶液的制作方法是,将干稻草烧成灰,然后按1∶5的比例浸泡于水中,经充分搅拌溶解后,过滤去渣即得。将木质化葫芦容器及口盖浸泡于此稻草灰水溶液中,经24小时取出,冲洗干净后,灌入辣椒酱,合盖保存。
上述实施例为举例性质,凡不经过创造性劳动的葫芦在保存辣椒酱中的应用均属本发明的具体实施方式。
