生产时,先标准化处理牛奶至要求的脂肪和乳固体水平,使用高温短时操作,将阿斯巴甜同其它干物料一起加入,在79℃下巴氏灭菌25s,在18MPa压力下均质,冷却至4℃,老化4h,冷冻、包装、硬化。
本发明含脂肪量低,能力低,有益健康。
具体实施方式
实施例1:包括非脂乳固体1200份,麦芽糊精500份,葡聚糖500份,山梨醇300份,乳脂肪200份,微晶纤维素40份,稳定剂10份,阿斯巴甜8份,乳化剂10份,香精10份,色素10份。
实施例2:包括非脂乳固体1300份,麦芽糊精550份,葡聚糖550份,山梨醇350份,乳脂肪300份,微晶纤维素60份,稳定剂13份,阿斯巴甜11份,乳化剂13份,香精13份,色素13份。
实施例3:包括非脂乳固体1400份,麦芽糊精600份,葡聚糖600份,山梨醇400份,乳脂肪400份,微晶纤维素80份,稳定剂16份,阿斯巴甜14份,乳化剂16份,香精16份,色素16份。
生产时,先标准化处理牛奶至要求的脂肪和乳固体水平,使用高温短时操作,将阿斯巴甜同其它干物料一起加入,在79℃下巴氏灭菌25s,在18MPa压力下均质,冷却至4℃,老化4h,冷冻、包装、硬化。
