本发明涉及一种香蕉清汁的制备方法,属于食品饮料加工技术领域,包括原料预处理、酶解、过滤、澄清四个步骤;具体方法为:成熟香蕉去皮后,放入质量分数为1%的柠檬酸溶液中浸泡10~15min,捞出,用清水冲洗干净,加入香蕉肉2倍质量的水进行打浆,得到香蕉原浆;在香蕉原浆中加香蕉原浆质量的0.1~0.3%淀粉酶和0.2~0.5%果胶酶进行酶解;将香蕉酶解液用300目的滤网进行过滤,得到香蕉汁;在香蕉汁中加入0.1~0.3%的壳聚糖在30~35℃条件下澄清8~10h进行澄清,得到香蕉清汁;采用该方法果汁澄清度和稳定性均有明显提高,且果汁中的有效成分如总糖、总酸以及可溶性固形物含量也得到明显提高;减少了二次沉淀的发生,提高香蕉清汁的贮存稳定性。

香蕉美味芳香,营养丰富,在热带、亚热带地区的水果中占有重要的位置。根据测定,其含有丰富的糖、蛋白质、脂质、粗纤维、矿质元素(钙、钾、铁、磷和钠等)以及维生素A、B、C、E。香蕉热量高,每100 g果肉所含碳水化合物20g、蛋白质1.2 g、脂肪0.6 g;含有淀粉以及多种氨基酸;矿质元素中钾含量较多,每100 g果肉含472 mg。每100mL香蕉原菜含有葡萄糖5.62g,果糖3.54g,蔗糖13.9g。香蕉果实中还含有丰富的胡萝卜素、烟酸、核黄素和硫胺素,以及少量的镁、铜和硫。
中医认为,香蕉味甘性寒,具有清热解毒、润肠清肺的作用,还可利尿、降血压、刺激肠胃螺动,可预防胃渍病,有助于稳定血压,是一种兼具药食疗效的水果。日本学者研究发现,对比香蕉、苹果、西瓜、葡萄等几种水果的免疫活性,结果表明香蕉的免疫效果最好。这是由于香蕉能够通过增加白血球来改善免疫系统功能,同时还可产生攻击异常细胞物质。研究结果同时得出,香蕉的成熟度与免疫活性有关。香蕉中钾含量高,对预防高血压及心血管疾病有显著成效,还可以补充运动时身体流失的能量。香蕉中的糖分可以快速转化为人体可吸收的能量形式。香蕉中含有的化学物质可刺激胃點膜细胞生长繁殖,刺激产生的點液可保护胃壁使溃痕面避免胃酸侵烛,达到预防和治疗的作用。香蕉中含有的特殊氨基酸及生物碱可使人产生积极、兴奋的激素,色胺酸及维生素B6对于减少由于情绪的低落而产生的悲观、烦躁等有很好的调节作用。
香蕉较普遍的加工方式主要包括:香蕉果汁、果酱、香蕉粉、香蕉片、香蕉罐头、香蕉醋以及香蕉酒等。
香蕉中含 0.5%~0.7% 的果胶物质,采用常规法生产香蕉汁会导致果汁混浊、出汁率低。 利用酶解方法既能提高果汁的出汁率,又能水解果汁中引起混浊的果胶物质,使果汁变得清澈、透亮。文件CN102178304A公开了一种香蕉汁的制备方法,利用复合酶、淀粉酶结合超声波技术酶解香蕉浆,可获得多肽、多糖含量较高的香蕉汁,同时提高了香蕉汁的出汁率。但该工艺由于后续澄清不易彻底,产品在贮藏过程中易出现后浑浊现象,饮用时口感稍显粘滞,不够清爽,直接影响了果汁的品质和外观。
本发明开发一种新型香蕉汁的制备方法,出汁率高,减少二次沉淀的发生,提高香蕉汁的贮存稳定性。
发明内容
本发明的目的在于提供一种香蕉汁的制备方法,制得的产品出汁率高,质量稳定,口感及风味好。
为了实现上述目的,本发明所采用的技术方案是:
一种香蕉清汁的制备方法,包括如下步骤:
(1)原料预处理:成熟香蕉去皮后,护色,加水打浆,得到香蕉原浆;
(2)酶解:在香蕉原浆中加入淀粉酶和果胶酶进行酶解;
(3)过滤:将香蕉酶解液用300目的滤网进行过滤,得到香蕉汁;
(4)澄清:在香蕉汁中加入0.1~0.3%的壳聚糖进行澄清,得到香蕉清汁。
步骤(1)所述的护色是指在1%的柠檬酸溶液中浸泡10~15min,捞出,用清水冲洗干净。步骤(1)所述加水是指加入香蕉肉2倍质量的水。
步骤(2)所述的淀粉酶和果胶酶加入量分别为香蕉原浆质量的0.1~0.3%和0.2~0.5%。
步骤(4)所述的澄清是在30~35℃条件下澄清8~10h。
本发明的有益效果是:
(1)采用酶处理技术,使果肉组织分解,提高果汁品质。未成熟的香蕉果肉中淀粉含量达26%,成熟后也含有1%,并且果胶物质含量高,通过采用淀粉酶、果胶酶分解香蕉中的淀粉和果胶物质等达到澄清果汁提高出汁率的目的。经过复合酶处理的果汁澄清度和稳定性均有明显提高,且果汁中的有效成分如总糖、总酸以及可溶性固形物含量也得到明显提高。
(2)加入壳聚糖进行澄清,减少二次沉淀的发生,提高香蕉汁的贮存稳定性。

下面通过实施例对本发明做进一步详细说明,这些实施例仅用来说明本发明,并不限制本发明的范围。
实施例1
一种香蕉清汁的制备方法,包括如下步骤:
(1)原料预处理:成熟香蕉去皮后,在1%的柠檬酸溶液中浸泡10min,捞出,用清水冲洗干净,加入香蕉肉2倍质量的水进行打浆,得到香蕉原浆;
(2)酶解:在香蕉原浆中加入香蕉原浆质量的0.1%淀粉酶和0.5%果胶酶进行酶解;
(3)过滤:将香蕉酶解液用300目的滤网进行过滤,得到香蕉汁;
(4)澄清:在香蕉汁中加入0.1%的壳聚糖在35℃条件下澄清8h进行澄清,得到香蕉清汁。
实施例2
一种香蕉清汁的制备方法,包括如下步骤:
(1)原料预处理:成熟香蕉去皮后,在1%的柠檬酸溶液中浸泡15min,捞出,用清水冲洗干净,加入香蕉肉2倍质量的水进行打浆,得到香蕉原浆;
(2)酶解:在香蕉原浆中加入香蕉原浆质量的0.3%淀粉酶和0.2%果胶酶进行酶解;
(3)过滤:将香蕉酶解液用300目的滤网进行过滤,得到香蕉汁;
(4)澄清:在香蕉汁中加入0.3%的壳聚糖在30℃条件下澄清10h进行澄清,得到香蕉清汁。
实施例3
一种香蕉清汁的制备方法,包括如下步骤:
(1)原料预处理:成熟香蕉去皮后,在1%的柠檬酸溶液中浸泡12min,捞出,用清水冲洗干净,加入香蕉肉2倍质量的水进行打浆,得到香蕉原浆;
(2)酶解:在香蕉原浆中加入香蕉原浆质量的0.2%淀粉酶和0.3%果胶酶进行酶解;
(3)过滤:将香蕉酶解液用300目的滤网进行过滤,得到香蕉汁;
(4)澄清:在香蕉汁中加入0.2%的壳聚糖在35℃条件下澄清10h进行澄清,得到香蕉清汁。
实施例4
一种香蕉清汁的制备方法,包括如下步骤:
(1)原料预处理:成熟香蕉去皮后,在1%的柠檬酸溶液中浸泡15min,捞出,用清水冲洗干净,加入香蕉肉2倍质量的水进行打浆,得到香蕉原浆;

(4)澄清:在香蕉汁中加入0.3%的壳聚糖在30℃条件下澄清10h进行澄清,得到香蕉清汁。

一种香蕉清汁的制备方法,包括如下步骤:

(1)原料预处理:成熟香蕉去皮后,护色,加水打浆,得到香蕉原浆;
(2)酶解:在香蕉原浆中加入淀粉酶和果胶酶进行酶解;
(3)过滤:将香蕉酶解液用300目的滤网进行过滤,得到香蕉汁;
(4)澄清:在香蕉汁中加入0.1~0.3%的壳聚糖进行澄清,得到香蕉清汁。
