Abstract

本发明提供了一种天然零热量甜味剂,是将甜菊糖甙Reb C成分与甜菊糖的主要甜味成份Reb A和STV进行混合复配而成。所述甜菊糖甙Reb C与RebA、STV之间的重量比范围为:Reb C∶Reb A∶STV=(1-50)份∶(37.5-74.75)份∶(12.5-24.75)份。本发明充分利用了Reb C作为一种甜味增强剂,其纯天然、零热量,口感圆润清凉,与有热量的甜味剂复配不仅能改善口感,而且能减少25-50%热量的特性,克服了Reb A、STV在口感上具有后苦味的缺陷,使其口感更好、味质更鲜、安全性更强、使用更方便,同时也满足了人们对健康的需求。

一种天然零热量甜味剂
技术领域
本发明涉及甜菊糖的深加工,具体是由Reb C和甜菊糖甙甜味成分RebA、STV复配成的天然零热量的甜味剂。
背景技术
当今人类存在对甜味食品的普遍偏好,吃糖类食品成为人们摄入能量的主要方式,但近年来由于糖类物质的过量摄入引发的诸如肥胖、糖尿病、高血脂症、小儿龋齿等现象,在世界各地普遍存在。
甜叶菊的发掘和利用给人类带来了福音。
Reb A(Rebaudioside-A)是甜菊糖的主要甜味成份,其纯天然,零热量,甜度为蔗糖的300-400倍,但将其独立使用时有着很强的甘草味,口感欠佳。
STV(Stevioside)也是甜菊糖的主要甜味成份,甜度一般为蔗糖的200-300倍,在口感上近似于RA(Rebaudios de-A),有甘草味和后苦涩味。
Reb C(Renaudiside-C)作为甜叶菊植物的一个组成成份,是一种纯天然的甜味增强剂,它本身没有甜味和热量,当其与有热量、有甜度的甜味剂复配使用时能够起到增强甜味的作用,进而达到了减少热量的效果。如蔗糖或高果糖玉米糖浆复配时能在保持相同甜味的同时,减少近25-50%的热量。但从RebC的自身角度来说,它自身根本就没有一个甜度范围,少量使用的时候,它几乎没有味道,但是在大量的时候,它会有极强的苦味。
发明内容
本发明的目的是克服了Reb A和STV在应用中口感上的缺陷,提供了一种天然零热量甜味剂。
本发明技术方案是:一种天然零热量甜味剂,是将甜菊糖甙Reb C成分与甜菊糖的主要甜味成份Reb A和STV进行混合复配而成。所述甜菊糖甙Reb C与Reb A、STV之间的重量比范围为:
Reb C∶Reb A∶STV=(1-50)份∶(37.5-74.75)份∶(12.5-24.75)份。
一种天然零热量甜味剂,主要包括以下成分:Reb C(10-50)份与RebA(37.5-67.5)份、STV(22.5-12.5)份。
所述Reb C的纯度为60-99%,所述Reb A的纯度为80-99%,所述STV的纯度为80-99%。
所述Reb C的纯度为80-97%,所述Reb A的纯度为95-98%,所述STV的纯度为95-98%。
本发明的有益效果
1.本发明充分利用了Reb C作为一种甜味增强剂,纯天然,无热量,口感圆润清凉与有热量的甜味剂复配不仅能改善口感并且能减少25-50%热量的优点,将Reb C与Reb A和STV复配,达到了口感更好、味质更鲜、安全性更强、使用更方便的效果,同时也满足了人们降低饮食热量的要求。
2.本发明进一步的技术方案是在综合分析口感、安全性、生产成本、方便使用等。
3.本发明所述的Reb C的功效不仅在于增强Reb A和STV的甜度,而且Reb C,Reb A和STV同时作用于味觉传感器,从而改善了甜菊糖在口感上的缺陷,同时保持了其零热量、纯天然、安全性高、加工时热稳定性好的优点。将甜菊糖甙Reb C,Reb A和STV进行复配,可以广泛适用于饮料类、烘烤类、腌制类、甜味类等各种食品,满足了广大消费者对甜食的需求和对健康的渴望。

一种天然零热量甜味剂是由纯度为85%的Reb C(Renaudiside-C)50份,纯度为97%的Reb A(Rebaudioside-A)37.5份与纯度为97%的STV(Stevioside)12.5份复配而成,其甜度高达相同数量(100份)蔗糖的638倍,并且口感圆润清凉,Reb A(Rebaudioside-A)的干草味和STV(Stevioside)的苦涩味几乎被屏蔽。通过此实施例复配成的一种天然零热量甜味剂,其零热值,可以广泛适用于肥胖病、糖尿病等患者,也满足了广大追求低热量或无热量消费者的需求。
实施例2
一种天然零热量甜味剂是由纯度为90%的Reb C(Renaudiside-C)40份,纯度为96%的Reb A(Rebaudioside-A)45份和纯度为97%的STV(Stevioside)15份复配而成,其甜度高达相同数量(100份)蔗糖的565倍,其口感圆润清凉,Reb A(Rebaudioside-A)的干草味和STV(Stevioside)的苦涩味几乎被屏蔽。通过此实施例复配成的一种天然零热量甜味剂,其零热值,可以广泛适用于肥胖病、糖尿病等患者,也满足了广大追求低热量或无热量消费者的需求。
实施例3
一种天然零热量甜味剂是由纯度为93%的Reb C(Renaudiside-C)20份,纯度为97%的Reb A(Rebaudioside-A)60份和纯度为95%的STV(Stevioside)20份复配而成,其甜度高达相同数量(100份)蔗糖的420倍,其口感圆润清凉,Reb A(Rebaudioside-A)的干草味和STV(Stevioside)的苦涩味几乎被屏蔽。通过此实施例复配成的一种天然零热量甜味剂,其零热值,可以广泛适用于肥胖病、糖尿病等患者,也满足了广大追求低热量或无热量消费者的需求。

一种天然零热量甜味剂是由纯度为90%的Reb C(Renaudiside-C)10份,纯度为95%的Reb A(Rebaudioside-A)67.5份和纯度为95%的STV(Stevioside)22.5份复配而成,其甜度高达相同数量(100份)蔗糖的348倍,其口感圆润清凉,Reb A(Rebaudioside-A)的干草味和STV(Stevioside)的苦涩味几乎被屏蔽。通过此实施例复配成的一种天然零热量甜味剂,其零热值,可以广泛适用于肥胖病、糖尿病等患者,也满足了广大追求低热量或无热量消费者的需求。

1.一种天然零热量甜味剂,其特征在于,所述甜味剂包括以下成分:Reb C、Reb A及STV,其中所述Reb C、Reb A及STV的重量百分比分别为10~50%,37.5~67.5%和22.5~12.5%,所述Reb C纯度为60~99%,所述Reb A的纯度为80~99%,所述STV的纯度为80~99%。
2.根据权利要求1所述的一种天然零热量甜味剂,其特征在于,所述Reb C纯度为80~97%,所述Reb A的纯度为95~98%,所述STV的纯度为95~98%。
