含有鱼油和益生菌的组合的饮料
技术领域
本发明涉及含有鱼油和益生菌的饮料及其制备方法。
背景技术
鱼油是长链ω-3多不饱和脂肪酸(PUFA)最丰富的饮食来源。在食品的制备过程中,ω-3PUFA抗氧化稳定化是一项重要的任务。
脂肪酸是膳食脂肪的结构单元(building block)。人体储存上述膳食脂肪的形式主要是甘油三酯。含有ω-3脂肪酸的甘油三酯主要见于鱼。
ω-3脂肪酸在生命的任何阶段,甚至出生前都是必需的。它们是人体中每个细胞构成细胞膜的必需结构单元,并且它们的存在是维持适当的细胞膜的必要所在。同时,它们的贡献还在于影响大多生物性功能的调节,包括心脏血管、生殖、免疫以及神经系统。
ω-3的营养价值对于人类来说是众所周知的,并且被全世界的科学家和医学技术人员所认知。许多本领域的研究已经开始进行并且关于ω-3在免疫系统、支持脑部发育和神经系统的显著益处也被揭示。其他研究也显示了关于在患哮喘或湿疹时摄取ω-3会带来益处。目前存在的一个焦点在于ω-3在儿童患上ADHD或其他注意力集中问题时所起的作用。
目前通常的饮食都缺少ω-3。挪威食品安全署(Mattilsynet)的健康管理局积极建议公众每周食用4次鱼。
海产品油制备工作表明防止脂肪酸氧化是极其困难的。即使在惰性气氛中制备和储藏产品,并且产品以密封计量单元填装,仍然很难完全阻止其氧化,很难提供鱼腥味被除去或被完全掩盖,并且难闻的余味不再存在的产品。
人们采取了多种不同的方式来掩盖鱼腥味/气味或者防止鱼油的氧化,即加入抗氧化剂等。
现有技术的挪威专利申请No20044542提供了含乳油(creamy)的水包油型乳状液,其中脂肪酸的氧化降低到了一个可以接受的水平。
已知对于哺乳动物的胃肠道来说益生菌是有益的。压力、饮食、年龄、环境因素、抗生素、疾病、早产和婴儿的配方组合物会负面地改变微生物菌群的细菌组成。目前的研究项目着力于利用益生菌和益生元来恢复肠内菌群。为了重新建立公众对于健康食品的兴趣,生产商们已经开始生产许多含有益生菌乳酸菌(Lactobacillus)和双岐杆菌(Bifidobacterium)的新型牛奶产品。这些有益于健康的细菌培养物目前已经加入酸奶、早餐食品、干酪、饮料以及用于扩展牛奶的市场价值。
目前有许多鱼油的制品。然而没有哪种鱼油制品可以用作美味的饮料。另外,还有不同的含有益生菌的功能食品制品。
因此,目前就需要兼有鱼油和益生菌益处的稳定且美味的饮料,其是既有益健康又解渴的饮料选择。
发明内容
因此,本发明提供新型的饮料,兼有:
a)脂肪酸,尤其是对生命必须的ω-3脂肪酸,
b)对肠道微生物菌群有益的益生菌,以及
c)维持机体水平衡的水。
通过本发明可以惊喜的发现,在鱼油的水包油乳状液中添加益生菌会使脂肪酸的氧化稳定,由此可以呈现出稳定美味并且受客户欢迎的产品。因此,本发明提供新型的含鱼油和益生菌的美味饮料。根据本发明提供美味饮料的事实、其可以有助于维持水平衡并作为人们口渴时的饮料选择。
本发明的饮料是非奶基的产品。因此它是对于那些对奶过敏或乳糖不耐受的人们的一种选择。目前还没有含有益生菌的非奶基饮料。
本发明的一个目的是提供含有鱼油、ω-3脂肪酸和益生菌的新型美味饮料,但其不存在鱼腥味或余味。术语“美味”是指饮料具有令人愉快的风味、口感和余味。所述饮料中,鱼油的含量为5%-20%,其以水包油型乳状液状态存在。
本发明另一个目的是提供稳定的饮料,其中脂肪酸的氧化过程被降到最低。在防止氧化和提高稳定方面,益生菌起着重要的作用。嗜酸乳杆菌(Lactobacillusacidophilus)会产生乳酸、过氧化氢和其他副产品,其可以使环境变得对寄生生物体(undesired organisms)不利。嗜酸乳杆菌显示抗氧化活性,即抗坏血酸自氧化的抑制率在7-12%。机制包括金属离子鳌合能力、活性氧种净化、酶抑制和降低细胞内乳酸菌无细胞提取物的活性。上述活性通过培养基提供饮食抗氧化剂源。
本发明另一个目的是提供日剂量单位的饮料,其中含有推荐日剂量单位的ω-3脂肪酸和益生菌。
通过本发明可以完成上述以及其他进一步的目的。
发明详述
本发明涉及含有鱼油和益生菌的新型饮料。所述鱼油是用合适的乳化剂乳化制成水包油型乳状液。所述益生菌的活性提供饮食抗氧化剂源。
本发明的一个优选的实施方式提供饮料,其中所述鱼油的含量为大约5-20%,优选5-10%。所述鱼油可以选自任何具有适合品质的鱼油制品。
本发明另一个优选实施方式提供饮料,其中所述益生菌选自乳酸菌属,优选嗜酸乳杆菌。然而,任何适合用作稳定鱼油的氧化以及对机体有益的益生菌都可以使用。
本发明的另一个优选实施方式提供饮料,还含有甜味剂、香料、抗氧化剂和防腐剂。因为这样的饮料可以提供任何需要的口感。
本发明的一个方面,合适的乳化剂是乳固体,优选Grindsted FF 1125。
本发明另一个优选的实施方式提供饮料,其中的防腐剂是山梨酸钾。

c)将上述饮料装入合适的密封容器中。
优选容器是即用的小瓶。为了适应成人、儿童和婴儿的日推荐剂量,瓶中可能含有不同量的脂肪酸和益生菌。制备和包装在惰性气氛下于0~10℃的温度下进行。产品的储藏温度为0~10℃。

1.非奶基饮料,含有水包油型乳状液的鱼油和益生菌的组合,还含有合适的乳化剂,其中所述合适的乳化剂是乳固体。
2.如权利要求1的饮料,还含有甜味剂、香料、抗氧化剂和防腐剂。
3.如权利要求1的饮料,其中所述鱼油的含量为5-20%。
4.如权利要求1的饮料,其中所述益生菌选自乳酸菌属。
5.如权利要求4的饮料,其中乳酸菌菌株是嗜酸乳杆菌。
6.如权利要求1的饮料,其中所述乳固体是Grindsted FF 1125。
7.如权利要求2的饮料,其中所述防腐剂是山梨酸钾。
8.如权利要求2的饮料,其中所述甜味剂是木糖醇。
9.如权利要求1的饮料,其中所述饮料是以日剂量单位装入的。
