一直以来,糖类赋予各种食物如饮料等以甜的味道。但是,糖类甜味剂是高热量的。常规的糖类甜味剂包括由甘蔗或甜菜制得的蔗糖以及高果糖玉米糖浆(“HFCSs”)。

上述热量降低的甜味剂组合物一般包括至少一种糖类甜味剂和由安赛蜜、阿斯巴甜和三氯蔗糖的混合物形成的高甜度甜味剂组分。
为了清楚起见,热量降低的甜味剂组合物中的高甜度甜味剂组分(即掺有安赛蜜、阿斯巴甜和三氯蔗糖的高甜度甜味剂组分)还可以指其后所述的“三元掺混甜味剂”等。
示例的可包括在热量降低的甜味剂组合物中的糖类甜味剂可以包括HFCS 42,HFCS 55、蔗糖和其混合物。HFCS 42,HFCS 55和蔗糖可得自多种商业来源,包括美国的Cargill Foods。
在上述热量降低的甜味剂组合物中,糖类甜味剂可以有利地以任何有效量存在。
例如,在上述热量降低的甜味剂组合物中,以热量降低的组合物重量计(“bowsc”),糖类甜味剂的非限制性示范量范围有利的为大约96.2-99.7%重量,例如是98.5-99.5%重量(bowsc)。在特别有利的实施方案中,热量降低的甜味剂组合物中的糖类甜味剂的量是98.75-99.25%重量(bowsc)。
如上所述,这种热量降低的甜味剂组合物进一步包括高甜度甜味剂组分,同样也称作三元掺混甜味剂。
如上所述,三元掺混甜味剂(也指高甜度甜味剂组分)是安赛蜜、阿斯巴甜和三氯蔗糖的混合物。安赛蜜,也称作丁磺氨钾可以是商业可获得的由德国的Nutrinova Nutrition Specialties & Food IngredientsGmbH制得的SUNNETT甜味剂。阿斯巴甜可以来自不同商业上来源,包括美国的Nutrasweet公司(如NUTRASWEET人造甜味剂)。商业上可用的三氯蔗糖可以是从美国McNeil Nutritionals商业获得的SPLENDA人造甜味剂。
上述安赛蜜/阿斯巴甜/三氯蔗糖组合物,即三元掺混甜味剂可以有较宽范围的重量比。在高甜度甜味剂中,安赛蜜:三氯蔗糖:阿斯巴甜非限制性重量比为60∶30∶10到40∶10∶50。
热量降低的甜味组合物中的高甜度组合物可以以任何有效量存在。热量降低的甜味组合物中的高甜度甜味剂组分非限制性示范量范围是大约0.3-3.8%重量(bowsc),例如大约0.3-2.3%重量(bowsc),更优选0.4-1.5%重量(bowsc),最优选0.7-1.2%重量(bowsc)。
此外,除了糖类甜味剂和高甜度甜味剂组分,本发明的热量降低的甜味剂组合物和/或产生的食品也可以含有较小量的通常可用的添加剂如风味剂、填充剂、增重剂、防腐剂等。以食品的重量计(″bowf″),上述通常可用的添加剂的非限制性示范量可以达到大约10%重量,优选达到大约5%重量比(bowf)。
本发明的热量降低的甜味剂组合物可以添加进任何食品,包括饮料、奶制品、甜点、口香糖等中。与糖类增甜的食品相比,本发明的热量降低的甜味剂组合物可以有利地产生热量显著降低超过50%。
在有利的实施方案中,饮料中包含上述热量降低的甜味剂组合物。示例的饮料包括所有酒精类饮料和非酒精的饮料,其是碳酸化或非碳酸化的,浓缩形式或即饮形式。本发明的饮料可以是基于水的、果汁的、奶或奶衍生物的。在有利的实施方案中,饮料是基于水的和/或果汁的。在本发明的一个特别有益方面,饮料是非酒精饮料(基于水和/或果汁的),碳酸化或非碳酸化的,浓缩形式的或即饮形式的。
热量降低的甜味剂组合物可以以任何有效量存在于食品中。
以食品的重量计(bowf),食品中存在的热量降低的甜味剂组合物的非限制性示范量范围有利的是大约0.5-5.0%重量,例如1.5-5.0%重量(bowf)。在特别有利的实施方案中,热量降低的甜味剂组合物的量是1.5-4.0%重量(bowf)。与常规的甜味剂相比,饮料中典型的用量是大约10.0%重量(bowf)。
区别考虑,示例的常规糖类增甜饮料可能每1000ml饮料中含有大约100g糖类甜味剂。相比较而言,含有上述甜味剂组合物的示例的1000ml饮料一般含有大约5.00-50.00g热量降低的甜味剂组合物就可以达到与单独添加了100g糖类甜味剂的饮料相同的味道特征。含有上述甜味剂组合物的示例的1000ml饮料一般将含有糖类甜味剂的用量范围是大约10-50g,例如大约10-40g,特别是大约15-40g。含有上述甜味剂组合物的示例的1000ml饮料一般也可以含有用量范围是大约0.02-1.0g的三元掺混甜味剂组合物,有利的是大约0.05-0.5g,更有利的是大约0.07-0.2g。
当然,常规的饮料可以含有基本高于或低于10wt%如上所述的糖类甜味剂。在本发明的饮料中用于提供味道特征的甜味剂组合物的适当量可以是变化的,所述饮料是可以与单独用特定重量百分比的糖类增甜的已有的常规饮料相比较的。一般来说,用来提供饮料中味道特征的甜味剂组合物的适当量是被期望成比例变化的,所述饮料是可以与含有糖类甜味剂的饮料的口感相比较的,所述成比例变化基于上述讨论过的示范的10wt%糖类增甜的1000ml饮料相关的范围。例如,示例的1000ml饮料一般将含有大约20.00-100.00g热量降低的甜味剂组合物,以达到与仅含有200g糖类甜味剂的1000ml饮料可比较的味道特征。
因此,本发明热量降低的甜味剂组合物产生的饮料一般含有只包含HFCS 55的可比较的饮料热量的大约10-50%,例如,只包含HFCS55的可比较的饮料热量的大约10-40%,和特别是只包含HFCS 55的可比较的饮料热量的大约15-40%。
本发明的热量降低的甜味剂组合物是由糖类甜味剂(干燥或液体形式)和高甜度甜味剂(干燥形式或溶液形似)简单混合而成的。采用的混合过程可以是食品工业中任何适合的已知混合技术。随后利用现有技术中已知的技术将热量降低的甜味剂组合物直接添加进食品中。在备选的实施方案中,糖类甜味剂和/或高甜度甜味剂可以分别单独加入食品中,即作为单独的成分或作为任意量的预掺混的中间组合物进入食品中。
如上所述的内容以及权利要求中,所述的“上述”、“一种”可以指单数或复数。
Claims (12)
1.一种热量降低的甜味剂组合物,包括:
(i)以甜味剂组合物的重量计,大约96.2-99.7%重量的至少一种选自HFCS 55、HFCS 42和蔗糖的糖类甜味剂;
(ii)以甜味剂组合物的重量计,大约0.3-3.8%重量的包括安赛蜜、阿斯巴甜和三氯蔗糖的高甜度甜味剂组分。
2.如权利要求1所述的甜味剂组合物,其中热量降低的甜味剂组合物中糖类甜味剂的用量范围是大约98.5-99.7%重量。
3.如权利要求1所述的甜味剂组合物,其中热量降低的甜味剂组合物中的高甜度甜味剂组分的用量范围是大约0.8-1.2%重量。
4.如权利要求1所述的甜味剂组合物,其中高甜度甜味剂组分包括安赛蜜、三氯蔗糖和阿斯巴甜,并且安赛蜜∶三氯蔗糖∶阿斯巴甜的重量比是60∶30∶10到40∶10∶50。
5.一种掺有权利要求1所述的甜味剂组合物的食品。
6.如权利要求5所述的食品,其中以食品的重量计,食品中热量降低的甜味剂的用量范围是大约0.5-5.0%重量。
7.如权利要求5所述的食品,其中的食品是饮料、乳制品、甜点或口香糖。
8.制备热量降低的食品的方法,该方法包括将热量降低的甜味剂组合物掺进食品中,以食品的重量计,用量范围是大约0.5-5.0%重量,所述热量降低的甜味剂组合物包括:
(i)至少一种选自HFCS 55、HFCS 42和蔗糖的糖类甜味剂,以甜味剂组合物的重量计,所述热量降低的甜味剂组合物中糖类甜味剂用量范围是大约96.2-99.7%重量;和
(ii)包括安赛蜜、阿斯巴甜和三氯蔗糖的高甜度甜味剂组分,以甜味剂组合物的重量计,所述热量降低的甜味剂组合物中的高甜度甜味剂组分的用量范围是大约0.3-3.8%重量,所述食品显示出可与HFCS 55相比的味道特征。
9.如权利要求8所述的方法,其中热量降低的甜味剂组合物中糖类甜味剂的用量范围是大约98.7-99.3%重量。
10.如权利要求8所述的方法,其中热量降低的甜味剂组合物中高甜度甜味剂组分的用量范围是大约0.7-1.3%重量。
11.如权利要求8所述的方法,其中的高甜度甜味剂组分包括安赛蜜、三氯蔗糖和阿斯巴甜,并且安赛蜜∶三氯蔗糖∶阿斯巴甜的重量比是60∶30∶10到40∶10∶50。
12.将固体或液体形式的糖类甜味剂、安赛蜜、阿斯巴甜和三氯蔗糖混合以制备如权利要求1所述的热量降低的甜味剂组合物的方法。
