Abstract

La presente se relaciona con composiciones edulcorantes utilizadas para producir productos alimenticios con un perfil de dulzura y sabor comparable al del HFCS 55. Las composiciones edulcorantes incluyen, en general, por lo menos un edulcorante de hidratos de carbono seleccionado del grupo constituido por HFCS 55, HFCS 42 y sacarosa junto con una cantidad efectiva de una composicion edulcorante de alta intensidad. La composicion edulcorante de alta intensidad incluye acesulfamo K, aspartamo y sucralosa. Los productos alimenticios formados con el uso de las composiciones edulcorantes reducidas en calorías de la presente exhiben un perfil de sabor comparable al del HFCS 55 y una reduccion calorica de 50% o más.
