发明背景
使用脂肪酸,尤其是在口服组合物中,有益于解决各种健康问题。例如,公布于2002年1月3日的Jandacek等人的WO 02/00042描述了使用脂肪酸来控制体重。所述的体重控制方法包括包含脂肪酸的口服组合物,该组合物导致哺乳动物的饱腹感,从而减小食物的消耗。最近脂肪酸的其它应用已得到促进,包括在各种用于改善例如心脏和皮肤健康的组合物中使用ω-3-脂肪酸。

本文的组合物可包括、基本上由或由本文所述的任何要素组成。
虽然举例说明和描述了本发明的多种实施方案和个体特征,在不背离本发明的精神和范围的情况下,可对其进行各种其他变化和修改。同样明显的是,在上述公开内容中提出的实施方案与特征的所有组合都是可能的,并能导致本发明的优选实施。
本发明的组合物
本组合物可用于多种用途,尤其是食品或饮料。具体地讲,不受理论的限制,据信由于本文所用的乳蛋白浓缩物,本组合物显示具有优异的脂肪酸稳定性和味道掩蔽性质。本组合物包括包含以下物质的那些:
(a)乳蛋白,其中所述乳蛋白至少部分来源于乳蛋白浓缩物;和
(b)脂肪酸物质,其选自脂肪酸、它们的非甘油酯以及它们的混合物;
其中当组合物基本上不含选自油酸乙酯、油酸以及它们的混合物的脂肪酸物质时,该组合物基本上不含附加乳糖。
本文所用术语“基本上不含选自油酸乙酯、油酸以及它们的混合物的脂肪酸物质”是指包含按该组合物的重量计少于约0.1%、优选少于约0.05%、最优选少于约0.02%这种脂肪酸物质的那些组合物。此外本文所用的“基本上不含附加乳糖”是指包含按组合物的重量计少于约1%、优选少于约0.5%、甚至更优选少于约0.2%、最优选少于约0.02%附加乳糖的那些组合物。本文所用的“附加乳糖”是指经不同于乳蛋白浓缩物(本发明的乳蛋白来源于其中)的来源存在于组合物中的乳糖。最优选地,“附加乳糖”指经不同于乳蛋白浓缩物(本发明的乳蛋白来源于其中)或任何其它组分(乳蛋白也可来源于其中)(例如,流质牛奶或奶粉)的来源存在于组合物中的乳糖。
在任选实施方案中,所有组合物可基本上不含乳糖,无论这种乳糖是附加乳糖还是存在于组合物的组分中。本文所用的“基本上不含乳糖”是指包含按组合物的重量计少于约5%、优选少于约3%、甚至更优选少于约1%、最优选少于约0.5%乳糖的那些组合物。
本组合物的各种组分进一步描述如下:
乳蛋白
本组合物包含乳蛋白。存在于本文组合物中的乳蛋白对于脂肪酸物质的稳定性和味道掩蔽很重要。此外,出乎意料的是,本发明者发现乳蛋白的特定来源对这些性质的优化也很重要。具体地讲,组合物中的乳蛋白应该至少部分来源于乳蛋白浓缩物。因此,在该组合物的制备中,乳蛋白浓缩物应该与组合物的其它组分混合。
乳蛋白浓缩物是本领域通常所熟悉的,并且可从各种商业渠道获得或换句话讲由乳或其它乳源制备。该乳蛋白浓缩物可包含例如原乳蛋白、水解乳蛋白或它们的任何组合。通过乳超滤或其他方法制备乳蛋白浓缩物,这样使得乳糖或盐含量减少,从而提高了蛋白质含量。相反,在奶粉或炼乳中,水被除去,但乳的所有其他组分都基本保留。不受理论的限制,据信乳蛋白浓缩物中磷脂的相对浓度或乳蛋白浓缩物中乳糖或盐的减少对本文组合物所递送的最佳有益效果很重要。
在乳蛋白浓缩物中,乳蛋白主要是酪蛋白和乳清蛋白(乳蛋白浓缩物中酪蛋白和乳清蛋白的比率按重量计典型地为约80∶20)。本文所用的乳蛋白浓缩物优选包含按该乳蛋白浓缩物的重量计至少约65%、更优选至少约70%、最优选至少约75%的蛋白质。
优选地,本文组合物中存在的乳蛋白按组合物的重量计至少部分来源于至少约0.1%的乳蛋白浓缩物。更优选,乳蛋白按组合物的重量计至少部分来源于至少约0.2%的乳蛋白浓缩物、最优选至少约0.5%的乳蛋白浓缩物。在一个尤其优选实施方案中,本文组合物中存在的乳蛋白按组合物的重量计至少部分来源于至少约0.2%至约5%、更优选约0.5%至约4%、最优选地约1%至约3.5%的乳蛋白浓缩物。最优选地,每个这些前述量都基于包含按组合物的重量计至少约80%蛋白质的乳蛋白浓缩物中。因此乳蛋白浓缩物的量可适当调节,其中该浓缩物包含或多或少的蛋白质含量。
本文乳蛋白至少部分来源于乳蛋白浓缩物。同样,组合物还可包含其它乳蛋白源,例如流质牛奶(无论全脂、脱脂或其它)或奶粉(无论脱脂或其它),或各种其它来源。在本发明的一个优选实施方案中,除了部分来源于乳蛋白浓缩物以外,乳蛋白还另外来源于脱脂奶粉。由于其它乳蛋白来源于乳蛋白浓缩物,典型使用的是减少用量的这些来源,因此使用这些来源不会影响本组合物所显示具有的稳定性和味道特征。
例如,本组合物的乳蛋白还可至少部分来源于奶粉(优选脱脂奶粉)。优选地,其中当乳蛋白至少部分来源于奶粉时,本组合物包含按组合物的重量计少于约7%、优选少于约6.5%,且最优选少于约6%的奶粉。本组合物的典型组成应包含按组合物的重量计约4%至约6%的奶粉,前提条件是其它乳蛋白至少部分来源于该乳蛋白浓缩物。
脂肪酸物质
本发明中使用的脂肪酸物质选自脂肪酸、它们的非甘油酯以及它们的混合物。本文所用的脂肪酸物质包含脂肪酸链,或者其中脂肪酸物质为脂肪酸酯时,包含脂肪酸链和酯链。因而,其中脂肪酸物质为脂肪酸时,该物质可表示如下:
R-COOH
其中“R”为脂肪酸链,其为具有至少约9个碳原子的饱和或不饱和链,典型地约9个至约25个碳原子,且其中“COOH”为羧酸部分。更优选地,“R”为饱和或不饱和链,其具有约11个至约23个、优选约15个至约21个碳原子,这取决于本文的实施方案,通常优选约15个至约17个碳原子。还优选地,脂肪酸链包含0至约3个双键。最优选地,脂肪酸链为不饱和的,具体地讲是包含一个或两个双键。
当脂肪酸物质为脂肪酸的非甘油酯(即,“它们的非甘油酯”)时,该物质可表示如下:

其中R为如上定义的脂肪酸链,而R′为酯链,通过羧基部分“COO”将两者联结在一起。酯链为碳原子的直链或支链,当存在哺乳动物的消化酶、优选人的消化酶时,它被水解,并且典型地包含不超过约8个碳原子。酯链更优选包含1个至约5个碳原子,而且另外它可为直链(例如,正丙基)或支链(例如,异丙基)。高度优选的酯链包括形成甲基酯(即,R′为-CH3)、乙基酯、正丙基酯、异丙基酯、正丁基酯、异丁基酯以及它们的混合物的那些。尤其优选那些形成乙基酯的酯链。
在本发明的一个优选实施方案中,脂肪酸物质选自月桂酸、十二烯酸、肉豆蔻酸、肉豆蔻脑酸、十五烷酸、棕榈酸、棕榈油酸、十七烷酸、硬脂酸、二羟硬脂酸、油酸、蓖麻油酸、反油酸、亚油酸、α-亚麻酸、二均γ-亚麻酸、桐酸、十八碳三烯-4-酮酸、花生四烯酸、花生酸、二十烯酸、二十碳五烯酸、二十二烷酸、芥酸、二十二碳六烯酸、二十四烷酸、它们的非甘油酯以及它们的混合物。优选的脂肪酸非甘油酯包括油酸乙酯、亚油酸乙酯以及它们的混合物。
在本发明的一个尤其优选实施方案中,脂肪酸物质选自月桂酸、十二烯酸、肉豆蔻酸、肉豆蔻脑酸、十五烷酸、棕榈酸、棕榈油酸、十七烷酸、硬脂酸、二羟硬脂酸、油酸、蓖麻油酸、反油酸、亚油酸、α-亚麻酸、二均γ-亚麻酸、桐酸、十八碳三烯-4-酮酸、花生四烯酸、花生酸、二十烯酸、二十二烷酸、芥酸、二十四烷酸、它们的非甘油酯以及它们的混合物。在本发明的这个实施方案中,尤其优选选择包含0至约3个双键且脂肪酸链长为约15至约17个碳原子的脂肪酸物质。此外,尤其优选的脂肪酸物质包括油酸、亚油酸、它们的酯以及它们的混合物。这个实施方案优选的非甘油酯包括油酸乙酯、亚油酸乙酯以及它们的混合物。作为实施例,油酸乙酯可从各种来源获得,包括Victorian Chemical Co.,Richmond,Victoria Australia、Penta Manufacturing Co.,Livingston,NJ、和Croda,Inc.,Parsippany,NJ。
在本发明的另一个优选的实施方案中,脂肪酸物质选自ω-3-脂肪酸、它们的非甘油酯以及它们的混合物。本文尤其优选使用的是ω-3-脂肪酸,因为它们对消费者的健康具有有益效果,尤其是在皮肤和心脏健康方面。
本领域非常熟悉并且本文一致使用的术语“ω-3-脂肪酸”用于指具有ω-3双键的那些脂肪酸物质,其中当从链的ω(未梢)碳原子数起时,ω-3双键位于脂肪酸链的第三和第四个碳原子之间。ω-3-脂肪酸优选来源于海产(鱼)来源,包括鲱鱼(一种类似青鱼的鱼)。优选ω-3-脂肪酸源的非限制性实施例包括OMEGAPURE,购自Omega Protein,Inc.,Houston,TX。
适用于本文的ω-3-脂肪酸的非限制性实施例包括二十碳五烯酸(也称为EPA)、二十二碳六烯酸(也称为DHA)以及它们的混合物。也可考虑它们的非甘油酯。
在本发明的一个典型实施方案中,组合物包含按组合物的重量计约0.0001%至约10%的脂肪酸物质,且取决于所需的特定实施方案(例如,适于进一步稀释的浓缩物或即饮型饮料组合物)。更优选地,组合物包含按所述组合物的重量计约0.01%至约5%的脂肪酸物质。甚至更优选地,组合物包含按所述组合物的重量计约0.01%至约3%的脂肪酸物质。最优选地,组合物包含按所述组合物的重量计约0.5%至约2.5%的脂肪酸物质。例如,本发明的典型组合物可包含按所述组合物的重量计约1%至约1.3%的脂肪酸物质。
任选组分和本组合物的用途
本文所述组合物可用于各种各样的最终组合物。该组合物可用作例如卫生保健(包括药物和非处方组合物)、食品和饮料组合物、优选用作食品和饮料组合物、最优选用作饮料组合物。这种食品和饮料组合物不仅包括“传统的”食品和饮料,还包括在规范的指导原则下的那些食品和饮料,如食物增补品和保健食品等。
本发明的组合物可包含附加任选组分以便例如提高它们的性能或另外使此组合物更适于作为工业产品或消费品使用。这些任选组分可被分散、乳化、溶解或换句话讲与脂肪酸物质和乳蛋白浓缩物混合形成组合物。这些组分可被添加到本文的组合物中,前提条件是它们基本上不妨碍组合物的重要性质,尤其是稳定性和感官性质。下面给出任选组分的非限制性实施例:
水
本发明的组合物典型地包括水,尤其其中组合物为饮料组合物时。本文所用术语“水”包括存在于组合物中的全部水,包括,例如乳蛋白浓缩物或其他乳蛋白源、果汁或蔬菜汁中的及所有加入的水。水的优选含量按所述组合物的重量计为约10%至约99.999%、更优选约5%至约99%、还更优选至少约50%、甚至更优选地至少约70%、最优选约70%至约99%。即饮型饮料组合物应典型地包含按所述组合物的重量计至少约70%的水、优选约75%至约99%的水。
乳化剂
已发现任选乳化剂不会影响本文乳蛋白浓缩物的有益效果。因此,本组合物可任选包含按组合物的重量计约0.01%至约5%、优选约0.02%至约3%,且最优选约0.04%至约2%的乳化剂。
对于混浊乳液,混浊剂可包括一种或多种使用合适的食品级乳化剂稳定成水包油乳液的脂肪或油。多种脂肪和油的任何一种可被用作混浊剂,前提条件是该脂肪或油适用于食品和/或饮料中。优选的是已被精炼、漂白和脱臭以去除异味的那些脂肪和油。尤其适合作为混浊剂使用的是那些感官上中性的脂肪。这些包括如下来源的脂肪:植物脂肪,如大豆、玉米、红花、向日葵、棉籽、低芥酸菜籽和油菜籽;坚果脂肪,如椰子、棕榈和棕榈仁;和合成脂肪。对于合适的脂肪或油混浊剂,参见例如,公布于1987年11月10日的Kupper等人的美国专利4,705,691。
可使用能将脂肪或油混浊剂稳定为水包油乳液的任何合适的食品级乳化剂。合适的乳化剂包括卵磷脂、单甘油二酯、甘油二酯、阿拉伯树胶(阿拉伯树胶)、改性食品淀粉(如链烯基琥珀酸盐改性的食品淀粉)、得自纤维素的阴离子聚合物(如羧甲基纤维素)、茄替胶、改性茄替胶、黄原胶、黄蓍胶、瓜耳胶、刺槐豆胶、果胶、以及它们的混合物。参见例如,公布于1987年11月10日的Kupper等人的美国专利4,705,691。已处理成包含疏水和亲水基团的改性淀粉,例如Caldwell等人的美国专利2,661,349中描述的那些是可用于本文的优选乳化剂。辛烯基琥珀酸盐(OCS)改性淀粉,例如描述于Marotta等人的美国专利3,455,838和Barndt等人的美国专利4,460,617中的那些是尤其优选的乳化剂。
混浊剂可与加重剂组合以提供饮料乳浊剂,其赋予饮料以全部或部分的不透明效果,而不分离出或上升至顶部。饮料乳浊剂提供给消费者含汁饮料的外观。任何合适的加重油可以用于饮料乳浊剂中。典型的加重油包括溴化植物油、木松香的甘油酯(酯树胶)、蔗糖乙酸异丁酸酯(SAIB)和其它蔗糖酯、达玛树脂树胶、松香、榄香树胶或其它本领域的技术人员已知的。其它合适的加重剂包括溴化液体多元醇聚酯,其为不可消化的。参见例如公布于1987年11月10日的Brand等人的美国专利4,705,690。
混浊/乳浊剂乳液可通过将混浊剂与加重剂(用于乳浊剂乳液)、乳化剂和水混合而制备。乳液典型地包含约0%至约25%的混浊剂,约0%至约20%的加重油剂(在乳浊剂乳液的情况下),约0%至约30%的乳化剂,和约25%至约97.9%的水(或适量)。
可用于本发明饮料组合物中的风味剂乳液包含一种或多种本领域已知用作饮料香味剂的合适的风味油、提取物、含油树脂、精油等。这一组分也可包含风味剂浓缩物,如那些得自天然产物如水果的浓缩液。无萜烯橘油和香精也可用于本文。合适的风味剂的实施例包括,例如,水果香料如橙、柠檬、酸橙等,可乐风味剂、茶风味剂、咖啡风味剂、巧克力风味剂、牛奶风味剂。这些风味剂可从天然来源如精油和提取物获得,或可人工合成制备。风味剂乳液典型地包含多种风味剂的混合物并可以乳液、醇提取物或喷雾干燥的形式被应用。风味剂乳液也可包括如前所述带有或不带有加重剂的混浊剂。参见例如公布于1987年11月10日的Kupper等人的美国专利4,705,691。
风味剂
本文组合物可任选地,但优选地,包含一种或多种风味剂。优选地,这些风味剂包含在饮料组合物中,且典型地选自果汁、水果香料、植物风味剂以及它们的混合物。当本发明的饮料中包含果汁时,其可包含约0.1%至约99%、优选约1%至约50%、更优选约2%至约30%、最优选约5%至约20%的果汁。本文所测量的果汁的重量百分比是基于原汁2°至16°糖度果汁。果汁可以果泥、粉末、或以原汁或浓缩果汁的形式掺入饮料中。尤其优选的是以约20°至约80°糖度的含固体成分(主要是糖固体)的浓缩物形式掺入果汁。
可任选地,由于本组合物的乳蛋白,可使用例如公布于1997年7月15日的Yang等人的美国专利5,648,112中描述的那些方法来制备那些含果汁的组合物。
果汁可为已知用于稀释果汁饮料的任何一种柑桔汁、非柑桔汁或它们的混合物。果汁可来源于,例如,苹果、越橘、梨、桃、李子、杏、蜜桃、葡萄、樱桃、醋栗、悬钩子、黑醋栗、接骨木果、黑莓、蓝莓、草莓、柠檬、酸橙、中国柑桔、橙、柚子、cupuacu、马铃薯、番茄、莴苣、芹菜、菠菜、卷心菜、豆瓣菜、蒲公英、大黄、胡萝卜、甜菜、黄瓜、菠萝、椰子、石榴、猕猴桃、芒果、番木瓜果、香蕉、西瓜、西番莲果、橘子和香瓜。优选果汁来源于苹果、梨、柠檬、甜橙、中国柑桔、柚子、越橘、橙、草莓、橘子、葡萄、猕猴桃、菠萝、西番莲果、芒果、番石榴、悬钩子和樱桃。柑橘汁、优选柚子、橙、柠檬、酸橙和中国柑桔汁,以及来源于芒果、苹果、西番莲果和番石榴的果汁,以及这些果汁的混合物是最优选的。
也可以使用水果香料。至于以上所述的风味剂乳液,水果风味剂可来源于天然来源如精油和提取物,或可人工合成制备。水果香料可通过加工尤其是浓缩来源于水果。其中果汁被浓缩或蒸发,被去除的水或浓缩物包含挥发性物质,该挥发性物质包含该水果的风味剂。通常,将这种风味剂加入到浓缩果汁中以增加其香味。浓缩物也可用于为“淡味水”(味道淡的水)加味。
也可使用植物风味剂。本文所用术语“植物风味剂”是指来源于植物的不是水果部分的风味剂,即来源于坚果、树皮、根和/或叶。术语“植物风味剂”中也包括模仿来源于天然来源的植物风味剂所制得的人造风味剂。植物风味剂可来源于天然来源如精油和提取物,或可人工合成制备。合适的植物风味剂包括巧克力、香草、肉豆蔻果核、可乐果、金盏花、菊花、春黄菊、姜、缬草、育亨宾树、蛇麻子、圣草、人参、越桔、稻、红酒、芒果、牡丹花、柠檬香脂、核果瘤、橡树薄片、熏衣草、胡桃、龙胆、罗汉果、肉桂、当归、芦荟、龙牙草、蓍草和它们的混合物。尤其优选的风味剂包括巧克力或香草。
其中包括咖啡固体时,组合物典型地包含按所述组合物的重量计约3%至约23%的咖啡固体。其中包括茶固体时,本发明的组合物可包含按所述组合物的重量计约0.01%至约1.2%、优选约0.05%至约0.8%的茶固体。本文所用术语“茶固体”是指从茶物质中提取的固体,该茶物质包括从包括C.sinensis和C.assaimica的茶属中获得那些物质,例如新采摘的茶叶、采摘后立即干燥的新鲜绿茶叶、干燥前加热处理以使所有存在的酶失活的新鲜绿茶叶、速溶绿茶和部分发酵的茶叶。绿茶固体为茶叶、茶树干和其他相关的植物物质,并且其未经历基本发酵以制得红茶。也可使用茶树的叶下珠(Phyllanthus)属、儿茶棕儿茶和钩藤科。可使用未发酵或部分发酵的茶的混合物。
甜味剂
本发明的组合物可以,并且典型地将包含有效量的一种或多种甜味剂,包括碳水化合物甜味剂和天然和/或人工无/低卡路里甜味剂。用于本发明组合物的甜味剂的量典型地取决于所用的具体甜味剂和所需的甜度。对于无/低卡路里甜味剂,该量随具体甜味剂的甜度而变化。
可以使用任何碳水化合物甜味剂、优选单糖和/或二糖,使本发明的组合物变甜。变甜的组合物,尤其是饮料,典型地包含按所述组合物的重量计约0.1%至约40%、更优选约0.1%至约20%、最优选约6%至约14%的甜味剂。这些甜味剂可以固体或液体形式(例如糖浆)掺入组合物。
用于本发明组合物的优选糖甜味剂为蔗糖、果糖、葡萄糖以及它们的混合物。果糖可以液态果糖、高果糖玉米糖浆、干果糖或果糖糖浆的形式被获得或提供。其他天然存在的甜味剂或它们的纯化提取物,例如甘草素、蛋白质甜味剂非洲甜果素、公开于例如1995年7月18日的Fischer等人的美国专利5,433,965中的罗汉果汁等等,也可用于本发明的组合物中。
合适的无/低卡路里甜味剂包括,例如,糖精、环磺酸盐、L-天冬氨酰基-L-苯基丙氨酸低烷基酯甜味剂(如天冬甜素)、Brennan等人的美国专利4,411,925中公开的L-天冬氨酰基-D-丙氨酸酰胺、Brennan等人的美国专利4,399,163中公开的L-天冬氨酰基-D-丝氨酸酰胺、Brand的美国专利4,338,346中公开的L-天冬氨酰基-L-1-羟甲基链烷酰胺甜味剂、Rizzi的美国专利4,423,029中公开的L-天冬氨酰基-1-羟乙基链烷酰胺甜味剂、公布于1986年1月15日的Janusz的欧洲专利申请168,112中公开的L-天冬氨酰基-D-苯基甘氨酸酯和酰胺甜味剂、公布于1999年6月24日的转让给Nutrasweet Co.的Gerlat等人的WO 99/30576中公开的N-[N-3,3-二甲基丁基)-L-α-天冬氨酰基]-L-苯基丙氨酸1-甲基酯甜味剂、alltame、非洲甜果素、二氢查尔酮、环磺酸盐、蛇菊苷、甘草素、合成烷氧基芳族,如甘素和P-4000、三氯蔗糖、N对硝基苯基甲酰胺基β丙氨酸钠(suosan)、奇异果素、应乐果甜蛋白、山梨醇、木糖醇、甜蛋白、环己基氨基磺酸盐、取代咪唑啉、合成氨基磺酸如丁磺氨、丁磺氨-K和n-取代的氨基磺酸、肟如perilartine、肽如天冬氨酰基丙二酸酯和succanilic acids、二肽、氨基酸基甜味剂如偕-二氨基烷、间-氨基苯甲酸、L-氨基二羧基酸烷和某些α-氨基二羧基酸和偕-二胺的酰胺、以及3-羟基-4-烷基羟苯基脂肪羧酸酯或杂环芳族羧酸酯、赤藓醇和它们的混合物。
着色剂
在本发明组合物中可使用着色剂。例如,可使用天然或人造的染料。
优选使用FD&C染料(例如黄#5、蓝#2、红#40)和/或FD&C色淀。通过将色淀加入至其他粉末成分中,所有颗粒,尤其是有色铁化合物,被完全均匀地着色并得到一种均匀着色的组合物。本发明可使用的优选色淀染料是FDA核准的色淀,如色淀红#40、黄#6、蓝#1等。此外,可将FD&C染料或FD&C色淀染料与其他常用食品和食品着色剂组合使用。
还可使用其他着色剂,例如天然试剂。这些其他着色剂的非限制性实施例包括水果或蔬菜汁、核黄素、类胡萝卜素(例如β-胡萝卜素)、姜黄素和番茄红素。
所用着色剂的精确用量将根据所使用的试剂和最终组合物所需的强度而变化。通常,如果使用的话,着色剂的典型含量按所述组合物的重量计为约0.0001%至约0.5%、优选约0.001%至约0.1%、最优选约0.004%至约0.1%。
营养物质
本文组合物可由一种或多种营养物质强化,本文定义营养物质为一种或多种维生素和/或矿物质。维生素和矿物质的美国推荐日摄取量(USRDI)由Recommended Daily Dietary Allowance-Food andNutrition Board,National Academy of Sciences-National ResearchCouncil规定和陈述。
除非本文另有说明,当给定矿物质存在于本发明组合物时,该组合物包括至少约1%、优选至少约5%、更优选约10%至约200%、甚至更优选约40%至约150%、最优选约60%至约125%的该矿物质的USRDI。除非本发明另有说明,当给定维生素存在于本发明组合物时,该组合物包括至少约1%、优选至少约5%、更优选约10%至约200%、甚至更优选约20%至约150%、最优选约25%至约120%的该维生素的USRDI。
本发明组合物中还可包括市售来源的维生素A。本文所用的“维生素A”包括但不限于视黄醇、β-胡萝卜素、视黄醇棕榈酸酯和视黄醇乙酸酯。维生素A的形式可以是,例如,油、珠状或胶囊。

本发明组合物中也可使用市售来源的维生素B2(也称为核黄素)。当维生素B2存在于本发明组合物中时,组合物包含至少约1%、优选至少约5%、更优选约5%至约200%、甚至更优选约10%至约100%、最优选约10%至约50%的维生素B2的USRDI。
市售来源的维生素C可用于本文。也可使用装入胶囊的抗坏血酸和抗坏血酸的可食用盐。其中维生素C存在于本文组合物中时,组合物包含至少约1%、优选至少约5%、更优选约10%至约200%、甚至更优选约20%至约150%、最优选约25%至约120%的这种维生素的USRDI。

本文可掺入的营养增补量的其他维生素包括但不限于生物素、维生素B1、B3、B6和B12、叶酸、泛酸、叶酸、维生素D和维生素E。其中当组合物包含这些维生素中的一种时,组合物优选包含至少5%、优选至少25%、最优选至少35%的这种维生素的USRDI。
矿物质的非限制性实施例包括碘、铬、镁、锰、钼、硒、三价磷、镁、锌、碘、铁和铜。作为实施例,适用于包含于食用组合物中的这些矿物质的所有可溶盐均可使用,例如,柠檬酸镁、葡萄糖酸镁、硫酸镁、氯化锌、硫酸锌、碘化钾、硫酸铜、葡萄糖酸铜和柠檬酸铜。

其中当组合物包括钙时,组合物应典型地包含按所述组合物的重量计约0.01%至约0.5%、更优选约0.03%至约0.2%、甚至更优选约0.05%至约0.15%、最优选约0.1%至约0.15%的钙。
在本发明组合物中可使用铁。可接受的铁的形式在本领域中是众所周知的。掺入组合物中的铁化合物的量可根据最终组合物中所需的增补量和目标消费者不同而广泛地变化。本发明的铁强化组合物典型地包含约5%至约100%、优选约15%至约50%、最优选约20%至约40%的铁USRDI。
可用于本发明可吸收组合物中的高度可生物利用的亚铁盐为硫酸亚铁、富马酸亚铁、琥珀酸亚铁、葡糖酸亚铁、乳酸亚铁、酒石酸亚铁、柠檬酸亚铁、亚铁氨基酸螯合物,以及这些亚铁盐的混合物。虽然二价铁典型地具有更大的生物可利用率,但某些三价铁盐也可作为高度可生物利用的铁的来源。
某些三价铁盐也可提供高度可生物利用的铁来源。可用于本发明食品或饮料组合物中的可高度生物利用的三价铁盐为蔗糖酸铁、柠檬酸铁铵、柠檬酸铁、硫酸铁、焦磷酸铁和正磷酸铁,以及这些三价铁盐的混合物。可使用高度生物可利用的亚铁和三价铁盐的组合或混合物。
尤其优选的三价铁源是焦磷酸铁,例如微胶囊装的SUNACTIVE Iron,购自Taiyo International,Inc.,Edina,Minnesota,U.S.A和Yokkaichi,Mie,Japan。由于SUNACTIVE铁的粒径、相容性和生物可利用性,它尤其优选用于本文。
那些配体与金属的比例为至少2∶1的亚铁氨基酸螯合物尤其适于用作本发明中高度生物可利用的铁来源。例如,配体与金属的比例为2的合适的亚铁氨基酸螯合物为下式表示的那些:
Fe(L)2
其中L为α氨基酸、二肽、三肽或四肽配体。例如参见,美国专利4,863,898、4,830,716和4,599,152。尤其优选的亚铁氨基酸螯合物是反应配体为甘氨酸、赖氨酸和亮氨酸的那些。最优选的是以商品名FERROCHEL出售的亚铁氨基酸螯合物(Albion Laboratories,Salt LakeCity,Utah),其中反应配体是甘氨酸。
尤其适于强化本发明组合物的其他铁来源包括某些铁-糖-羧酸盐配合物。在这些铁-糖-羧酸盐配合物中,羧酸盐为亚铁或三价铁提供了反离子。这些铁-糖-羧酸盐配合物可用例如公布于1988年11月22日Nakel等人的美国专利4,786,510和4,786,518中描述的方法制备。这些物质被称为“配合物”,但它们以复杂的、高度水合的、被保护的胶体形式存在于溶液中;为了简化使用术语“配合物”。
在本发明组合物中还可使用锌。可接受形式的锌在本领域内是为人们所熟知的。本发明的锌强化组合物典型地包含约5%至约100%、优选约15%至约50%、最优选约25%至约45%的锌USRDI。可用于本发明的锌化合物可以是任何一种常用形式如乳酸锌、硫酸锌、氯化锌、乙酸锌、葡萄糖酸锌、抗坏血酸锌、柠檬酸锌、天冬氨酸锌、吡啶甲酸锌、氨基酸螯合锌和氧化锌。氧化锌尤其优选。
可食载体
本组合物中可使用一种或多种可食用载体。具体地讲,例如当一种或多种营养物质包含于组合物中时,可食用载体包含乳化剂,如公布于1999年3月30日Mehansho等人的美国专利5,888,563中描述的那些。这些可食用载体可减轻这些营养物质的不可取味道和颜色。可用于本文的优选可食用载体为卵磷脂。例如,可以大豆卵磷脂(购自Central Soya,FortWayne,IN)购得卵磷脂。
纤维
纤维在本领域是熟知的,并且包括对哺乳动物酶的消化作用有抵抗力的络合碳水化合物,例如存在于植物细胞壁和海藻中的碳水化合物,和由微生物发酵产生的那些碳水化合物。这些络合碳水化合物的实施例为麸皮、纤维素、半纤维素、果胶、树胶和黏液、海藻提取物以及生物合成树胶。纤维素纤维的来源包括蔬菜、水果、种子、谷类和人造纤维(例如,通过细菌合成)。也可使用市售的纤维,如纯化植物纤维素或纤维素面粉。天然存在的纤维包括得自整个柑橘皮、柑橘白色内皮、甜菜、柑橘果肉和囊泡固体、苹果、杏和西瓜皮的纤维。
可用于本文尤其优选的纤维为葡萄糖聚合物、优选含有支链且相对于淀粉和麦芽糖糊精典型不易消化的那些葡萄糖聚合物。这些纤维中优选的是一种以商品名FIBERSOL2销售的,购自Matsutani Chemical IndustryCo.,Itami City,Hyogo,Japan。
果糖低聚糖也是本文优选的纤维。优选的果糖低聚糖为由果糖分子连接蔗糖分子的链组成的果糖低聚糖混合物。最优选地,它们的耐斯糖与蔗果三糖与果糖-耐斯糖的比率按所述组合物的重量计为约40∶50∶10。优选的果糖低聚糖可通过果糖转移酶作用于蔗糖上的酶促作用获得,例如购自Beghin-Meiji Industries,Neuilly-sur-Seine,France的那些果糖低聚糖。
可用于本文的其他优选纤维包括阿拉伯半乳聚糖。优选阿拉伯半乳聚糖的市售来源的非限制性实施例包括LAREX UF、LARACARE A200、IMMUNENHANCER(CAS No.9036-66-2)、CLEARTRAC、FIBERAID和AC-9,全部购自(例如)Larex,Inc.of St.Paul,Minnesota,U.S.A.。
这些食物纤维可为天然的或纯化的形式。所用的食物纤维可为单一类型(例如,纤维素)、复合食物纤维(例如,含纤维素和果胶的柑橘白色内皮)、或某些纤维的组合(例如,纤维素和树胶)。可用本领域已知的方法来加工纤维。
其中如果使用纤维,本发明的组合物所需的纤维总量按所述组合物的重量计典型地为约0.01%至约15%、优选约0.1%至约5%、更优选约0.1%至约3%、最优选约0.2%至约2%。纤维的总量包括所有加入的纤维以及自然存在于本发明所有其他组分中的所有可溶食用纤维。
碳酸化组分
二氧化碳可被加入与饮料糖浆混合的水中,或稀释后加入稀释的饮料中而得到碳酸化作用。可将碳酸化饮料装入容器,如瓶或罐,然后将其密封。可使用任何常规碳酸化方法来制备本发明的碳酸化饮料组合物。加入饮料中的二氧化碳的量根据具体调味系统和想要达到的碳酸化作用量而定。
pH
本发明的组合物可具有多种pH水平。例如,组合物可以本质上是酸性的(例如pH值为约3至约5)或碱性较强的。本发明优选的组合物具有的pH为约6至约8、更优选约6.3至约7.4。
有机和无机可食用酸可用于降低饮料组合物的pH。该酸可以其未解离的形式或可选择地以其各自盐的形式存在,例如磷酸氢钾或磷酸氢钠、磷酸二氢钾或磷酸二氢钠盐。优选的酸为可食用有机酸包括柠檬酸、苹果酸、富马酸、己二酸、磷酸、葡萄糖酸、酒石酸、抗坏血酸、乙酸、磷酸或它们的混合物。最优选的酸为柠檬酸和苹果酸。葡萄糖δ内酯(GDL)也是可用于本文的优选酸,尤其是当需要降低pH而不给最终组合物引入过多的酸味或辛酸味时使用。
对那些本质上碱性较强的组合物可使用多种碱。例如,本文可使用氢氧化钠或氢氧化钾。
制备本组合物的方法
本发明组合物可由一种方法来制备,该方法包括混合以下组分:
(a)乳蛋白浓缩物;和
(b)脂肪酸物质,其选自脂肪酸、它们的非甘油酯以及它们的混合物;
其中当组合物基本上不含选自油酸乙酯、油酸以及它们的混合物的脂肪酸物质时,该组合物基本上不含附加乳糖。
组合物还可另外用普通技术人员熟知的常规方法来制备。举例说明,本发明的组合物可通过如下方法制备:将所有组分单独或以适当的组合一起溶解、分散或换句话讲混合,并且如果适当的话,在水中用机械搅拌器搅拌直至所有成分溶解或充分分散。如果适当,可组合所有各自溶液和分散体。其中想要获得贮藏稳定的组合物时,可任选地,但优选地在适当的加工条件下对最终混合物进行巴氏法灭菌、干馏、罐装或无菌灌装。
该组合物可按照本领域普通技术人员所已知的方法来制备。另外,如果需要,可考虑用以下方法制备本组合物:
将水加入高剪切搅拌装置中,开始搅拌(可任选地,装置可同例如混匀缸再循环,来进行大批量制备)。搅拌可以是,例如,从约5Watt/Kg(瓦每千克))至约55W/kg的混合能量。组合物各种组分加入的具体顺序对获得本组合物稳定和掩盖滋味的有益效果并不重要。在加入角叉菜胶或其他类似物质(如果使用)后,允许一批料搅拌至少约五分钟来进行适当的水合。另外,所有组分可顺序加入,而在各组分加入之间只有很少等候时间或没有等候时间。一加入各种组分,组合物就可任选地在约20.68MPa至约48.26MPa的压力下进行均化。组合物可任选地在超高温(UHT)条件下灭菌。组合物可任选地在约13.79MPa至约34.47MPa的压力下进行均化。典型地,可在灭菌之前或之后进行均化,但可在灭菌之前和之后都进行均化。组合物可任选地无菌装入合适的无菌容器。
给组分施加混合能的方法可选自多种熟知的设备(激励部件)。例如,此激励部件可以是通过在其中形成超声振动为液体介质提供能量的搅拌器,如购自Sonic Corporation,Stratford,CT的Sonolator,或压电换能器。Sonolator为在线体系,该体系通过将液体、液体混合物或固体分散系以很高的线速度经一定形状的孔口吸入液体中而提供超声振动。液流冲击悬在液流中的叶片。叶片上的流动引起叶片的振动,由此在液流中产生空化将流动能转化为混合/分散能。其他特别有用的激励器包括提供搅拌器高端速的间歇式混合机,如以商标OSTERIZER购自SunbeamCorporation,Delray Beach,FL的搅拌机。另外,也可使用转子/定子高剪切搅拌器,由Charles Ross & Son,Hauppauge,NY市售。同样也可使用在线搅拌器,如以型号Quadro ZC/XC购自Quadro Inc.,Millburn,NJ的那些。另外,可用于本文的尤其优选的激励方法包括底部驱动混合,如购自Breddo Likwifier,Kansas City,MO的Breddo Likwifier(型号LOR,圆槽;型号LTD,方槽)和购自APV Crepaco,Inc.,Lake Mills,WI的APV Mixer/Blender(Multiverter(圆槽)/Liquiverter(方槽)高速搅拌器。

Claims (18)

其中当所述组合物包含按所述组合物重量计少于0.1%重量的选自油酸乙酯、油酸以及其混合物的物质时,所述组合物包含按所述组合物重量计少于1%重量的附加乳糖,所述的附加乳糖指经不同于乳蛋白浓缩物或乳蛋白来源于其中的任何其它组分的来源存在于组合物中的乳糖。
