一种食品中石蜡、白油的检验方法,取经粉碎过筛后的食品样品于容器中,加入乙醚浸提1—3小时后,过滤,取滤液滴置于玻片上,待乙醚蒸发后置显微镜下,用显微镜在较暗视野中观察,样品中加有石蜡、白油的可观察到须根状或网络状物。本发明操作简单,显示直观,检验快速,灵敏度高,方便室外现场使用。

食品中石蜡、白油的检验方法
技术领域
本发明涉及一种人类日常生活中食品的检验方法,具体涉及一种食品中矿物油石蜡、白油的快速检验方法。
背景技术
矿物油主要指石蜡、液态石蜡、白油等从石油中提取的油脂类物质,GB 2760-1996食品添加剂使用卫生标准对其使用范围有明确的界定,不能直接加入食品中食用。一些厂商为了提高食品的外观或是方便加工,常将矿物油直接加入食品中,损害了消费者的权益,形成了一种社会公害。已知的将石蜡作为抛光剂来处理大米、西瓜子,使其外观光泽好;将矿物油加入粉料中来生产各种粉丝,特别是红薯粉丝与马铃薯粉丝,以防止粉丝相互粘连,便于松丝;在火锅  底料中加入矿物油代替牛油使其在常温下能够硬化。由于矿物油是长碳链化合物,人体不能吸收、分解,会影响消费者的健康,同时,已证实石蜡经高温处理后会产生致癌物质,  目前对食品中掺有矿物油国家标准中尚无专门检验方法。因而,食品质检部门、市场监管部门,急需一种快速的检验方法来维护消费者的利益。
发明内容
本发明所要解决的技术问题是,解决现有一些食品中掺有矿物油如石蜡、白油损害消费者健康、而技术监督、食品质检、市场监管部门没有一种快速检验方法的问题;而提供一种灵敏度高、操作简单、显示直观、检验快速、可在室外进行、方便现场检验、有利打击假冒伪劣产品、保护人们身体健康的食品中石蜡、白油的检验方法。
本发明采用的技术方案是:取经粉碎过筛后的食品样品于容器中,加入乙醚浸提1-3小时后,过滤,取滤液滴置于玻片上,待乙醚蒸发后置显微镜下,用显微镜在较暗视野中观察,样品中加有石蜡、白油的可观察到须根状或网络状或须根状与网络状。
本发明的原理是依据矿物油与植物油在乙醚浸提状态下其形态、结构有明显而固定的区别。由于观察时必须使用显微镜,所以称其为镜检法。这种镜检法由下述实验论证:在三个三角瓶中各加入乙醚100毫升,分别加入0.2克的石蜡、白油及植物油,摇匀,5分钟后,各取乙醚液一滴于玻片上,待乙醚蒸发掉(约2-3分钟)后,置显微镜下,用16倍目镜×10倍物镜在暗视野中观察,加有石蜡的,视野中看到的是须根状物;加有白油的呈网络状;而加有植物油的则呈圆形油泡状,十分易于区别。乙醚从食品的样品中浸提的矿物油与植物油,镜检时的形状与之一致。
本发明的镜检法具有明显的优越性:无需水浴锅、烘箱、空气冷凝管、电炉等设备,突破了只能在实验室进行的局限性,本镜检法的灵敏度可达到万分之一。取样重量20克,检验时间仅2小时,每个样品耗用乙醚仅30毫升,费用较低,同时镜检法只需一台小型粉碎机与一台显微镜,可以在室外进行现场检测,操作简单,显示直观,检验快速,适合于食品质量监管部门、市场监管部门在现场作快速检测使用。显而易见,本项发明,在推行食品无公害、保护人们身体健康、打击假冒伪劣产品、维护消费者合法权益方面,有着较为明显的社会效益。
具体实施方式
取经粉碎过40目筛的食品样品20克于三角瓶中,加入无水乙醚20-40毫升浸提1-3小时后,用滤纸过滤,取滤液一滴置于玻片上,乙醚蒸发掉后置显微镜下用16倍目镜×10倍物镜在暗视野中观察。能观察到须根状物或网络状物的,是加有矿物油;只观察到油泡状的是加有植物油(如菜籽油、花生油、棕榈油),如样品同时加有矿物油与植物油的,则视野中观察的乙醚浸提物呈同心圆状的层析分布;中心是样品本身的乙醇浸提物,形状各异,不规格形;外围是矿物油的浸提物,可观察到须根状或网络状;边缘的是植物油浸提物,呈油泡状。取加有矿物油的红薯粉丝、火锅底料、大米、西瓜子的样品用此法来镜检,镜检结果完全相同,即都可以观察到须根状或网络状物,而对照(即未加矿物油的)都观察不到须根状或网络状物。深入试验后发现,即便粉料中仅加入粉料重万分之一的矿物油制成的粉丝,也可用此法检验出来,灵敏度达到了万分之一。
实施例:在生产红薯方便粉中,按红薯淀粉重0.1%分别加入石蜡、白油、棕榈油,经加水搅拌匀质后,按常规方法生产红薯粉丝。取此粉丝粉碎过40目筛后的样品各20克,分别加入无水乙醚30毫升浸提2小时后用滤纸过滤。取滤液各一滴置于玻片上,待乙醚蒸发后置显微镜下,用16倍目镜×10倍物镜在较暗视野中观察,样品中加有石蜡的呈须根状,加白油的呈网络状,而加有棕榈油的只能观察到油泡状物,观察不到须根状或网络状物。

1、一种食品中石蜡、白油的检验方法,其特征在于取经粉碎过筛后的食品样品于容器中,加入乙醚浸提1-3小时后,过滤,取滤液滴置于玻片上,待乙醚蒸发后置显微镜下,用显微镜在较暗视野中观察,样品中加有石蜡的可观察到须根状,样品中加有白油的可观察到网络状。
2、根据权利要求1所述的食品中石蜡、白油的检验方法,其特征在于所述食品粉碎后过40目筛成为食品样品。
3、根据权利要求1所述的食品中石蜡、白油的检验方法,其特征在于所述加入的乙醚为无水乙醚。
4、根据权利要求1所述的食品中石蜡、白油的检验方法,其特征在于所述采用的显微镜为16倍目镜X10倍物镜。
