Abstract
Un procedimiento para secar productos alimenticios con alto contenido de azúcar, tal como miel y melaza, en una cámara de microondas al vacío. El procedimiento comprende cargar el producto alimenticio en la cámara de vacío y exponer el producto alimenticio a una presión de vacío en el intervalo de 45 a 250 Torr (60 a 333 mbar) en la cámara de vacío mientras se irradia el producto alimenticio con radiación de microondas. Esto seca el producto alimenticio y forma una estructura porosa. El procedimiento minimiza o evita la formación de espuma y seca el producto a una temperatura que evita que se queme, al tiempo que reduce el contenido de humedad a un nivel muy bajo.
