Combined-element mold for making fondants and other food products. The object of the present invention is a combined element mold for the manufacture of fondants and other food products. It is characterized by at least one pair of angled section rods, juxtaposed with their horizontal wings turned towards.
inside, so as to form a gutter, the two rods being connected at the ends by cut transverse plates. and by partitions, of separation arranged inside the gutter, so as to divide it into several compartments.
The appended drawing represents, in a schematic way, several embodiments of the mold according to the invention, given by way of example.
Figs. 1 to 5 show a first embodiment of a mold with two rows of channels and several compartments per row.
The left half of fig. 1 is an elevation -and the. right half a vertical section.
The left half of fig. 2 is a plan view. of the mold of fig. 1, without partitions and fittings and the right half is a horizontal section along the line II-II of fig. 1 showing partitions and trimmings.
Fig. 8 -is a cross section showing, on the left side, an empty mold and on the right side the adjacent compartment of the second row, provided with: partitions and linings.
The. fig. 4 and 5 are perspective views, the first of a separation and the second of a garnish.
L.es @ fig. 6 and 7 show, the first a plan view of a second embodiment of a single row mold; with separations, making it possible to make, for example, prismatic fondants with a triangular base and, the second, a vertical section along line VII-VII of fig. 6.
Figs. 8 and 9 show a variant of the previous embodiment, FIG. 8 being a plan view of a one-row mold, with parting, for making diamond-shaped fondants, and FIG. 9 representative. in plan a separation.
The fi-. 10 and 11 are also, in plan and in vertical section, a variant of a single-row mold, allowing the manufacture of sticks in the type of the so-called “Toblerone” chocolate.
Finally, fig. 12 shows a plan of another variant of a single-row mold, in which the combination of the separations and the linings makes it possible to obtain fondants of various shapes.
In all the embodiments and variants shown, the mold can be dismantled and comprises for each -channel two halves. 1 and 2, each in the form of a bay window with an angle section, juxtaposed with their horizontal wings facing inward, the two rods being connected at the ends by notched transverse plates 3, serving, at the same time, to close the gutter at its ends.
The. molds are made of non-oxidizing, heat-resistant metal, such as, for example, anticorodal aluminum. The mold may include a single channel (fig. 6, 8, 10 and 12) or several channels (fig. 2), the latter type of mold being constituted by the juxtaposition of two or more channels which are connected to their ends by transverse plates, 3 similar to those described above.
Molds with one or more channels are provided with dividing walls and linings, depending on the type of fondant you want to make. The partitions and gaskets also contribute in their turn to ensuring the watertightness of the gutters.
In the. first embodiment, shown in FIG. 1 to 5, the partitions 4 (fig. 4) have the form of sections of cornices arranged transversely between the halves 1 and 2, with their horizontal wings 4a placed at the bottom of the gutter and the vertical wings 4b of the field,. vertical wings of said halves 1 and 2, of the mold.
If one wishes to give one of the sides of the whip a certain decoration, for example a letter or urn figure, one uses trimmings 5 (.fig. 5), in which the decoration is engraved, for example. hollow example (fig. 2).
In the variant fig. 6, the separations 6 are used in the manufacture of triangular shaped fondants. These partitions have the form of sections of angles placed in the field with the ridges touching one of the halves and the ends of the wings the other half of the mold. The bottom of the interstices between the wings of the same angle iron as well as those between two contiguous angles is lined with small plates 7 of triangular shape, in order to seal the mold.
Likewise, for diamond-shaped fondants, the partitions (fig. 8 and 9) are formed of sections of angles cut at an angle and arranged so that the horizontal wing Sa rests on the halves of the mold to ensure its tightness. and that the vertical wing 8b forms the separation between the foundations, along the entire length of the gutter.
If you want to make fondant sticks, the kind of chocolate said. "Toblerone", the separation plates 9 (fig. 10 and 11) will also be formed by sections of angles arranged one beside the other with the edges of the wings resting on the bottom of the channel, the edges of these angles; res both below the upper edge of the mold halves to form the filling plate that connects the pieces.
Another mold, based on the same principle, makes it possible to manufacture fondants of multiple shapes, simply by the combination of fillings. prismatic 10 (fig. 12) with a triangular base.
These gaskets are arranged between the partitions in different ways with a view to obtaining various shapes of flux, the sealing of the mold being ensured by gaskets 11 cut into plates. According to the drawing obtained in the background , between the separations.
The molds described can also be used very well for molding chocolate or other food products, such as, for example, pieces of aspic (jelly filling), cookies, etc.
The product obtained, chocolate or otherwise, made with the molds described, has a burr-free finish, having a glazed appearance, particularly desirable, thanks to the irreproachable polish obtained by polishing the stained parts which constitute the different parts. of the mold.
