Device for cutting ham, sausage and the like. The invention relates to a device for cutting ham, sausage and the like, in which a knife by hand along guide rails through .the material to be cut. It is intended to create a setting and control device for the slice thickness in these machines.
According to the invention, this is achieved by a stop located in front of the cutting plane, against which the blade of the knife is placed with its side surface after the cut has been made, in order to serve well here as a limit stop for the cutting advanced by hand.
After the material to be cut has been advanced, it remains in this position while the knife is returned to the cutting plane determined by the guide rails for a new cut.
In the drawing, the subject of the invention is shown in one embodiment, namely Fig. 1 is a view of the device from the front, and Fig. 2 is a view of the .Seite.
On a base plate 1, which stands on feet, rail supports 3 and 4 are screwed, one of which is equipped with a detent 5 and a stop 6. Both rail supports could also be provided with such stops. The rail supports 3, 4 carry the axis 7 of the guide rails 8, 9, 10, 11, 12, 13, of which: the guide rails 8 and 9, 10 and.
11, 12 and 13 each form a guide slot 14 for the knife 1.5. These rails reduce the deflection of the knife blade 15 when preparing for cutting and cutting. The movement path of the guide rails, which are rotatably mounted on the axis 7 and are firmly connected to one another by means of a crosspiece 16, is limited by the detent 5 and by the stop 16 .
The guide rails are, for example, by their weight. Against the catch 5 presses ge; after cutting who they are lifted from the detent 5 by means of the knife 1.5 and on: the stop 6 ge presses to after @ carried out feed of the cutting material lying on the cutting board 17 to the knife 15 bordering the feed be taken back from the knife 15 to be returned to their rest position located at the rest 5 located.
The knife 15 is brought to the stop 6 with the guide rails, which position of the guide rails and the knife is shown in FIG. 15a in the drawing with dash-dotted lines.
The subject matter of the invention can, however, also be made so simplified but with less advantage that the guide rails 8, 10 or 8, 10 and 12 are firmly connected to the base plate 1, the knife blade leaving the guide rails after the cuts have been made and is brought to stops 6 alone or with the material to be cut 18,
to the limit for the advance of the material to be cut in the 'cutting plane to bil, whereby after the displacement of the material to be cut this remains in its position, while the knife blade 15 alone again in the cutting plane established by the guide rails 8, 10 in a new cut position is brought.
By changing the size of the distance between the cutting plane determined by the ganten of the guide rails 8, 10 or 8, 10 and 12 and the stop 6, the desired thickness of the slices to be cut is set by means of an adjusting screw 19 serving as a stop.
In order to prevent the knife blades 15 from bending when the material to be cut 18 is pressed against the knife blade, a support 2: 0 for the knife blade 15 is arranged below the cutting surface 22, which arrangement ensures the same thickness of the cut slices.
It is advantageous to provide the cutting board 17 at its end on the underside with a recess 21 into which part of a serving scoop or part of the packaging paper for the material to be cut can be placed so that the cut-off slices are not on the edge of the scoop or fall of the paper and so the slices do not need to be put on the packaging paper with a fork or knife.
The mode of operation of the exemplary embodiment of the subject matter of the invention is as follows: At the beginning of the cutting and after each cut, the material to be cut 18 is pressed by hand against the side surface of the knife blade 15 and with this and the guide rails up to the adjustable stop by means of the screw 19 pushed,
after which the guide rails with means of the knife 15 back into their rest position located at the detent 5 and the knife 15 is brought into a new cutting position above the material to be cut.
