Maschine zur Bearbeitung von Fleischscheiben, insbesondere solcher für Rouladen. Die Erfindung betrifft eine Maschine zur Bearbeitung von Fleischscheiben, insbesondere solcher für Rouladen und besteht darin, dass eine auf der Mantelfläche mit buckelartigen Erhöhungen ausgestattete Walze vorgesehen ist, die in Umdrehung versetzt wird und unter welcher eine der Aufnahme des Fleisches dienende Platte in einem bestimmten Abstand vorbeibewegt wird, wobei die Walze eine grössere Weggeschwindigkeit als diejenige des Plattenvorschubes hat.
Die Zeichnung veranschaulicht eine bei spielsweise Ausführungsform des Erfindungs gegenstandes, und zwar zeigt: Fig. 1 eine Seitenansicht, Fig. 2 einen Längsschnitt mit vorgescho bener Platte, Fig. 3 einen Schnitt nach Linie A.-B der Fig. 1.
Die Platte a aus zum Beispiel Holz dient zur Aufnahme der Fleischscheiben. Sie ist auf dem mit Füssen versehenen Rahmengestell b längsverschiebbar gelagert. Die Lagerung kann- zum Beispiel in der Weise erfolgen, dass an dem Gestell<I>b</I> Laufschienen<I>c, d</I> vor gesehen sind, auf denen die Platte a mittelst Rollen e, f entlangrollen kann. Diese Rollen <I>e, f</I> befinden sich an dem hintern Ende der Platte a, das vordere Ende derselben liegt auf den Rollen g, <I>h,</I> die am Gestell<I>b</I> vor gesehen sind. Für den Vorschub der Platte a. ist auf deren untern Seite eine Zahnstange i an gebracht.
In diese Zahnstange i greift ein Zahnrad k, welches auf einer Welle d sitzt, die im vorderen Teil des Gestelles b gelagert ist und auf dem einen Ende eine Handkurbel m trägt, während auf ihrem andern Ende ein Zahnrad n für den Antrieb der Walze o vorgesehen ist. Die Walze o ist mittelst zweier Lagerböcke p, q am Gestell b oberhalb der Platte a gelagert. Auf ihrer Welle r sitzt ein Zahnrad s, welches von dem Zahn rad n angetrieben wird. Das Übersetzungs verhältnis der beiden Zahnräder ist derart, dass die Walze o die zwei- bis dreifache Weg geschwindigkeit der Platte a erhält.
Die Mantelfläche der Walze o ist mit buckelartigen Erhöhungen t versehen, die in Anzahl und Grösse beliebig angeordnet sein können, zweckmässig jedoch so, dass sie in versetzter Reihenfolge dicht beieinander stehen. Hier durch wird erreicht, dass alle Teile der Fleisch- scheibe der Wirkung dieser Erhöhungen aus gesetzt werden. Erforderlichenfalls kann auch die Platte s solche Erhöhungen aufweisen.
Die Lagerung der Walze o oberhalb der Platte a ist derart getroffen, dass zwischen der Platte und der Walze ein freier Spalt gelassen ist, entsprechend der gewünschten Stärke der Fleischscheibe. Die Walze kann auch so gelagert sein, dass sie nachstellbar ist, um den Zwischenraum zwischen Platte und Walze je nach Erfordernis einstellen zu können.
Die Handhabung der Maschine ist folgende: Nachdem die Fleischscheibe auf die Platte a niedergelegt worden ist, wird die Platte mittelst der Handkurbel unter der Walze o vorbeibewegt. Hierbei wird die Fleischscheibe durch den Pressdruck der Walze breitgedrückt, gleichzeitig jedoch auch durch die höhere Geschwindigkeit der Walze zur Platte aus einandergezogen. Die Erhöhungen auf der Mantelfläche der Walze und eventuell auch der Platte üben dabei eine knetende Wirkung auf das Fleisch aus, welches dadurch in den gewünschten mürben Zustand versetzt wird.
Die Herrichtung der Rouladenscheiben wird also mit dieser Maschine in weit kürzerer Zeit und vor allem stets gleichmüssig und sachgemäss geschehen, und die Bedienung der Maschine erfordert keine besondere Übung, sondern kann mit Leichtigkeit von jedem bewirkt werden.

The bearing of the roller o above the plate a is made such that a free gap is left between the plate and the roller, corresponding to the desired thickness of the meat slice. The roller can also be mounted in such a way that it can be readjusted in order to be able to adjust the space between the plate and the roller as required.
The handling of the machine is as follows: After the meat slice has been placed on the plate a, the plate is moved by means of the hand crank under the roller o. Here, the meat slice is pressed wide by the pressure of the roller, but at the same time pulled apart by the higher speed of the roller to the plate. The elevations on the outer surface of the roller and possibly also the plate exert a kneading effect on the meat, which is thereby brought into the desired friable state.
The preparation of the roulade slices will be done with this machine in a much shorter time and, above all, always evenly and appropriately, and the operation of the machine does not require any special practice, but can be done with ease by anyone.
