Abstract

L'invention concerne une composition laitière qui comprend au moins une propriété organoleptique acceptable et, si la chaleur est traitée à des températures ultra-hautes et/ou de pasteurisation, la composition ne subit pas de caillage et/ou précipitation inacceptable. Dans un autre aspect, une composition laitière comprend au moins une propriété organoleptique acceptable et a un pH d'environ 5,5 à environ 6,6. La composition laitière peut être une composition laitière de culture. L'invention concerne l'utilisation des compositions et des procédés de fabrication des compositions.
