Abstract

"MéTODO PARA A PRODUçãO DE UM MATERIAL ALIMENTìCIO CONTENDO UMA ALTA QUANTIDADE DE CISTEìNA". A questão a ser solucionada é estabelecer um método pelo qual a cisteina seja suscetível de ser eficientemente preparada da <sym>-GC e, também, estabelecer um método excelente para a produção de um material alimentício que contenha uma alta quantidade de cisteina de extrato de levedura. Um método para a produção de um material alimentício contendo uma alta quantidade de cisteína, caracterizado em que um extrato de levedura é preparado de células de levedura contendo <sym>-glutamilcisteína, o extrato é concentrado mediante controle na temperatura tão baixa quanto não mais do que 60<198>C para preparar um material alimentício em uma forma líquida, em que a concentração de sólidos seja não menor que 10% e o material alimentício seja mantido em 70 a 130<198>C.
