Abstract
<B>COMPOSIçãO PREMIX PARA CLAREAMENTO EFICAZ DE CERVEJA EM UM PROCESSO DE ETAPA úNICA E PROCESSO PARA ESTABILIZAR CERVEJA OU VINHO<D> A Composição premix para clareamento de bebidas como cerveja inclui, em peso, (a) cerca de 40 a 90%, preferivelmente 60-85% de xerogel de sílica possuindo menos que 10% de água, preferivelmente 5% ou menos e um tamanho de partícula, conforme definido por seu diâmetro médio de volume, Mv, no estado seco e como uma pasta aquosa a 10% de menos que 50 Á, preferivelmente 5-30 Á, o componente (b) cerca de 10 a 60%, preferivelmente 15-40% de polivinilpirrolidona reticulada possuindo um tamanho de partícula definido no estado seco de cerca de 10 a 50 Á e, de cerca de 30 a 60 Á em uma pasta aquosa a 10%, e um processo para obtenção de cerveja estabilizada de névoa de resfriamento com redução substancial nas proteínas de peso molecular alto, bem como polifenóis, flavanóides e taninas, em um processo de etapa única eficaz, em uma razão de fluxo de filtro rápida, com polivinilpirrolidona residual solúvel não-detectável após isto, e nenhum crescimento microbiológico na premix, estabilidade em névoa eficaz com o tempo, e redispersibilidade vantajosa da premix usada no processo.
