Abstract
"PROCESSO PARA O TRATAMENTO DE CARNE FRESCA, E, EQUIPAMENTO PARA EXECUçãO DO MESMO" A invenção é relacionada a um processo para processamento de carne e peixe frescos. A carne fresca é estocada durante um tempo ajustado em uma câmara hermética (1) a ser trancada após o oxigênio ter sido abastecido nela, em uma atmosfera composta principalmente de oxigênio, sob uma pressão maior do que a pressão atmosférica. Durante o processo de suprimento de oxigênio (12), a temperatura é selecionada em tal nível e o suprimento é regulado/controlado em uma velocidade tão baixa que a carne fresca não pode congelar. Durante a estocagem, a pressão é tão alta e a duração de estocagem tão longa que a carne fresca é inteiramente impregnada com oxigênio. Além do mais, o esvaziamento de oxigênio é regulado/controlado em uma velocidade suficientemente baixa para prevenir a carne fresca de congelamento e possibilitar que o oxigênio com o qual a carne fresca processa é impregnada seja removido sem formação de bolha.
