Abstract
Resumo da Patente de Invenção <B>"COMPOSIçãO COMPREENDENDO PECTINA METIL ESTERASE E DOIS SUBSTRATOS"<D> Quando uma geléia de baixo teor de sólidos solúveis for preparada a partir de ração de farelo molhada de laranja, nenhuma gelificação é observada mesmo depois de tratamento com PME de planta da ração de farelo molhada de laranja ou da adição de cálcio exógeno. Se um segundo substrato de pectina de elevado teor de éster for adicionado a uma ração de farelo molhada de laranja não tratada, ele não terá qualquer efeito sobre sua capacidade de gelificação, mesmo se um segundo substrato for tornado mais funcional, antes da adição, por pré-tratamento com uma enzima de PME de planta. A combinação de ração de farelo molhada de laranja tratada com PME de planta com substratos de pectina de elevado teor de éster pré-tratada com PME, ou na presença ou na ausência de cálcio, produzirá géis com força de gel substancialmente aumentada e funcionalidade aperfeiçoada. Portanto, o pré-tratamento de substratos de pectina, , ou isoladamente ou em combinação, aperfeiçoará sua capacidade de gelificação, por tornar os substratos de pectina mais funcionais como susbtratos de elevado teor de éster, na presença de cálcio.
