Abstract

CHOCOLATE À BASE DE PLANTAS. Uma confecção de chocolate sem laticínios, sem glúten e vegana e método de produzir o mesmo são divulgados. Na confecção de chocolate da invenção, os sólidos de leite presentes no chocolate de leite tradicional são substituídos por farinha de leguminosas tratada termicamente. A farinha de leguminosas tratada termicamente confere características desejáveis de sabor e textura à confecção de chocolate. As farinhas de leguminosas têm níveis relativamente baixos de açúcar e altos níveis de proteínas e fibras. Eles também são adequados para formulações de chocolate com baixo teor de açúcar.
