Abstract

PROTEÍNA DOCE DE TRUFA. Proteínas fúngicas modificadoras do sabor doce recentemente identificadas e o cDNA que codifica as referidas proteínas são descritos. Especificamente, são descritas proteínas Myd ativas na ativação do sabor doce e o cDNA que as codifica, juntamente com métodos para isolar tal cDNA e para isolar e expressar tais proteínas. Também é descrito o uso de uma composição adoçante que inclui as proteínas da invenção e métodos para fornecer sabor melhorado a um produto para administração oral.
