Abstract

REVESTIMENTO FEITO DE MASSA DE BISCOITO, PRODUÇÃO DE UM REVESTIMENTO FEITO DE MASSA DE BISCOITO, CONFEITO REVESTIDO COM MASSA DE BISCOITO, E PROCESSO PARA PRODUÇÃO DE UM CONFEITO REVESTIDO COM MASSA DE BISCOITO. A presente invenção refere-se a uma composição para revestimento de um confeito congelado, que inclui uma blenda de gorduras contendo (i) um emulsificante que é, de preferência, lecitina, (ii) pelo menos uma gordura de endurecimento que é, de preferência, um ou mais dentre óleo de babaçu, frações médias de óleo de babaçu, ou frações macias de óleo de babaçu, (iii) um ou mais óleos macios que, de preferência, incluem óleo de canola, e (iv) gordura de leite anidra. A composição de revestimento inclui, também, farinha e açúcares. A composição tem um tamanho de partícula de cerca de 40 µm a cerca de 200 µm, de preferência cerca de 90 µm a cerca de 120 µm, e tem as características sensoriais, como aparência, sabor e textura, de massa de biscoito crua. Opcionalmente, a composição inclui adicionalmente um ou mais dentre leite em pó, sal ou flavorizante. De preferência, o confeito congelado revestido pela composição é uma barra de sorvete.
