Abstract
COMPOSIÇÕES ALIMENTARES COMPREENDENDO CASCA DE VAGEM DE CACAU. A presente invenção fornece composições alimentares tais como pastas alimentares gelatinosas compreendendo casca de vagem de cacau (CVC). Mais especificamente, a presente invenção fornece composições compreendendo de 5,0 a 70,0% (peso de matéria seca/p) de um ou mais açúcares; de 0,150 a 7,50% (peso de matéria seca/p) de CPH; de 0,10 a 4,0% (p/p) de pectina; de 0,10 a 7,0% (p/p) de um ou mais co- texturizadores; de 0,030 a 3,0% (p/p) de íons citrato; de 0,0010 a 0,50% (p/p) de íons de cálcio; de 0,0 a 2,0% (p/p) de conservante; e água até 100,0 %; em que a composição tem um Brix compreendido de 45 a 75 e um pH de 2,8 e 4,5. A presente invenção se refere ainda a produtos alimentares que compreendem tais composições e processos para obtê-las.
