Abstract

La presente invención proporciona composiciones alimenticias tales como pasta gelatinosa alimenticia que comprenden cáscara de vaina de cacao (CPH). Más específicamente, la presente invención proporciona composiciones que comprenden desde 5.0 a 70.0% (peso de materia seca/p) de uno o más azúcares; desde 0.150 a 7.50% (peso de materia seca/p) desde CPH; desde 0.10 a 4.0% (p/p) de pectina; desde 0.10 a 7.0% (p/p) de uno o más co-texturizantes; desde 0.030 a 3.0% (p/p) de iones citrato; desde 0.0010 a 0.50% (p/p) de iones de calcio; desde 0.0 a 2.0% (p/p) de conservador; y agua hasta el 100.0%; donde la composición tiene un Brix comprendido entre 45 y 75 y un pH entre 2.8 y 4.5. La presente invención se refiere además a productos alimenticios que comprenden tales composiciones y procesos para obtenerlas.
