Abstract

A presente invenção se refere a um processo para expandir oleossomas, e o processo compreende submeter oleossomas isolados a uma misturação com alto cisalhamento ou a uma força centrífuga com alto cisalhamento e obter uma composição de oleossomas. A invenção se refere ainda a composições de oleossomas. Ela também se refere a produtos alimentícios e de ração, produtos farmacêuticos, produtos para cuidados pessoais, composições nutricionais e produtos industriais que compreendem a dita composição de oleossomas. A invenção se refere ao processo de preparação de composições nutricionais que compreendem composições de oleossoma. A presente invenção se refere ainda ao uso de um misturador de alto cisalhamento do tipo rotor-estator e/ou a uma centrífuga de disco para expandir o diâmetro globular médio dos oleossomas em uma composição de oleossomas.
