Abstract

a presente invenção diz respeito às cepas de streptococcus thermophilus utilizáveis como culturas iniciadoras, capazes de fornecer propriedades reológicas e organolépticas satisfatórias, e meia-vida de prateleira satisfatória para os meios aos quais elas estão incorporadas. em particular, estas cepas também são resistentes ao bacteriófago, desse modo minimizando a infecção por bacteriófago. a invenção também provê uma composição compreendendo uma dessas cepas de streptococcus thermophilus, e produtos alimentícios ou para alimentação animal obtidos com estas cepas.
